The What's For Dinner Thread - March '11 (recipe index in OP)

I don't think I posted this last week? It's originally a crockpot recipe but I chose to throw it on the grill instead for easiest clean-up and so we could serve it sliced instead of more shredded, like a crockpot. Very tasty!!

Brown Sugar and Balsamic Glazed Pork Loin
1 (2 pound) boneless pork loin
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed

Glaze
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce

Rub tenderloin with ground sage, salt, pepper, and garlic. Cover with plastic wrap and let it sit in the fridge for at least 30 minutes.

Combine ingredients for the glaze in small sauce pan. Heat and stir until mixture thickens.

Heat your grill to medium-high. Grill the pork, brushing often with the prepared glaze, until the thickest part of the pork reads 145 degrees. Serve with remaining glaze on the side.

Last night I made lettuce wraps. I got a little heavy handed with the siracha, god I love that stuff.

Tonight I think I will grill hamburgers. Poor A is not like my meal choices lately.


I hope once school starts I can get back into my routine. I am having such a time keeping up with everything.
 
Kat and Sheryl- I am thrilled but jealous that you are heading to the World. Kady is a little sick of it so we are not going but I am sad. I would go with just Buddy but then he gets Kady withdrawal if he thinks we are where she would enjoy. I hope that once we get through the wedding and this year's farm money crunch we can make plans.

No not really. Here is my recipe for my Eggplant lasagna using the eggplant as the noodle layers. I served it to someone who proclaimed she hated eggplant and zucchini. She had seconds! This is my own recipe based on the idea of using the veggies as noodles

I'm really excited for our wood burning stove, but not for the mess! Alan will be in charge of the wood pile, but with his class schedule, I'm really beginning to wonder when it will happen. We'll see!

I am now going to vent about our new principal. Please feel free to skip, if you want!

We always had a wood stove but then changed over to a pellet stove. We used that one year and Buddy hated it. He is planning for a new wood stove this winter. We love that good wood heat! Bud and Dan get our wood delivered to Welby's farm on a logging truck and buck it up and then split it. I think that they like that part almost as much as the winter warmth.

WE are not allowed to make teacher requests in our school system. I think that the Principal was not proactive in hiring an additional teacher but do not worry if one of the kids gets the newbie. There is a curriculum in place and I am sure that the teacher will have plenty of support from those already in place. Twice Kady got the new teacher and both times her year was wonderful! Hopefully the Principal learns fro this experience!

I'm too tired to celebrate. :lmao: Between work and recovery, I'm barely hanging on. But this weekend, it is ON! :rotfl2: (If I've survived the week)

Tomorrow, I'm having the root canal on my tooth. Happy birthday to me. :laughing:

Alexis starts school tomorrow. She likes the teacher she has been assigned & is looking forward to it. I however am not! I am already tired from being up at 5 this morning. But she has been on the floor playing with Jude for over an hour! Going to miss my helper during the day!

Well worth the exhaustion I think! Wishing Alexis a great day in school but I hear you on your helper. Kady helps when I have Nola and Rylee and if she is not here I feel it! :upsidedow I love them dearly but Holy Cannoli!!!!!!!!!!!! I am not as young as I used to be and Kady is much closer to the ground than I am.

Princess - I certainly hope that with the start of school I'll have more time for me! That's the hope. I really need to reclaim this house! We've kind of let it fall apart this summer.

Good luck with the house! I need to start after Kady goes back to school. I have offered my home if Donny and Anna want to gather all her family after the wedding and now I have to get it done! They are getting married on a Saturday, they are all heading to the Big E on Sunday and so Monday is open. Donny thought that when Anna said that she wanted to start entertaining the day before they leave on their Honeymoon would be a good time to start. :dance3: He did not understand that when she said she wanted to take me up on my offer she was really asking him if he lived on an alternate planet. Think Big Bang Theory, combine all three of the Nerds.....you have Donny. Love him but :lmao:

Glynis- Even though wood stoves are messy, they are worth it. I didn't know you were still waiting to get yours installed. This will be our third winter with it and I'm pretty sure it's paid for it's self with the amount of money we've saved on oil. I should post a picture of our wood pile, it's pretty impressive.

Marilyn- My daughter just turned 11. She knows how to swim and loves being in the water, she just stinks at it. Considering where we live I'd like her to have stronger skills though. She's taken lessons at the local gym for a few years, but the teachers always change and they are never consistent. They touch on each type of stroke, but never stuck with one long enough to learn it.

They definitively are messy! Right now all we use is the fireplace and while it has a great draft so I am not fining any residue on my shades or the walls there is a lot of dust and some wood shavings that needs to be cleaned up daily. Worth it though on those cold winter nights :cloud9:

My DGD was taking swim lessons every summer but last year Marisa had her try out for the swim team. She was not the best swimmer but was accepted because of her endurance. She spent last Summer swimming from one rope on the lake to the other side and back again. Over and over. She learned so much while on the team, it is a wonderful learning experience and sure does teach which strokes are used for any situation. Good luck!


So I cheated for two days this week and paid for it yesterday. Sunday was damp and rainy so I made comfort food. Monday we ate leftovers from Sunday so Tuesday was back on track. I grilled bone in ribeyes with steamed broccoli and a big mixed salad. Last night I met Anna so I could see her in her Wedding gown. We had dinner at Ruby Tuesday. I had the salad bar and the veggie trio. I am now a fan of roasted spaghetti squash! Then off to meet her bridesmaid at the bridal shop. She has made Anna's life a misery :headache: Donny is ready to call Anna's Mom and ask her to come in to town early and I agree. She needs someone to intervene and I cannot. The woman is already a Nan Hater because I scheduled a bridal shower for Anna after it was clear that we were not going to be considered in the now canceled Jack and Jill plans.

Dinner is up in the air. We will have a salad and maybe a steamed veggie. Buddy does not want a starch in the Summer time so maybe a grilled chicken. It will be late because he will head over a friends house to help in the field if he gets out of work early.

WFD - Meat loaf, mashed potatoes & gravy and corn.

One more working day for me before the weekend and we're probably in for a rather sad weekend this weekend. My FiL passed away just before Christmas last year and this Sunday, the whole family is going to the unveiling of the tombstone. It will be particularly hard for my MiL. What will amount to 5 minutes of activity at the weekend will bring back all the grief for her.


Aimee - Please look after yourself. I hope you've called the Dr and scheduled an appointment stat!

Janice - When does school routine start for you?

Nancy - I don't know what to say about the bridesmaidzilla. I think you're idea of calling in the cavalry is a good one; if you're on good terms with the in-laws-to-be. You know we're here if you need to share and vent. Is the wedding soon? (Sorry - I never really caught up on the previously shared news of when the big event was). And it sounds like you've got more than enough on your plate with opening up your home to the in-laws.

Dinner last night was pizza. I made two kinds--the usual margharita and a white pizza with proscuitto and truffle oil. I have been taking pictures but am still working on processing vacation photos so it might be a little bit before I have any home food photos on here. I could post some of the stuff I cooked on vacation I guess.

WFD: John is going to the fish market and today is my CSA pickup day, so fish and vegetables.

Thanks for your support with the principal debacle! I think the thing that really worries me is that the last teacher she hired was also a 4th grader, but one that really didn't pay attention to the core curriculum. She was my nephews teacher last year, and she failed him in math. When his parents started looking at the math homework she was sending home, it wasn't even 4th grade math, it was 6th grade math. They tried to talk to her about it, but she wouldn't budge, and the principal backed her up. It took my BIL going to the superintendant with the proof in hand, in order to get the principal and teacher to back down and begin to teach the required curriculum. Sigh! I know it will all work out, but it's causing a lot of stress.

Aimee - GET TO A DOCTOR!!! 3 Vicodin is WAY too much!!! You are my prayers!

Timothy was up half the night with ear pain (which of course has gone away this morning), so I made an appointment with the doctor this morning. Poor little guy! It was so sad! He was crying and begging to be held all night long. Guess who else didn't get any sleep last night??? After that appointment, Leslie and I will go shopping for her back to school clothes, then I'm done!

Dinner tonight will be meatloaf, mashed potatoes and corn on the cob! We ended up not using it with the quesadillas last night, so it needs to be used up!
 
Yikes on the root canal! :scared1: How long did it take you when you were at the dentist? I'm just trying to figure out if my whole afternoon is shot tomorrow or not. :laughing: Did you have a lot of pain afterwards?

That depends on the endontist. :sad2: I had root canals on three teeth with two differant doctors. The first was great, was patient, stopped if I so much as flinched to make sure I was okay. He did two of the teeth and both times it took about an hour.

The last tooth the guy was horrid, ticked off when I felt panicky and needed to stop a few minutes. He took almost two hours. :mad:

At the end of that one I looked like I had had a stroke.

And work be damned, if it hurts this bad tomorrow, I'm not uncurling from the fetal position.

Just as an aside... tonight, of course in the middle of my big presentation, I started to get really intense abdominal pain - same pain that I'm, sadly, really familiar with. I put on a smile and did the entire night but really was in bad shape by the end. I've taken 3 Vicodin and it has taken the edge off but is still not "normal." I'm pretty anxious abt it, honestly, bc I've had NO ab pain since my resection in Feb 2010. I knew things were active again but hoped we'd stop it before this.

I suppose it could be a fluke but it's probably not. I'll see how I feel in the morning and if it persists, I'm calling the GI tomorrow.

Donny and Anna are getting married on September 17th. He turns 36 the next day :goodvibes I have not told Buddy about the open house thing, he will flip. He does not mind company but he is worried that I will overdo. I took that fall a while back and I have been like Humpty Dumpty ever since. My shoulder is better but I had told the Dr my knee was really hurting adn now I have this gynormous goose egg thing on it. I told him I am dancing at my son's wedding in 4 weeks so he needs to fix it. I now have another hour on my PT for today and am a bit afraid.

Anyway, Donny would need to make that call to her Mom. I like her mother, she is a ticket :thumbsup2 She would insulate Anna from any drama that might come her way.

Oh Kat, I would love that! I always feel like I am missing out on so much when you all get together

I feel badly for both Anna and Donny. He has just about had enough of all the nonsense. The last thing the zilla did was tell Anna that her Mom, who I included in the shower when I found out she was going to be visiting the bridesmaid from Hades, overheard me telling someone I was mad because I had not seen Anna in her wedding gown. Donny said he asked her if she really believed I would say that after all the work I did to make sure that she had a special day and she agreed that I would not have said anything like that. I was asked if I saw the dress and responded that I had not seen it yet but that Anna had sent me a picture. :confused3

For Anna's gift from me I reserved the B&B for her and her family and for the bridesmaids for the night before the wedding. Buddy and I are hosting the rehearsal dinner there and I thought that it would be a nice way for all of them to be together on the Eve of her wedding, not to mention that the grounds are gorgeous and the innkeeper has offered to let them use them for the pictures and have the limo pick them all up there. Donny is wondering what grim things the ZIlla will say to ruin this as well. :sad2:

Stephanie had her first OB appt. this morning and she called me, and as I answered I heard her say "I REALLY am pregnant" :rotfl2: :lmao: I had no idea she was thinking maybe she wasn't. :rotfl: I guess the EPT wasn't enough proof, so when the dr. said she was, I guess she now is.
Her due date is March 24. Everything looks and sounds very good. :woohoo:

Last night Doug sank the winning putt for his golf team. Now they have to play on Monday for the semis. He was so excited when he got home that he stayed up way past midnight. :rotfl2: He is going to get plenty of practice in as tonight is Men's night and then him and Matthew are in the member tournament this weekend. I feel like a total golf widow!!!

WFDT ~ I am on my own so - YEP - you guessed it - an egg sandwich with sliced tomatoes and cucumbers. YUM!!!

Hello all! Well, that root canal wasn't bad at all. Honestly, I'm doing well. I feel so much better without all of the pain I was having due to that tooth. Who knew it was so bad that a root canal would make me feel better?

I took Tylenol just to head off any pain, but so far, I'm okay. I go back in 3 weeks for my permanent crown. I still feel a bit funny when I bite, but other than that, I'm good!

Day 4 of work is done too. And tomorrow is Friday!!! :banana:

Tonight's dinner is SOS. (I'll PM you if you need a translation :rotfl2:) UncleR is cooking. We put off the enchiladas I was going to make tonight until this weekend since I didn't know how long this would take this afternoon.

Back to school clothes shopping is DONE!!! Leslie and I went out today and had a great time! After we were done, I took all 3 girls for haircuts, and they look good! Tomorrow we hit up Payless for their BOGO sale and get school shoes, then I think we can relax.

I took Timothy to the dr. and sure enough his ear was red and swollen. One shot in the butt later, and he's already feeling better.

I've got to start dinner soon, but I really just feel like putting my feet up for a while.

Oh lord, I knew this would happen sooner or later! :lmao:

My mom 'n dad both could make it from scratch, the real SOS, I make a knock off easy one:

Ya brown a lb of breakfast sausage. I use Jimmy Dean Sage.
Ya get out the box of Pioneer Country Gravy 'n make it.
Then ya slap the browned sausage into that pot.
Then ya can have that on either toast or biscuits.
Course, if ya have it on biscuits, it's called biscuits 'n gravy! :teeth:

My FIL is comin' to spend Thanksgivin' with us, he likes to cook for family 'n I understand he knows how to make SOS from scratch so I'm gonna sweeten him up 'n ask him to make it. I'll take notes. :laughing:
