The What's For Dinner Thread - March '11 (recipe index in OP)

Marilyn :laughing: maybe you won't have to have the crockpot dinners?

I just got home from standing in the longest most disorganized line. It took over 2 1/2 hours to pay and get A's schedule for school. I had the "short" line cause I didn't want to pay a $8.00 convenience fee on top of the regular fee. The other line was longer for the people who already paid:rolleyes1

I think I am actually too tired to eat dinner.:upsidedow

My son left to go to his dad's in Indiana on May 31, and he comes home today!!! I havent seen him in so long, and missed him so much! :yay:

:cool1:

I am down 8.8 lbs! I love Spark People and Spark Recipes!

AWESOME!!

Now, will you share some of that motivation with me? :laughing:

Aimee, The thyme syrup is very good in iced tea! Tried it in coffee too, but couldn't really taste the thyme.

Oooh, I'll have to try tea with thyme!

How was that for timing ??
Im a wee bit suspicious,I think the big man was showin his muscle. :laughing:

:laughing:

Glad you're okay!!

Morning, everyone!

Aimee - The honey-lime enchiladas were amazing! We all liked them a lot! Everyone had at least one (except for Jacob who did eat a half of one), and some had 2! The filling reminded me of my lime chicken nacho meat, but the addition of the honey was really good! Those who are worried it would be too sweet, could add less honey, and more chili powder. We will be making these again!

I'm glad they were a hit!

I didn't cook tonight. Was going to but worked later than normal and didn't feel like it. Picked up Firehouse Subs instead.

Catching up.

Glynis - Hope the family is recovering! And quickly.

Vickie - Drive safe...and you should ALWAYS wear clean knickers. Glad that the Scots have more sense than the Brits!

Angie - How was the reunion with your son? That's a long time to be apart.

Nancy - If you have that drink, I'll join you.

Janice - Do you have any pictures of your celery?

Lauren - Congrats on the weight loss.

Jen - I'm sure we would have loved your replies...before they disappeared. Thanks for the thought!

Ellen - MORE storms? Keep safe and dry.

Robin - I'm envious. I love whales.

And to everyone else I've missed - hope your week has gone well.

Friday night here and I'm waiting for the boys to come home with Fish and Chips. We're all back to our normal routine although I'm not sure if I'll be doing any cooking this weekend. We'll see.

Just doing a drive-by this morning. I have a dentist appointment at 8. Just a cleaning, but I dread it just the same. Scott has to majorly work over Tuesday night and racked up some great comp time so he is off today. This afternoon we are going to go see "Captain America" and go out to dinner. :-)

I am absolutely drooling over all the talk of enchiladas. I think I will put them on my list of things to make next week.

Well, I'm off to go brush and floss. Ugh, I hate the dentist.

LindsayEnjoy Captain America, A gives it a big thumbs up :thumbsup2. He doesn't do that often so it must be wonderful.

Last night my friend brought me my Pampered chef stuff I bought. I am going to be busy organizing my kitchen this weekend. I have to find room:rolleyes1

Princess I will try to get a picture of the celery. First I have to cut the grass and then weed. I hope the rain holds off to do that. We are going to get the rain Ellen is done with tonight through this weekend.

I am surprised with everything A is learning in school weather plays a very small part. I have to remind him from what direction our weather patterns come from.

Dinner tonight will be ala Costco.

Trying to get better about checking in here, I know I'm not the only one busy around here but you all are able to find the time so there is no reason I can't!

Janice- I've only been to one pampered chef party, I'm sure that's probably a good thing! Have fun with your new toys.

Lindsay- At least it's an early appointment, you'll be done with it in no time. I actually don't mind getting my teeth cleaned now that I'm good about going every six months. I don't like it, but I don't mind.

Princess- She really had a great time, I felt bad for waiting so long to take here. I'm ashamed to say the main thing from stopping me was finding parking at the wharf. The town where the boats leave are so crazy in the summer. Enjoy your fish and chips, we have a few churches in the area that do friday fish frys and lobster rolls that are supposed to be really good. Another thing I've put off trying!

Aimee- I love your crayon art on your blog. That would be a cute project for the older kids at your church to do to decorate the children's area. I thought it would be cute with smaller canvas, with different shades of the same color on each canvas.

Tonight I'm just picking up a rotiserree chicken from the store, they are $5 on Fridays and I can't pass that up. Roast veggies on the side.

Have a great day all!

Robin – We’ve missed you! Whale watch – how exciting!!!!

Marilyn – I was going to say exactly what Janice said.:laughing:

Angie – I’m sure you’re having fun catching up with your boy, that’s a long time to be apart from him!

Lindsay – I’ve spent way too much time at the dentist over the last few years, I hear ya!

Janice – What did you get from Pampered Chef?

It’s the first Saints pre-season game tonight so we’ll be glued to the TV. No time for prepping football food today so I took some stuffed bell peppers out of the freezer and will make a big salad to go with it.

Off to the gym, pedi/mani then home to “WHO Dat”!!!!!

Good morning gals - hope it is a great friday!!

Robin ~ Oh how sometime in my lifetime I would love to go whale watching. I am so jealous of all you get to do.
It is so good to see you - I missed you!!

Merle ~ MOTHERS!! Ya gotta love us - even when we are crazy. :rotfl2:

Janice ~ Wow, that was just wrong having to stand in a line for over 2 hours. Talk about disorganized. That is cracy!!
OHhhhh I just love Pampered Chef. What did you get?

Aimee ~ Hey sweetie, did you have to get your coat out this morning? :lmao: I heard on the news that you had dropped into the 90's. Your weather has been brutal this summer.

Princess ~ hi :flower3: Hope your weekend is a good one.

Lindsay ~ Good luck at the dentist. I am right there with you - even a cleaning is dreaded.
Enjoy your date night tonight.

Kat ~ FOOTBALL - enough said. :banana:

We had really severe weather again last night. Hang on Janice, it is headed for you. We usually don't have tornados this late in the summer, but we did last night. There were 2 that touched down just north and east of us. Kind of scary!!

We got good news yesterday, so I thought I would share. We can all use some good news. Matthew was offered a job with the Bank he has been Interning for over the summeer - First State Bank of Nebraska. He (and us) are just thrilled. This will mean he can - if he wants to - quit his job at the grocery store. No more nights and weekends. His schedule will allow around 25 hours a week. He has to work Saturdays, but will be off at noon, so even those hours won't be getting in the way of Big Red Football. Just saying!!

WFDT ~ Doug really wants to go to the winery tonight, but we should stay home and mow. Right now I have no idea who will win, so I have no idea what dinner will be.

Make it a great day everyone.

Morning, all!

Lindsay - Good luck at the dentist! Not my favorite place, either! I need to get a couple of cavities taken care of, and I'm trying to convince myself not to put it off.

Robin - Whale watching sounds so cool!! Here in the desert, it's hard to imagine!

Angie - How was the reunion with your son? I bet he's glad to be home!

Kat - Good luck to the Saints! Since I don't watch much football, I'll gladly cheer the Saints on! Who Dat!

Dinner last night was a lemony tuna salad with white beans instead of pasta. It was really good! Very healthy and low carb, and it filled me up nicely! I will definitely be making it again, only I'll make double the amount so I can have some leftovers for lunch. I didn't think the kids would like it, so I made them egg salad sandwiches for dinner, but they all wanted to try my salad. They all loved it, too, and so there was nothing leftover! Boo for me, but yay for finding a healthy recipe everyone loved!

I've got to meet with Katie's counselor this morning to finalize her schedule. There've been some problems with classes, so it's time to go all "mama bear" over at the school. Wish me luck!

Not sure about dinner, yet. I'm thinking tomato soup and sammies will probably be the menu.

Doug will not be a happy camper if it is cancelled. And today is his Birthday so I guess he can be upset if he wants to - not that it will change anything tho. ;)

We are going to celebrate his Birthday on Sunday at the Family dinner. He hasn't said yet what the menu will be so I might be winging it. He is in a golf tournament all weekend, so he might just get what I fix.

Hope his birthday celebration is good!

Only 71 sleeps !! :yay:

I'm so jealous of you all!

Sounds like everyone has fun days planned for today. So far, I really don't have anything on my docket. I do need to go over the kids school supply lists, and see what we already have. The kids have been going through dressers and closets, so we will probably make some shopping lists. Our big shopping week is next week with Katie on Monday, Mary on Tuesday, Leslie on Wednesday and Jacob on Thursday. I really enjoy these trips, but I have a feeling that Jacob really is not looking forward to trying on clothes for his mom. At least I don't follow him into the dressing room anymore!

Not sure what we'll have for dinner. I have some leftover chicken that I didn't use last night (unseasoned), so I might make some kind of chicken salad with tomatoes and avocados. Sounds good to me.

I absolutely hate school supply shopping. I hate high school because you never know what they need until the last minute.

Jen ~ Glad to see you are feeling better. How is the tooth doing? I swear when it rains is pours.

I can bite down on it without huge pain as long as what I'm biting down on isn't hot or cold. :lmao:

Marilyn :laughing: maybe you won't have to have the crockpot dinners?

Last night was the first Cowboys game. Not that I'm the Cowboys fan in this house...but I could hear J yelling from his room. :lmao:

:banana: for the job!

~~~~~~~~~~~~~~~~~~~~~~
Yesterday was a long but accomplished day. I saw the doc (I'm doing better), we got J some funky new school shoes, and went shopping. It plain wore me out. I have no idea how I'll be when I go back to work on Monday. :eek: When we got home, Uncle R made fried fish and coleslaw for dinner and I whipped up some homemade tartar sauce. It was goooood.
Today is pie day in the house...all pie...all day.
J and I are going to make a chocolate pecan pie for dessert today, and it's pizza for dinner. :teeth: Other than that, I need to recover from yesterday. :rotfl:
Hope everyone has a wonderful day and good start to your weekend!
Marilyn :laughing: maybe you won't have to have the crockpot dinners?
Marilyn – I was going to say exactly what Janice said.:laughing:
The crockpots not the problem, it's what she puts on the food IN the crockpot. :rotfl: Used to be when she made the chicken she added lots of white wine and seasoning, usually lemon pepper. These days she puts a little, and I mean a little like she tosses season salt in the general direction of the crockpot, little.
I love to cook and add lots of herbs, spices, etc. Lately I'm lucky if she puts salt in things.:sad2: Last week she made mashed potatoes. She was out of the room and I tasted them, bleck! I quickly dumped in about 3 tablespoons of butter and salt, stirred it and left before she came back. :rotfl:
It was wonderful! He is sooo super happy to be home! He runs over to me every 10 minutes and hugs me.. I have to say, I think he missed the dog a little bit more tho! thanks for asking!
I know how you feel. A greets the dogs first then me, maybe:rolleyes1
I bought a mango slicer, avocado knife,microplane, skimmer for when I make soup,grill pan scraper and the turn around thingy (you put your kitchen tools in it) and the ever famous collapsible bowl
You know if you keep doctoring up those meals she is going to think she is a marvelous cook and cook more.;)
Definitely! I saw another twist on it the other day - they melted only green crayons, then when it dried flipped it the other direction and added flowers to the ends of the green "stems" - so cute!!
Well, it was supposed to be a high of 97 today but it's 103 outside. Better than 107, I guess?
SO EXCITED for Matthew!! DH worked as a bank teller all through college and it was a great position for him - helped get him where he is today, too!
I've got to meet with Katie's counselor this morning to finalize her schedule. There've been some problems with classes, so it's time to go all "mama bear" over at the school. Wish me luck!
Oooh, I hope it all works out!
I'm making balsamic and brown sugar glazed pork loin, grilled zucchini/squash, and roasted green chile cheese grits. YUM!
Princess I took a picture with my phone of the celery but I have no idea how to get here. I could upload to facebook. I will take my camera out there in a minute and do it that way. I am so techy not:lmao:
WFD is grilled sausage sandwiches, corn and fresh peaches.
Well, we got Katie's schedule all worked out. She is in all the classes she wanted, and even gets to TA for her favorite teacher for a semester! I just love her counselor. He really goes above and beyond! I don't know what we'll do when she moves on to the high school next year, and we have to break in a new counselor!
Dinner tonight is Cowboy Quesadillas. I found the recipe on a blog I follow called "Our Best Bites." I've loved everything I've tried there, and I'm angling for Alan to get me the cookbook for Christmas! The quesadillas are yummy, and so easy!
Tomorrow is a big day and I don't know when I'll be able to get online. I have to pick up our bountiful basket at 7:00 in the morning, then get the family out of bed for our Alpine Days parade at 10:00. In order to ensure places out of the sun, we'll take our chairs and stake a spot tonight. After the parade, we'll hang out at the activities at the park. I know the kids will want to play in the bouncy things, and there may be some other fun stuff going on. Alan's brother's catering company "TexaSmoke" is smoking brisket, ribs, etc., to sell at the gathering, so we'll get lunch there. After that, we need to take a trip to the top of the mountain by our house where Alan staked out some gold panning equipment last Spring. Time to gather and see what we've got. I'm not counting on anything, but it will take us up the mountain for some cool air! If I can talk the family into it, we'll find a place to make a fire and roast hot dogs, etc., for dinner. We'll see.
So, if I don't get online, everyone have a wonderful day tomorrow!
That would be great.....except....I'm not on facebook. Do you have a photobucket or flickr or smugmug account?
I went to a Farmer's Market this morning where I got some pumpkin ricotta cannelloni. Looks like we're having that for dinner tonight; withOUT any cheese topping! DS has an ear infection and we're going to cut out excessive dairy to see if it helps.
Lots of things to see at the Market; I don't buy much because I find it so much more expensive than the Vic Market that I go to every fortnight.
Here are some pics...
The things that looks like weeds to the right are onions. Yes I plant close, I have a very small area to plant. The dogs take up my yard and sometimes garden.
Off to drink more coffee
