The What's For Dinner Thread - March '11 (recipe index in OP)

Princess- Have fun on your tour! Sounds like a perfect day for you.

Aimee- I love the green crayon idea, yet another reason I wish my kiddo was younger. Those darn kids just grow up to fast!

Ellen- I truly am blessed with where I live, it was great to get a reminder, sometimes I do take it for granted.

Okay, I should really be getting dressed for work. I'm going to my aunt's for dinner, so no cooking or dishes! Can't beat that. Have a great day all.

I bought a mango slicer, avocado knife,microplane, skimmer for when I make soup,grill pan scraper and the turn around thingy (you put your kitchen tools in it) and the ever famous collapsible bowl

My true love behind UncleR is my pampered chef chopper. :lmao:

Well, we got Katie's schedule all worked out. She is in all the classes she wanted, and even gets to TA for her favorite teacher for a semester! I just love her counselor. He really goes above and beyond! I don't know what we'll do when she moves on to the high school next year, and we have to break in a new counselor!

Dinner tonight is Cowboy Quesadillas. I found the recipe on a blog I follow called "Our Best Bites." I've loved everything I've tried there, and I'm angling for Alan to get me the cookbook for Christmas! The quesadillas are yummy, and so easy!

Tomorrow is a big day and I don't know when I'll be able to get online. I have to pick up our bountiful basket at 7:00 in the morning, then get the family out of bed for our Alpine Days parade at 10:00. In order to ensure places out of the sun, we'll take our chairs and stake a spot tonight. After the parade, we'll hang out at the activities at the park. I know the kids will want to play in the bouncy things, and there may be some other fun stuff going on. Alan's brother's catering company "TexaSmoke" is smoking brisket, ribs, etc., to sell at the gathering, so we'll get lunch there. After that, we need to take a trip to the top of the mountain by our house where Alan staked out some gold panning equipment last Spring. Time to gather and see what we've got. I'm not counting on anything, but it will take us up the mountain for some cool air! If I can talk the family into it, we'll find a place to make a fire and roast hot dogs, etc., for dinner. We'll see.

I went to a Farmer's Market this morning where I got some pumpkin ricotta cannelloni. Looks like we're having that for dinner tonight; withOUT any cheese topping! DS has an ear infection and we're going to cut out excessive dairy to see if it helps.

Lots of things to see at the Market; I don't buy much because I find it so much more expensive than the Vic Market that I go to every fortnight.

And most of the vendors at ours are more expensive too although there is one that has a pretty good price and variety of squash. Think I'll have to get up early and head out to one of them tomorrow.

Going to get my youngest DN here in a few minutes. My sis and her oldest are going to a play and having a girls day with a group of friends. Then we are doing some shopping and going to my cousins, we have some family visiting and we are having a cookout today.

I am bringing some delicious cupcakes. We had a work thing yesterday where we gave them out and had a bunch left over. They are soooooo good.

My tartar sauce is as follows:

1 cup mayonnaise
1 tbsp. prepared mustard
2 tbsp. sweet pickle relish or 2 tbsp fresh dill
1 tablespoon finely minced onion or
1 tbsp. chopped capers (optional)
1 tbsp. lemon juice
salt and pepper, to taste

Mix and set.

Now, personally, I triple up on the capers and leave out the pickle relish. Also, I rarely make the entire recipe above. I 1/2 or 1/3 it. I also tend to drop in a few shakes of tobasco to give it a kick.

I figured I'd give you the actual recipe and you could do with it what you want. We love it and we may or may not slather it on thick. :rolleyes1 :rotfl2:

I think I fixed the problem with the picture. I had the setting set to only I can view.:lmao:

I am taking a break from cleaning and organizing. Guess what I found in my junk drawer. A gift card for a theater by me. Good thing it didn't expire.


WFD is either grilled or fried catfish, it all depends if it rains or not. I may make mac n cheese and something green.
 
Morning all. Seems like everyone is well. I'm heading out soon and will be home after dark. We still have a quiche that I picked up from Costco this week; so I'm guessing that that's what we'll be popping into the oven for dinner tonight. I'm missing proper cooking this weekend. Since I found this thread, I've gotten back in the kitchen every weekend to cook an old favourite recipe or try out a new one. This weekend is the first in a while where I'm just too busy to do anything. And DH is complaining (a little) about the lack of food! :laughing:

I had to work tonight, than pop into a party, then went to dinner with some friends.
 
Princess – How is your DH feeling? I remember when I had food poisoning, it took a while for me to get back to normal. It really knocked me for a loop!

They *sounded* like a good idea when we were searching for something to eat last night. They tasted like broke-down sloppy joe's. It was pretty bad. I'm only including the link because I have to let you know what it was I made. :laughing:

Last night was date-night in for us. We unplug everything and watch movies and enjoy each other. It is so nice.

Tomorrow I go back to work. :scared1: I have nothing else to say about that. :rotfl2:

Tonight's dinner: I'm making the capellini pomodoro that I should have made last night.
 
GRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRR! I talked to everyone, caught up and Poof! I lost my post!

I will be back to repeat but I have to try to recapture part of my house.
 
This morning I am making oven roasted tomatoes. I plan on using them in a roasted eggplant spread. So far the house smells really good. :thumbsup2 That is probably going to be my lunch.;)

WFD is chicken wings and some sides.

I plan on parking my butt in front of the tv tonight. I am watching the Next Foodnetwork star. I am rooting for Vic.
