The What's for Dinner Thread- June 2012 (recipe index in OP)

Weve been having home cooked dinners for the past few nights. We have been eating a lot of caprese salad with all the tomatoes coming out of the garden.

Friday I made Balsamic Chicken, which is pretty much my chicken cop out recipe. Salt pepper and garlic powder sprinkled on the chicken and thwn drizzled with Balsamic vinegar and olive oil. Bake until cooked.

Saturday we had spaghetti with sauce I took out of the freezer and some steamed zucchini, also from the garden. Last night was pork chops, stuffing and gravy with another tomato salad. Tonight we hae an event at WDI and they're serving a buffet. We get to listen to imagineers talk during dinner. I wish I could share pics but they already told us to keave our cameras in the car.
 
Kimmar ~ I like your idea of lasagna also. I ordered lasagna out awhile ago and they came all rolled up. I had never see it like that before. If that is what you were thinking, I can't wait, as I would love to have the recipe for them...

...no, but that would be okay to do....what I was thinking was that typically lasagna is a layer-based type of meal [or casserole, if you will], and we could share recipes that may not include the 'traditional' ingredients of noodles [pasta], meat, sauce, and cheeses....

If we did that for July like PIO suggested, I have a good Mexican Lasagna I could make. It would be way too hot at that time if year for a traditional lasagna.

pigletgirl ~ Do you and DD have swimming lessons together? Stephanie and Elizabeth took the babies and they had a ball. Both of them love the water now and they are only 2 - at least they aren't afraid of it!!

It is raining here - I mean REALLY raining!! It started last night about 9pm and hasn't stopped since. We have already gotten upwards of 2 1/2" and it shows no sign of stopping. We are in flash flood warnings - but we won't be flooding. Maybe the small rivers and low lands, the streets do have standing water, but it really is a nice soft rain and we need it so bad. Now if we can just get some nice hot weather later in the week, I swear you could see the corn grow. This is exactly what we need.

As soon as I get off of work I am headed to Kearney to watch Lilly. I can't wait!! Stephanie is going to a Back Street Boys Concert with 7 of her girlfriends. They are so excited! Marty is working out of town, so Nana gets to play. They got her a new swing set last night and I can't wait to play. Even if it rains we will be out there. We might be the sweetest things but we will NOT melt. :lmao:

WFDT ~ Stephanie put something in the crock pot for us, so I have no idea, but she is an awesome cook so I know it will be good.

Kimmar - Enjoy the visit with your mom. Gosh....has another year come and gone already? BTW - Just remind your brother to stay safe. I think it was after your mother visited last year that he had all those health issues? Hope he's doing well.

Good morning everyone!!

Kimmar ~ Oh a nice long visit with Mom. Enjoy every minute!!

PIO ~ I had a blast last night...............


OH.MY.WHAT.FUN.I.HAD.LAST NIGHT!! I walked up to the door and Lilly took one look at me and jumped into my arms. We got her backpack and jacket on we were outta there. The rain had stopped but it was still cool and cloudy. We went right to her new swing set. Oh it is so cute and she loves it. We had dinner, went for a walk - twice in 2 different strollers, rode her trike, pushed her in her coop, blew bubbles, saw bunnies, robins, smelled the flowers and wrote on the driveway with sidewalk chaulk. It was wonderful!! I gave her her bath and rocked her to sleep. I can't think of a more fun way to spend a night.

Got up early and got her to daycare by 7:30am. Now I know why I stayed home with my kids, good grief I will be truthful, I almost shed a tear. :crying: I don't know how Mom's do it. Got to work about 15 minutes late, but oh well.

Ethan has a ball game tonight so we are going right after work. The little scoot is pretty good. I am excited to see what he does tonight.

WFDT ~ I have no idea when, where or if we will eat anything. It might just be a bowl of cereal when we get home. Oh how I love summer!!

Two nights until we move!

We have band tonight so dinner will be from a drive through.

Yes, future dinners will be at the new house. I'm not sure I will cook on Wednesday as it will be a full day of preparing for the move. My first big project is to empty my dressers that they can move it with the beds.

Ellen is sounds like you had a fun time with Lilly.

...can you believe it? His new girlfriend is such a positive in his life - I think it helps him with being resigned to his 'lot in life' and she has a calming effect on him....

Hi to everyone else.

Well Doug and I are Ethan's baseball team mascot now. They beat the #1 team last night and they think it is because we were there. :banana: This is the first game we have been able to go to and wow it was a dosey. These boys were undefeated and Ethan's team was #3. Those bats were a going last night, they got 4 runs in the 3rd off of a base hit by Ethan. It was so neat to see. :cool1:

I ended up getting Subways and we ate them on the way to the field, about an hour away. Afterwards we stopped in Kearney for celebratory ice cream - of course!!!

WFDT ~ Egg sandwich (I can't wait) - Doug is golfing for a make up game that was cancelled last week because of the rain. He will eat at the Country Club.

I think the stand we had to made up a Red Velvet herbal tea. The sample pot was on the other side of the table and I didn't manage to get anywhere close to it; so I missed out on trying it.

Yes, Rooibos is great, isn't it?

We seem to be going through a tea revolution here. Lots of start-up businesses are creating tea blends and selling them at the shows.

I have drank tea since I was a child, I have no idea why, no one else in my family did, but I just don't like coffee, I had to put too much stuff in it so I could not taste the coffee, so it was not hard for me to pass up on it... So now only tea. and only herbal.. no caffeine
 
I haven't kept up with the triple crown this year. My dad usually likes to have a flutter so I normally do get a bit of commentary from him at Wednesday night dinners. But I've been MIA at my parents so I haven't actually heard anything.

I'm guessing that California Chrome has won the other two? In that case, yes I hope it wins the Belmont Stakes as well. That would be an awesome achievement.

Well that did not work out so well this year... Still no triple crown!
 
Brandi, that red velvet tea sounds divine. I'm going to have to find some.

Alison, I pay attention to you!

I think that a "rolled" or roll-up meal sounds great. And Kimmar can do lasagna roll-ups. Or she can do something else. A layered dish in July sounds good too.

I don't use sweetener in my tea either, but my DH said with a little sugar it was perfect for him, I thought it was wonderful just as it was.

The only tricky part with some of these teas, is making sure you only use the amount of water as suggested. That one I believe is for 6oz only. I really does make a difference is you use 8 or 10 oz, like most mugs...

Brandi - I LOVE Rooibos teas! I definitely have gotten more into tea lately. Iced or hot it's all good in my book.

Ellen - Yep, Charlotte falls over probably 52 times per day. I wish I could put her in a bubble until she grows out of this stage. She's also a climber. It wouldn't surprise me if she learns to climb out of her crib. :crazy2:

Well we had DD's 1 year appointment this morning. She is 18.5lbs and 28.25in. She's our petite girl. Everything is fine with her head. The swelling is pretty much gone and nothing to be alarmed about. She's of course walking everywhere, climbing on to whatever she can and is letting us know about her beautiful voice. ;) She also got a slew of shots and of course she cried and cried. She's been fussy this afternoon but an early bedtime will help. Hooray for a healthy girl!
