The What's for Dinner Thread- June 2012 (recipe index in OP)

Which reminds me......anyone have anything they'd like to cook for the last weekend in June?

I won't be in town or on-line for that week.

I had suggested something rolled in either a tortilla, crepe or pasta. Brandi said she could do enchiladas. I'm thinking that or seafood crepes if I have the time, otherwise it might be canneloni or manicotti. Is that your weekend trip to Sydney?

Yes Fran and I are on the plane coming home. They just asked us to put phones on airplane mode.

Brandi - There were a bunch of teas with rooibos tea as the base. Have you had rooibos? I don't think it has caffeine in it. I ended up getting one that had rooibos, hibiscus and lemon (or was that lemongrass?) in it. There were other flavours but those were the ones that shone through.
There were also a bunch of teas with green tea as the base. We also picked up a sampler of 5 different green teas.

WFDT? I've taken out one of the curry spice packets and checked the recipe. It's Goan Fish/Shrimp curry for dinner tonight. Hope it turns out okay.

I found Rooibos, about 6 months ago... I really like it. Most of my teas are Republic of Tea brand or Zhena's Gypsy Tea. They are both Organic, Fair Trade, Vegan and Caffeine Free. One of my favs is Red Velvet Chocolate by Republic of Tea. It is my dessert....

I think the stand we had to made up a Red Velvet herbal tea. The sample pot was on the other side of the table and I didn't manage to get anywhere close to it; so I missed out on trying it.

Yes, Rooibos is great, isn't it?

We seem to be going through a tea revolution here. Lots of start-up businesses are creating tea blends and selling them at the shows.

So any bets on the Belmont this weekend? I really hope California Chrome can do it. Another triple crown would be awesome!!

I haven't kept up with the triple crown this year. My dad usually likes to have a flutter so I normally do get a bit of commentary from him at Wednesday night dinners. But I've been MIA at my parents so I haven't actually heard anything.

I'm guessing that California Chrome has won the other two? In that case, yes I hope it wins the Belmont Stakes as well. That would be an awesome achievement.

I think that a "rolled" or roll-up meal sounds great. And Kimmar can do lasagna roll-ups. Or she can do something else. A layered dish in July sounds good too.

Ellen - Yep, Charlotte falls over probably 52 times per day. I wish I could put her in a bubble until she grows out of this stage. She's also a climber. It wouldn't surprise me if she learns to climb out of her crib. :crazy2:

Well we had DD's 1 year appointment this morning. She is 18.5lbs and 28.25in. She's our petite girl. Everything is fine with her head. The swelling is pretty much gone and nothing to be alarmed about. She's of course walking everywhere, climbing on to whatever she can and is letting us know about her beautiful voice. ;) She also got a slew of shots and of course she cried and cried. She's been fussy this afternoon but an early bedtime will help. Hooray for a healthy girl!

Goan Fish and Shrimp Curry



I went to a Good Food and Wine show last weekend and got enticed to buying some pre-mixed curry powder mixes. On reflection, they work out pricey compared to me spending 5 minutes pulling my spices out....but the family that makes the curry powder were at the stand and we liked their philosophy of life.

I guess it makes for a "No Worries" kinda curry making.






Instructions were on the back of the packet, which I didn't follow to the letter.







My starting ingredients:

There was sufficient curry powder in the packet for 2 batches of curry. I only used half the amount, which means there's a repeat of this meal in the near future. I also 'cheated' with the ginger and garlic. We've taken to having minced ginger and garlic in our fridge as well as the fresh stuff. Whenever I feel lazy, I just pull the jars out of the fridge. Saves me a bit of chopping time.






I mixed the curry powder with about ½ cup water; rather than the full cup.






I did go with the onion and tomato suggested on the packet. But I like seeing vegetable chunks in my curry; so I did a half diced, half sliced version of onion and tomato. I also added green beans and pulled some curry leaves off the plant in my garden.






You may also note that I have a jar of tamarind paste in the picture. The recipe calls for lemon juice; but traditional Goan curries use tamarind juice. I'm sure lemon juice would have worked just as well. I happened to have tamarind in my fridge and I used 1 tablespoon of the paste and mixed it up with some water (this is where the other ½ cup of water got used). I will say that I was a little too heavy handed with the tamarind. Next time, I'll use less.







My proteins - snapper and shrimp (or prawns as we call them in Australia).







I heated vegetable oil and a little ghee in the pot.







Fry the diced onion until translucent (took me about 3 - 4 minutes).







Add the ginger and garlic to the pan and fry for a minute. I know the recipe says to mix it with the curry paste but I was taught to fry ginger and garlic before adding the curry paste.






Add the diced tomato and fry for 2 - 3 minutes.







I added the curry paste at this point and fried for a further 2 - 3 minutes. Stir constantly as you don’t want to burn the curry paste.







At this point, I added the onion slices, the tamarind juice and curry leaves.







Cook for a further 2 - 3 minutes.







Add the coconut milk to the pot and stir until well mixed.







Transfer the rest of the vegetables to the pot, bring to the boil and then simmer for 3 - 5 minutes.







Season with salt (about 1 teaspoon) and sugar (about 1 teaspoon).







Increase to a medium/high heat and add the fish. I put in the thicker pieces first and let it cook for 2 - 3 minutes.







I then added the thinner pieces of fish and let it cook for a further 1 - 2 minutes.







Add the shrimp at the end. They take about 2 - 3 minutes to cook.







When the shrimp are cooked, serve with some rice. My dinner!

Well I'm back home and all the kitties were happy to see us. They used to be rather stand offish upon our arrival home, but this new bath of kitties was just thrilled when we walked through the door.

We ordered dinner from Eat24. Thats a website/app with participating restaurants who will deliver and you can order from your smartphone. I had ravioli with half and half meat/Alfredo sauce and Fran had a cheeseburger and fries.

Disney helped me come back 6 pounds heavier so we'll need some lower calorie dinner options to take off this extra lbs. I have no doubt with the move coming in less than a week that will help me get back to the weight I was when i left.

I can't believe it is Friday already!!

PIO ~ You curry looks amazing. I am really getting a taste for curries. You all have got me interested - I've not cooked one myself but have ordered out a couple of times. I am the spicy one in the family. ;)

pigletgirl ~ So glad that DD is back to her happy self. It is so scary when they fall, are sick and hurt themselves as they can't tell us where or how bad it hurts. I was always so glad when they could finally say - It hurts here!!

Alison ~ Welcome home!! So glad the babies were glad to see you. I usually come home from WDW losing weight even though we eat all the time. I think it is the 10+ miles we walk every day.

Kimmar ~ I like your idea of lasagna also. I ordered lasagna out awhile ago and they came all rolled up. I had never see it like that before. If that is what you were thinking, I can't wait, as I would love to have the recipe for them.

This only working 3 days a week is kinda nice, but I can't believe it is already Friday again. I'm not complaining but it sure makes the week go fast. We don't have any big plans for the weekend and I am really looking forward to a nice quiet couple of days. Doug is playing all day Sunday in a golf tournament so I will go to church and come home and hibernate. I can't wait.

Where does the weekend go?


We had an extra long weekend this weekend. Today (Monday) was the Queen's Birthday public holiday and DS had Friday off as well. So, I decided to take Friday off and it was fantastic having the extra time off work.

But I'm back to work again tomorrow and not looking forward to it. Oh well. It was lovely whilst it lasted.


Despite the time, it was a super busy weekend.
DS and I went to see the Dreamworks exhibition on Friday. We took a school friend of his to the exhibition and then met the friend's mum for lunch after. We had a great time in town.

I had a staycation at the Werribee Open Range Zoo on Saturday and Sunday and it was an amazing experience. It's the closest I'm getting to African wildlife without having to get those multiple injections and getting on a plane.

And on Sunday night, we had tickets to go see Chick Correa and Gary Burton. It's Melbourne International Jazz Festival time and it was the only gig we chose to go see. CC and GB might be in their 70's but they are magnificent together and we just loved their performance.

It kinda meant that we ate out a lot this weekend.

Today was the first day I cooked dinner for quite a while. We had a very simple pasta dinner with salad.

Back into the routine tomorrow.

...same here...my sister and I took my mom to see her neighbor [she's a snowbird and spends 6 months here and 6 months in PR] who lives in Breezy Point. You may have heard of it, since it was one of the devastated areas from Hurricane Sandy....
 
Happy Monday! Another week begins! :)

Our weekend was nice. Got a lot of house chores done and took a massive load of clothes, dishes etc to the Salvation Army.

Yesterday we ate out at our favorite breakfast joint. Always very good!

Not too much going on this week. DD starts "swim lessons" and we have a baby shower to attend as well. Just plugging along.
