The What's for Dinner Thread- June 2012 (recipe index in OP)

Nancy - Fantastic news about Buddy. I hope he's doing better today. So happy for you.

Brandi -

Ellen - Safe travels. I'll be thinking and praying for you. I hope the DR appointment goes well.

Alison - I thought about your comment about not liking salmon and that recipe. I think it might work as well with chicken.

Day 2 of the Quit Sugar program. Still grumpy!

Morning all,

PIO ~ Your meals look just awesome. Bless your Mom for all of the love cooking she does for her family. Man oh man it all looked really good.
A fruit pizza is just like a real pizza - but a bit different. The crust is a sugar cookie crust with a cream cheese spread then fruit on top. Real yummy.

Alison ~ You take care lady.

Nan ~ I am so glad Buddy is home, like I told you yesterday, now the REAL healing will begin.

Brandi ~ :wave2:

Girls, I need some of your powerful prayers. I have a very important Dr. appt. tomorrow in Omaha (3 1/2 hours to the East). We are in for a really bad snow storm. They are predicting 6-12" for Lincoln and Omaha starting early tomorrow. We are going to go ahead and go as I really can't miss this one. We are going to go into Lincoln tonight and stay with Matthew. And get up in the morning and go on into Omaha (about 50 miles further east) and then right back home. Doug is driving (thank goodness - otherwise I wouldn't go) and he is very very cautious, but I will be a nervous wreck. I hate - with a capital H - snow and ice. Please pray that we get there and back safely. Stephanie and Lilly were going with us for a nice day together. I called her this morning and told her to stay home. We just couldn't risk something happening with them with us.

I will check in when I can!!

Prayers and continued positive thoughts... Hope everything holds for your travels and the Dr Appt...

Nancy - that's great news about Buddy. So glad he us home, he'll just have to get used to being taken care of!

Ellen - I hope you have a safe trip. That would definitely scare me to drive so far in the snow. I hope you also get good news.

PIO - Your meals always look so tasty! Even if I don't like salmon!

Tonight is the last night that I have to cook for a few days. We are taking a couple nights out at DL so I get to enjoy some dinners out. Then after a couple nights back at home we're going up to my folks for a couple of days. I can use the break!

Glad to hear you are taking a break for awhile Alison, you deserve it! {hugs}

Day 2 of the Quit Sugar program. Still grumpy!

I have been reading this book titled "Eat to Live" and I really think I want to do the 6 weeks detox that is in it. No caffeine, no sugar, no germ killer, no animal products for 6 weeks.... David will not do it with me, but he will support me doing it.

I have not lost a pound in 3 months... I am working out 6 days a week and staying under my calories, so I think I need a jump start, and I am thinking this will do it...

So we are going on vacation in 2 weeks.... I will start this after I get back....

I think I might be a little grumpy myself... I really feel for you PIO!

PIO - I was thinking that recipe would also be good with swordfish. Good luck to you on the sugar detox. I wouldn't have a real problem with that other than the sugars in wine.

Brandi - good luck to you. There is no way that I could do a detox like that. I admire your persistence. I just went up and down 7 lbs in the last week. I hit my highest weight ever. This morning I was back down to where I've been hovering. I woukd be happy just to drop 15 lbs for now.

We bailed on cooking dinner last night and picked up Chinese food on the way home. I think I know what's for breakfast this morning.

Today we have a bunch of plants to put in the ground so I guess I'm going to get my exercise digging ditches. :rolleyes1

Tonight for dinner I'm having some new pigbuger that was on a commercial during the super bowl. So much for the losing any weight.

Morning girls,

PIO ~ will be there!! I might be a bit late but I will be there :rotfl2: Man how I wish I could. I love the land of OZ.

Well it is snowing!! It started last night about 8 and snowed all night. We have about 5 -6" and it is still snowing. It is so pretty and the great thing is there is no wind with it. Otherwise I would be at home, there would be no school and it would be a mess. But with no wind it is falling gently and is really nice.

Nothing exciting planned for the weekend - thank goodness. I am putting together a menu for the Super Bowl game on Sunday. So far here is what I have planned:
Black Bean sliders
7 layer dip
cheese ball
fruit pizza
Raspberry Chipolte dip
chips and crackers
Go Broncos!!!....

.....go? Yeah, they went alright.....back to Denver. Trouble is, it was BEFORE the game...:confused3 [ :rotfl2: ]

Ellen- I just saw that you had a DR appt and needed to drive through the storm. How are you, and how was your trip? I agree that snow and ice are the worst! This winter has been more icey weather and it is a nightmare! Please check in and let us know how everything went!

Morning girls from the frozen tundra - literally.

Nan ~ How is Buddy doing today? I am so glad he is home and you all can pamper him. I am sure he is loving it.

Kimmer ~ yea, 'nuff said. :rotfl2:

Alison ~ So glad you and Fran are getting away for awhile. You so deserve it!

Brandi ~ The detox sounds like something I would like to do. I will be anxious to hear how it goes.
Where is vacation?

PIO ~ You deserve to be grumpy. How does the no sugar work? I don't mean to sound stupid, but there are a LOT of things with sugar that we don't even realize. Are you reading labels or just the sugar we all know about.

We got there and back in one piece. But it was very scary a few times. We left on Monday night and got to Lincoln. That was the smartest thing we did. Left for Omaha by 9 and what usually takes less than an hour took 1 1/2 hour. I didn't get in until my actual time of 11:30 as everyone else thought the same thing. We sat there and it progressively got worse. But as soon as my appointment was over we headed home. No Cheesecake Factory for us. It was a very scary drive and if Doug had not been driving I would have stayed. White out and blizzard conditions at times. He only drove 50 mph on the interstate. It took us 5 1/2 hours to get to Kearney. We stopped and got Cooper and headed on home. We were totally wiped out when we finally closed the front door.

Don't worry about me........I am fine. I have to go 3 times a year. It is just one of those things that I am glad there is help for. Thanks for the concern but I really am fine.

The schools are opening at 10 here today. There are drifts and snow everywhere, but I think they closed because of the cold. Our temperature is -10 but we have a wind chill of -29. Just to darn cold for anyone out there. We are to continue these cold temps till Friday. Tomorrow is suppose to be -20 actual temp. - lower if there is wind. I don't mind winter, but these temps. are deadly for man and beast. We are even thinking of cancelling all Church activities tonight.

WFDT ~ Swiss Steak, potatoes, asparagus and a jello salad.

Make it a great day all.

Today is the Dr Appt right? We might not hear from here until tomorrow, that will be a nasty drive back home.

Good Morning,

Nan & Brandi ~ Thanks so much for your concern. I am home and all is well.

Kimmar ~ :rotfl2: God love ya!

Well I sound like a broken record anymore. It is bitterly cold here today. When I got up the temp. was -17 but the radio man just said we were warming up - it is now -12. Thank goodness the wind is really low or the windchills could get to -40 they said. I don't think I have ever seen it this cold before.

WFDT ~ Butternut squash soup with roast beef paninis. It is that kind of day!!

Make it a great day.

Ellen - I'm so glad you made it there and back safely. I'm glad its a routine treatment and that they have something that provides relief for you. That sounds so scary and cold. We cry when it gets close to freezing here, I can't even imagine what its like with below zero temperatures.

PIO - I hope day ?3?4? of your no sugar is working out for you. Within a week you will probably feel great.

Brandi - I hope you hang in there!

Kim - :wave2:

Nancy - so glad Buddy is home and I hope he is felling better.

We had a wonderful dinner at the steakhouse last night. Tonight we're having dinner at Trader Sam's Tiki bar. But right now I have to pull the covers off Fran and get her out if bed so we can go up to the CL and get breakfast!

Morning girls,

Alison ~ Are you still in DL? I just love how you can and do just pop over for awhile. That would be so neat. It is such a MAJOR undertaking for us to plan a trip being either coast we choose to visit it requires a plane ride. I really am trying to talk Doug into coming West to DL. I have been many times but he has only been to WDW. I will keep trying. :rotfl2:

Nan ~ How is Buddy feeling? Have you started back to school yet?

PIO ~ still grumpy?

We are above freezing - only 2 but hey we will take it. And I really think the sun is trying to shine. It is amazing how much better I feel when the sun shines.

Doug and I have NOTHING going on this weekend. I can't believe it!! That doesn't happen very often. I have a list a mile long of things I have put off while we were playing. So that will be what I do - I can't wait. I will feel so much better when things are clean, organized and I can find them. I swear I am always looking for something. I hope to also do some baking and reloading the freezer.

WFDT - a slice of pizza at the BBall game.

Make it a great day and a beautiful weekend.

Hi Ellen! :wave2:

We're just chill in in the hotel. We have to check out in a couple hours. In all we will have had the room for 43 hours. Of that we have spent 33 hours IN the room, and probably 25 of those with at least one of us sleeping. Today some of our friends who have APs are joining us to hit the parks.

No idea what's for dinner!

Brandi - Are you going to do "Eat to Live"? I'm not sure I could do that for 6 weeks. We have tried something similar for 3 weeks and that was enough for me.

Alison - Hope you're enjoying being at DLR.

Nancy - Hope Buddy is doing well.

Ellen - Stay warm. Glad you're home safely. Sounds like you took the drive smart and slowly. Yes, we're reading everything on the labels. On the super strict diet, we're not even supposed to eat fruit because of the fructose in them. I'm not going to be that strict. Any diet that recommends that kind of extreme eating is not one that I generally like to do; I prefer a more balanced eating plan but DH was very keen on it. It starts off with avoid adding sugar to food; then start cutting out anything with a high sugar content. The general rule I'm sticking to is a standard portion should have a label less than 4 g of sugar. We've found bread that meets the requirement and will be eating a lot of whole foods for the next 6 - 7 weeks. This will mean no white rice and 'normal' bread nor any regular pasta for the duration. I've found a yoghurt that meets the requirement; so it's just a matter of sticking with it. Sometimes these kinds of fad diets gain popularity; but the writers tend to forget the basics of body biochemistry. I don't want to totally eliminate sugar as the body needs sugar in order to create energy. But I figure there's nothing wrong with reducing processed sugar.

The end of week 1 and I'm no longer grumpy. Well....no grumpier than normal. I didn't have any headaches; which is a pretty good sign, although I did have more sweet stuff than normal over Chinese New Year.

My 17.5 year old princess cat is not well. We've been rather worried about her for the last 2 - 3 weeks and our vet has taken to calling us every day for the last 5 days. At the start of the period, they have had to keep her in the clinic for 3 days and rehydrated her with a drip because she wasn't eating or drinking; and this week, they've kept her in for observation for a day. They've given her about 2 or 3 lots of cortisone injections because she just wasn't walking and she's been so unsteady. The stupid thing is she doesn't seem to meow out in pain or anything at all. Anyway....the last lot of cortisone seems to be helping. The vet thinks that she might have arthritis. If she has, it was a very sudden and acute manifestation. We might need to have weekly doses of cortisone from now. :(

Since the Sochi Winter Olympics Opening Ceremony is tonight, we are having...

Beef Stroganoff,
Salad w/ Russian Dressing, and
Pierogies
