We have a funeral here this morning with a lunch after. Busy day.

We lost the ball game last night by 1 point at the buzzer. It was a real heartbreaker. But I know secretly Doug was thrilled. You can take the boy out of the town but not the town out of the boy. He wouldn't even stand when our fight song was played. I think he felt if he did everyone on the Cozad side would see him. He just makes me laugh - but then on the other hand there is NO way I would ever stand or root for Cozad. So I guess a bit of me does understand - but it still makes me laugh. He has lived in Lexington since he was 18. But still!!

WFDT ~ Sloppy Joes, chips and applesauce. I'm tired of cooking so that is the best I can do today!

Last night I shredded up the pork shoulder, made some Cole slaw and we had pulled pork sandwiches and chips. Tonight is standing rib roast with mac and cheese and creamed spinach. Clearly a comfort food meal.

PIO - I hope you enjoy the fireworks this weekend. I wish I had time to get out to spontaneous events like your family attends.

Ellen - you deserve to relax. I have sloppy Joes on the menu for tomorrow night!

Good Saturday Morning!!! I am doing okay, tired but doing well.
Ellen- we have these rivalries here too! When Marisa was in high school, Buddy and I were married, and he lived in the town next to ours. Holy Rivals! Marisa would not move here, and Bud was worried about Dan entering this High School. Funny that there was so much competition, because the two schools played football on the same team, and the town swim team combined both towns.

Allison- I hope that pretty soon your life slows WAAAAAAAY down! Hang in there!

PIO- I always enjoy "traveling" to the events that you attend simply by clicking on the pictures you post. THe past year has been one heck of a vacation for me@! LOL!

Brandi- I shared your almond milk recipe with Donny and my DDIL Erica. They send their thanks!

WE are supposed to get snow today, so depending on how the day goes, I plan on getting home early this afternoon. Buddy had a terrific headache yesterday and was pretty darn dizzy. I hope he feels better today.

It's Sunday here and I think we are going to see the Australia Day fireworks tonight. It's a gorgeous looking day; so DH and I thought we'd head out a little earlier and have dinner out. WFDT? I have no idea; but I won't be cooking. :cheer2:

Today that vicious headache went from a pain scale of 9 to a 1, after some serious med changes. He finally slept and when I left he was nodding off again.

Marisa and I will go tomorrow morning and I will spend the day, Donny will come in the afternoon. My poor DS and DDIL are in Boston. Erica's mom had a total hip replacement along with some bone something. They have been there every weekend while she was in the hospital and in rehab. SHe has discharge papers for Wednesday, so they will both go to pick her up and bring her back to her house, and Erica will stay there. Dan will take the train home. Both of them are exhausted!
I am having hot and sour soup for supper :)

I worked all day Saturday and Sunday afternoon redoing our spare room. We have 4 bedrooms and the one that was Stephanie's is the smallest. I really needed the extra storage more than I did another bedroom so we took everything out cleaned it from top to bottom and installed shelves all around. I LOVE it! I now have things organized and put in tubs that I can see, one unit is for my pantry, extra pans and you know those things you need - just not every day. We put our luggage in there and all of my picture albums are now out. I can't tell you how much better I feel getting this done. It is something I have wanted to do for years and now it is done. I just go in and look around - I LOVE IT!!

WFDT ~ Pork Tenderloin, roasted potatoes and brussel sprouts.

Black Bean Burgers

1/4 cup cooked black beans - I just used the canned kind
1 T olive oil
1 t garlic powder
salt and pepper to taste
1/2 pound ground beef - we have used ground turkey either way is good.
1 T Dijon mustard

Preheat the grill. In a medium bowl, mash the black beans, olive oil and the garlic powder with a potato masher or fork until very creamy. Gently mix the black bean mixture with the ground meat. Season the mixture liberally with salt and pepper. Divide the mixture into patties. Using a pastry brush, lightly coat the outside of the patties with mustard. Cook the burgers until a golden crust is formed, about 1 to 2 minutes per side. We like ours with a crunchy coleslaw on top. Enjoy!
 
Ellen - Sounds like that spare room turned into storage is amazing. So glad you're feeling great about it. I always wish we had extra room too; so good for you for making the space for it!

Ellen, that sounds amazing... The storage that it.. How neat would that be to actually have everything in a place and you can find stuff... That is my dream...

It is cold, down right bitter cold again this morning. The temp is -12, thank goodness there is hardly any wind. But the sky is the most beautiful blue and not a cloud in the sky. If I didn't know better I would say it is a nice day out.

I have a personal training session tonight. This is week 3 and I am feeling so good and I even think I have lost some weight. I made a pact with myself that I am not taking measurements or getting on the scale for 6 weeks. But I know I am feeling good about where this is going.

WFDT ~ Chicken fajitas, homemade tortillas (Doug got it for Christmas) and Spanish rice.

I hope you all are snug and safe today. This weather is just wicked.

Wow, oh wow, I am sore today. We really worked arms and stomach last night. My goodness! But it is a good sore, at least I know I am doing something. Each day is something new and different. I think that is what I like the most. It is never the same thing so I am not getting bored.

On the way home from work yesterday I saw the neatest thing. There must have been thousands of geese getting ready to roost for the night in our west field. I finally just stopped the car, rolled my window down and sat and watched and listened. It was amazing to see and I felt like I was right in the middle of it. I just had to share.

WFDT ~ Hot beef sandwiches with mashed potatoes and kale chips. Lemon bars for dessert.

Congratulations on feeling better, that is the most important part! When I first started back, I was always looking for ways to get out of my exercise, too busy, things to do etc, etc... Now I don't even think about it, it is just habit now, you will get there... Congrats again..

Morning, it is all kinds of cold here.. we got about 1.5 inches of snow and NO ice thank goodness...

My Family down in Alabama got snow and ice, so they are all at home warm and snug...
