The What's for Dinner Thread- June 2012 (recipe index in OP)

Well, I'm hopelessly behind on everything! Changes with our band are making my life more difficult. Closing the music store is a lot of work, and all this on top of taking care of Fran, myself and the kitties. I think dinner for the next couple weeks will be courtesy Sam's, Costco, and take out!

and there is nothing wrong with cutting corners and grabbing stuff from those places, you and fran are more important! Take care and hope things become easier for you soon.

English Scones


My starting ingredients:


  • Self Raising Flour, 3 cups - sifted
  • Butter, 100 g - cut into cubes
  • Milk, 1 - 1 1/4 cup
  • Cream, 2 tablespoons
  • Pinch of Salt



Preheat oven to 200 C.



Add the cubed butter to the sifted flour.


Pinch the butter into the flour until the mixture resembles breadcrumbs.


Make a well in the middle and add the cream and about 1 cup milk.


Mix it all together to form a sticky dough. Add the additional milk if required. I normally add enough liquid for the dough to just stick to the sides of the bowl.
Do not overwork the dough or the scones will be a little rubbery and tough.


Turn the dough out onto a floured surface, adding more dough on top.


Pat out to form a long oblong of about 1 - 2 inches thick and use a cookie cutter to cut out rounds.



Place the scones on to a baking tray or pan.


Continue until all the dough is shaped into scones. Lightly dust the top of the scones with flour and cook in a hot oven (200 C) for 20 - 25 minutes.

The scones should be nicely brown on top.

Serve warm with jam and cream; and a nice hot cup of English Breakfast tea.

I love scones and biscuits....

I wish I could taste one right now.... This diet is making it hard sometimes... But I do make room for my germ killer, I will do without other things as long as I get my germ killer.
 

Hey, all. Tonight is dinner at church. It's BBQ with all the usual sides. The church's BBQ is a wee bit spicy for my stomach so I am stopping by McDonald's and getting a grilled chicken wrap for myself.

My weight loss is still going good. I am down 5 dress pant sizes. Woo hoo, huh?! I am considering going mostly vegetarian in the future, but I haven't decided for certain yet. I would have to do some shuffling with cooking because Scott won't even get on board with a Meatless Monday kind of thing, lol. But whatever I do, I won't decide until I get back from WDW next month. I'm not passing on my filet mignon at The California Grill. :)

Morning! Today I'm making something new, it's a chicken burger. I will let you know how it turns out.

LOL, 5 dress PANT sizes. I carry a lot of my weight in the middle, but it's also the first that loses when I eat right and exercise. I can't seem to lose as quickly with jeans, but I know they fit completely different. I don't have any full-body pictures yet, I will try to do that this weekend. Thanks for all the encouragement! It's invaluable!

...wfdt? SImple, simple, simple....a lg pkg of chicken thighs in a large chicken fryer (deep covered frying-type pan, although I'm not really frying them since I use no oil and a very low flame). Sprinkle on Mrs. Dash No-Salt Italiano seaoning, garlic powder, sea salt, freshly-cracked pepper, the juice of one large lemon (cut 2 slices from the middle of the lemon by cutting it in half and cutting off a slice from each side) plus and additional 1 T lemon juice (from one of those plastic lemons like RealLemon) and 4 cloves of chopped garlic. Cover and simmer over very low flame for 1 hour. I serve this with steamed broccoli. YUMMY!

dinner was a baked ham, mashed potatoes and gravy and green beans. One of those Halloween confetti cakes with chocolate frosting for dessert. Welby and my little Angels came for dinner tonight. Easy to see R was not p to speed, she was quiet :sad1:

Kady came home sick today. Buddy's cousin picked her up. WElcome Fall.

At this point in my life that's all I can deal with! I hope we get through this part soon. We spent so many years building the business and even though we have known that we planned to shut it down for several years, it still is going to take a long time to dismantle it. And then it will still take years to donate and sell the leftovers. Ugh, why are we topping a home buying/home building project in conjunction with closing the business and remodeling that apartment?

I guess we are crazy! :crazy:

I really need a vacation!!!!!!!!!!!!!!!!!

Both your dinners sound yummy! We had leftover KFC and some potato skins from Sams Club and the Cole Slaw and Biscuits from the KFC. Not really tasty, but served it's purpose.

I love love love KFC!!!!!!!!!!!!!!!!!! When we used to make sure all of the guys had dinner during cutting season I used to sometimes pick up KFC adn teh fixings. I think we were responsible for keeping the two stores in business because once I stopped eating there..............gone:confused3 A few weeks ago I picked up some fried chicken from Big Y and you would have thought that I brought home a bit of Heaven for Buddy. He misses KFC too but if he tells me one more time how good his Mom's fried chicken is and that it was pretty easy to make..............well I won't be responsible for what happens next :badpc:

So tonight Buddy's cousin wants to go to Olive Garden. We'll see how Kady is feeling and then see if his cousin does not bale out.
 
Dinner last night was left over chicken pizza

Grilled chicken shredded, homemade sauce, that I canned this year, onion, peppers, cheese. Calories per slice..... 111.

Anyway, david and I both down 12 pounds and vacation started today... Hopefully we can keep it off...


Btw... Today's workout is the last one on insanity.... I can't believe we did the whole thing..
 
Been a long time since I've been on here. :wave2: For the longest time I kept getting a virus warning every time I clicked on the link to only this thread. :scared:

Not much cooking going on, which is the usual lately. Going to the game so dinner will be a hot dog at the game.
