The What's for Dinner Thread- June 2012 (recipe index in OP)

WFD? Santa Maria Tri Tip, beans, rolls all in a car and petrolia museum.
 

WFDT? We're doing take-away...sushi and bento boxes. I feel like having a chicken teriyaki bento for dinner tonight.
 
Special Fried Rice - Chicken and Salt Fish


A couple of weeks ago, I had the craving for some salted fish. This over-the-top sodium chloride encrusted dried fish is not something that I would recommend as a common everyday item in your pantry. However, this method of preserving fish has long been used by the Greeks, Chinese, Egyptians, Europeans, Latin Americans and Asians. It is quite an acquired taste. If you have tasted salted fish from any of these cultures, you'll know what I mean.



My starting ingredients:

  • Cooked white rice
  • Salted fish, about 50 g
  • Chicken tenderloins, 300 g
  • Peas
  • Chinese Cabbage
  • Eggs



And for the flavour...

  • Chinese Wine
  • Soya Sauce
  • Stock powder

I also had ginger, garlic and oil.



In a moderate wok, heat up some oil and fry the salt fish, ginger and garlic.

After 2 -3 minutes, add the chicken and stir rapidly.

I added a splash of Chinese Wine at this stage.....

....and the chinese cabbage stem. They do take longer to cook than the leaves so I always separate them when chopping the vegetable up.

Toss for a couple of minutes and then add the rice. Toss the ingredients together for another minute or so.

Add the peas...

....and the cabbage leaves.

Season with a little soya sauce, salt and pepper to taste and about 1 tsp stock powder. Toss all the ingredients together and continue tossing for another 3 - 4 minutes.

I made a mistake with dinner on this night....I normally fry the egg first but I forgot. So I made a well in the middle and cracked the egg in.

There's nothing really wrong with adding the egg last. It's just that when you toss the ingredients round, the egg is dispersed finely and the dish doesn't look as 'neat'.

Still.....nothing wrong with the taste of my dinner that night!

PIO - Dinner looked awesome, I have never had the salted fish, i see it several places but I am very sensitive to sodium. If I have any at all, I swell up and can't get my rings on, it seems to go straight to my feet and fingers!

I try to always drink a lot of water when I taste a lot of salt...


So how does it taste? Do you have a fish taste and it is it very salty?
 
So I must tell you that the third shoe has dropped for me….

I am so upset I have been sitting here crying this morning, I keep all of my files, my personal documents and my music and photos (yes all of my photos)…. On an external hard drive. The external drive had a hardware failure. I have lost everything…. I bought some software online and it seemed to work but it made the files into something I can’t recognize and therefore I have nothing…

My last backup is not restoring either. The only one I can get to work is a year and half old. So I have lost the last year and a half of photo’s, statements and personal life documents…

Why oh why is all of this happening!

Very fishy....intense flavour. And very salty. But I tend to not add salt when I cook with salt fish. I find there is enough there for the whole dish.

Oh no, Brandi!!!! That is awful. Can you take it to a computer place to see if they can salvage anything? I'd be sick over it, too. :hug:

Nancy - In this age, 2D friends-in-a-box are as real to me as my 3D friends. I actually catch up with you all more often than I do my 3D friends. And its a rainy day here too. Cold. Rainy. Windy.

WE had a good dinner last night.

My version of apricot chicken:

brown BL/SL chicken thighs that have been seasoned with salt and pepper in a hot pan and then transfer to a baking dish

combine equal part french dressing and apricot jam, ( I used 1/2 a large bottle of dressing and 1 16 ox jar of jam) 1 package onion soup mix and a good bit of chopped garlic in a sauce pan. Bring to a boil and then simmer until it resemble a tight sauce.

Pour over the chicken and bake at 350 for about 35 minutes.

It was really good over teh seasoned couscous.
 
I had a migraine for dinner last night, so DH went to Taco Bell for takeout.. I was even able to eat a little. =)
