Now back to that lemon recipe, I think I would go messing with the oil. I use light olive oil, it is a healthy clean tasting oil. Alex dietican approved of the olive oil.

I read a few of the comment it doesn't seem anyone has fussed with the oil. It isn't like you are going to be eating and making these every week right.

I thought you could sub applesauce for oil in recipes? If not, you're right I won't be eating that many anyhow.
 

Yes you can sub applesauce but not in that recipe. I think the texture would be wrong . Let me play with it and I'll let you know. It might work. I'll run it past my critics at work. They are my guinea pigs. ;) I think I have all the ingredients I'll try it tomorrow night.

We have Easter brunch change of plans.....
I'm going to my cousin's on Long Island & the request was a red velvet cake & the Easter Bunny cake I make. I'll put the Paula Deen/Smithfield ham in the freezer for the following weekend. It's supposed to be shipped April 5th so to late to cancel.

Does anyone know how long the Flower & Garden show lasts at Epcot?

Maria -- I know the Flower show was still up the last time we went during our April vacation, which is the week of or following April 19th (Patriots Day.) I think that was the last week for it though. Sorry I can't give you more specific dates for this year.

Kris was great this week! He still needs to look into the camera though. Despite that, I am still ranking his performance number one this week.

Oh BTW we had takeout fried chicken. It has been raining all day and I decided I wasn't going to cook and surf for decorating ideas too. I would be too exhausted :rolleyes1

I was just looking at the same cupcakes earlier! I had the same thought you did! Did you see the lamb cupcakes? They were darling, but I don't know if I'd have the patience!

Holy Moses, Chicklet! That's quite a morning! I seriously think you need to move to my town where the worst thing that could happen to you would be too many moms coming in to do reading help with the kids. Seriously, you need a job that lets you catch your breath!

Yes...I need to move. :rotfl: The crazy thing is that all that stuff has happened before, just not all at once in a 2-3 hour span.

Bethany- The ART teacher is allergic to markers!?! You do teach in an elementary school right? I would think part of the job requirement for an art teacher would be the ability to use markers. Just so you know, I went to school in New York state (orange county), all schools are not like yours. Though you certainly will be well prepared for anything after your experience there.

Yes, its PK-5. She can use crayola, just not expo. Or so she says...:rolleyes1

I agree with you. Bethany....come here! No fires, no drama no police in teh schools....we do have winter though.....but we get snow days :thumbsup2

Winter. :scared: Just a tip...if you want to use winter as a selling point, do it in July or August, NOT March! :rotfl: ;)

But the big issue is that I probably won't have access to a computer from Friday afternoons until Monday mornings. The guy who is working on my kitchen floor only works weekends, so it is going to take a while and I have to get Hailey out of the house while he is working. So, I will be spending the weekends at my parent's house. And since they just got an answering machine 2 years ago, you can all probably guess that they don't have a computer. ;)

Good to "see" you again. What kind of floor are you getting put in?

I realized I missed the 100 day mark on number of days left in my lease. I'm down to 91. Guess I'd better figure out what, exactly, I'm doing as of July 1! :scared1:
 
Good evening! It's 11:20 and I finally sat down for the day. :worship:

Ace did very well - the other dog was very protective of his "people" but by the end of the evening, they were snoozing next to each other :thumbsup2 I couldn't talk to my colleague about it much in front of kids and wife but we'll chat tomorrow once he has a chance to talk to his wife about it. Ace was on his best behavior and was very cuddly and sweet.

Thanks for all your good thoughts and prayers! :goodvibes DH is getting anxious for him to find a new home, he's not really any trouble but the last foster stayed around for months because I got busy and didn't make it a priority. He knows summer is approaching and my life is nuts. So, if I can't get a straight answer from this family in the next week or so, I am going to abuse my power and email his info out to everyone in my Outlook acct and see if I get any takers. I was able to place my last foster that way :thumbsup2

I have alot to catch up on! Hopefully I will have time later...I have a call in to see if I can go see Charles today or tomorrow. Just waiting to hear back since he has his moments of fatigue and pain, it is best to go when he says its OK.

Morning all! Work yesterday was rough--why do some people just not listen? Ugh! Anyway, not sure what the troops had for dinner, but I had leftover lemon fusili (That recipe rocked!) Not sure WFD tonight. We're going over to dsis's to watch the Idol results show (Go Kris!) I think I might take dinner over with me. We'll see.

Can I substitute something for all that oil?

Kathy - These are DS1's favorite! (Insert drooling smiley!)

It's been a little while since I've made these - Let me go back & check my recipe @ home. I might have a few notes written down.

The cupcake recipe is a lot like following a regular box cake mix recipe with the extra egg & pudding mix added to give you a very rich cake (notice there's no water).

IIRC, I left out the oil in the glaze. I'm not sure why the oil is there (consistency, clingability???), but I'm thinking I just subbed water to get the right consistency.

Remember, these are made in mini-muffin tins, so they're really not all that big. But be careful....they're addictive!

We had leftovers last night, so I actually have to cook tonight. I'm making an April Fool's dinner. I'm making meatloaf "cupcakes" with mashed potato frosting. Jacob can't wait to fool daddy! I got up early this morning, and put drops of food coloring in the bottom of the kids cereal bowls. I poured cereal over it, and then when the milk was poured, the milk changed color. The kids were amazed!

I bought a chicken and would like to brine it before roasting it in the oven. Can anyone help me with the brining process?
