The What's For Dinner Thread - Feb '09(recipe index in OP)

Aimee- Glad you liked the corned beef. I wanted to get another one to try to make corned beef hash, it's up to $4 on a pound. I refuse to pay that on principal, since it's leftovers no bought. I saw your easter request. I made a really good boursin creamed spinach for my husband's birthday, you made it the day before and cooked it the next day. I look for the recipe, it was real easy. I think the difference between a gratin and scalloped potatoes is cheese and no cheese. I'm all for using cheese any chance I get.

Oooh, that spinach sounds good. Would love the recipe if you track it down - thanks!

Tonight we are going out for mexican - B1G1 free coupon.

Boursin Creamed Spinach

1/2 cup diced onion
1 Tbs. butter
2 Tbs. ap flour
1 cup milk
1/2 cup heavy cream
1 package (5.2 oz) Boursin cheese*
1 package 10 oz. frozen chopped spinach, thawed and squeezed
2 Tbs. grated parm cheese
1 tsp. grated lemon zest
salt, pepper, cayenne, and nutmeg to taste

Bread topping
2/3 cup fresh bread crumbs (I use leftover bread to make breadcrumbs and freeze)
1 Tbs melted butter
1 Tbs. olive oil
salt and pepper

Preheat oven to 425F; coat a shallow 2 cup baking dish with nonstick spray

Saute onion in 1 tbs butter, cook until soft about 5 min. Add flour and cook about 1 min. Gradually whisk in milk and cream stirring constantly. Stir in boursin a little at a time until melted. Remove from heat.
Add spinach, parm, zest, seasonings. Transfer to baking dish.
Combine crumb ingredients, sprinkle on pressing a bit. (dish may be covered and refrigerated at this point) Place on a baking sheet, bake until bubbly 20-25 minutes.

I make my own "boursin." It's $7.99 at our grocery store, I don't know if it's that expensive everywhere. But since I didn't know if we would like it I made my own
1 8 oz. package low fat cream cheese (I like it because it's softer)
fresh parsley and basil (I used dried basil and it was fine)
sprinkle dried thyme
about 3 garlic cloves
salt and pepper

blend in food processor, I used a little more than half in place of the boursin and we had the rest on bagels. I also use this as a spread on a roast beef sandwich.

Hey Y'all!

Quick checkin I kinda of quickly skimmed through so I apologize if I missed something.

Lauren, He is beautiful!! In every pic Andrew takes with T, Andrew looks so blissful!! You're a lucky Mom!:goodvibes

Kat, Prayers the sale of the house goes through! I know how hard this has been for you. I hope you can finally get it over & done!

Lindsay, Continued prayers for Jan!:flower3::hug: Send her lots of books & magazines to keep help her keep her mind occupied, also some of her favorite snacks or beverages like tea bags. She probably will be isolation soon, but that doesn't mean you can't visit (unless you are ill) they have everyone wear gloves & masks while they visit.

Glynis, So sorry Leslie is still sick! I hope she gets over this soon! :flower3:

Maria, Monday Magic makes me smile! :goodvibes

We went to the wine event yesterday. It was a nice & fun. All the food (& wine) had me up most of the night with IBS stomach pain again, but it was still worth it! I was a little disappointed in the food. It gave me a new appreciation for F&W's PFTS. Which really is kind of sad, because I thought any chefs from Nola could hang with chefs from all over the world. (Although this wasn't local chefs but the Wine Shop's Catering dept.)

The weather was (& is) so pretty. It was nice because the event was in the Pavillion of the Two Sisters in City Park. Tables were outside & it was just beautiful. Driving in to the park, it looked like everyone in the city decided to head there yesterday!

Ladies, I'm requesting more prayers for DD. She didn't get that job that she was called back for multiple interviews. Get this... :mad:The "girlfriend" who gave her the tip about the job, tells her that she had decided to leave her job & to interview for this one! and she got the job, because she had a lot of good contacts with the local college. DD was so hurt & mad! I felt so bad for her! The person who interviewed her told her had it not been for the contacts the other girl had they would have given Angelina the position. They said they even checked with their headquarters to see if another position could be created for her. All of that is not much consolation when you don't get the job.
She is also having surgery on Friday, so things are just really rough for her right now.

Also can y'all say some little prayers & send some good vibes for Bob this evening. It looks like we will have an aide come out tonight. I am really nervous about it, so I can't imagine how difficult this is going to be for him. The lady came out Saturday & we really liked her. The agency actually called him today to confirm, so I'm hoping it works this time!:

Dinner is going to be something with the baby artichokes I didn't cook over the weekend, maybe pasta or grilled with chicken.

Sheryl - I'll be praying that it goes well tonight. I'm so sorry that Angelina didn't get the job - some friend. I'll be keeping her in my thoughts and prayers this week.

Sheryl-

There is a change in dinner plans tonight. My stomach is bugging me. One minute I am starving and my stomach is growling and the next it hurts! I have a hiatal hernia and Auntie is about to visit, it sometimes causes pressure on the hernia. :headache: Thankfully I haven't had much dairy today, that would really hurt! :scared:

Going to have some tea, toast and scrambled eggs. :thumbsup2

I'm thinking tomorrow night will be fish with the gnocchi as a side dish with a creamy spinach sauce and some asparagus.

Cajun chuck steaks in wine gravy, mashed potatoes and zucchini crisps.

What?!? No red beans and rice? :confused3

Here is a little Monday magic:

Thanks....I really needed that.

What. A. Day. :scared: This is one of those days I'm going to have to write up for y'all .... or at least the morning.

Oh....The DIS boards will be down (yes, AGAIN :sad1:) tonight beginning at 10pm Eastern.

There's a thread roaming around the CB somewhere....

Tonight is lime chicken nachos with rice and fruit.

Summer can come now I bought Alex his pool pass. :lmao: cancel all snow warnings now.

Kathy You did confuse me also. I thought something happened to monday and it was a day later :woohoo: but no. Can we make today tuesday please :rolleyes1

Sheryl Don't worry about Angelina and that job either something will happen and she will get that job or something better will come along shortly. I am a firm believer in everything happens for a reason and what comes around goes around. That "friend" is no friend in my book. That really stinks.

Sheryl your all in my prayers.....:grouphug:

Kat, prayers about the house.

Glynis, hopefully Leslie is on the road to recovery:hug:

Got an appt. for the ENT Wed. afternoon.......Tomorrow spending the day with DM, some mother- daughter bonding in the beautiful weather, please cont. prayers for DM while work is still going through changes.

Last night DM had a family that the Mom suffocated the Dad in front of the 14 year old daughter.......she was with the family for many hours. I just can't imagine what's going to happen to that child.

Am I THAT predictable? :confused3:lmao:

(Or maybe YOU are the predictable one?? :upsidedow)

It's obviously both of us....

Lovely, I guess that means they'll be down most of tomorrow as well, which means I have to work at work.:headache:

I sure hope you get some relief on Wednesday. Continued prayers for DM and that poor 14 year old, that is horrible.:sad1:

(This may look familiar to a few of you....sorry...)

So this morning....after I had hit that snooze button at 4 (for 10 minutes), I woke up one hour and twenty minutes later at 5:20. :headache: I had wanted to leave at 6:15 so I could be at work at 7. Well, I LEFT at 7...tried to get a cab. No dice. Caught the bus, then when I went to transfer to the train, I got stopped by the police. I had to have my stuff swabbed for bomb residue at the terrorism checkpoint. Then I RAN for that train because I was already running so late. I got to work at 7:40 and had a LOT to do, but got interrupted so many times that nothing got done. Somebody took a table out of my classroom, so stuff was all over the floor. It's still there. The building reeks of dead rat.

We have an assembly and during the assembly there's an announcement (at 8:50am) that the dismissal procedure will change effective today. This is the 3rd time they have changed the dismissal procedure this year, and they never tell the parents (or the teachers!) ahead of time. Whatever. There's also an announcement that we have a 2nd police officer stationed at the school. (We wonder what prompted this...it was a weapon last year that got us 2, which is one more than the standard-issue one officer.)

At 9:30, I leave the assembly because it's my prep; my class is left with Drama Queen, the art teacher. I run upstairs to finish the thing I meant to to at 7 ... the science fair project. :headache: But I'm going back and forth to the office because my attendance paperwork is missing. On one of my runs, I leave my keys in my classroom. But first, before I can find the custodian, I need to go wipe up the water I spilled in the stairs from hitting somebody with a door. (Oops.) I get BACK in the classroom, finally finish stapling in the pieces, then leave (WITH keys this time!) to the gym - 3 doors down from my room - to drop off the board.

Somehow, in this minute I took, Drama Queen has now arrived from the auditorium with my class. She has to use MY classroom, not hers, because she is also missing a table. (Turns out they are all in the gym...) Anyways, by the time I get back, she is SCREAMING down the hallway to TWO different people about "Where is Ms Piglet?!?!?" and "DO YOU HAVE KEYS TO THIS ROOM?!?!? I CAN'T GET INNNN!" Like OMG shut up.

I let her in, she RUNS AWAY. :rotfl: After a few minutes, she comes back and is panicking about do I have a piece of paper because she is allergic to markers. I give her the paper then realize the principal is making yet another announcement. This time, it's about the bathroom on the 4th floor, about how "It's nothing serious even if you smell smoke." :scared: A few minutes later, there's an announcement that "The bathroom has now re-opened after the fire." The WHAT?!? :scared1: In between all this, some lady keeps coming in to drop off the school pictures that came in, then she wants to know "how many kids DON'T have pictures." All I can think is Please. Just. Leave. Me. Alone. :headache:

By that point, it was only about 10:00. :scared: THANK GOD the day got better from that point on or I would sooo not be going in tomorrow!

Ooops...that got a bit long. Sorry! :scared:

Holy Moses, Chicklet! That's quite a morning! I seriously think you need to move to my town where the worst thing that could happen to you would be too many moms coming in to do reading help with the kids. Seriously, you need a job that lets you catch your breath!

Good morning ladies!

WFD - Chicken marsala, pasta and a spinach salad.

Have a great day everyone!:goodvibes

Trying to get ready for dr....all is ok...leftovers tonight ...bball game...sheryl, prayers for angelina and hope all went well last nite. Maria hope you feel better. Sorry, typing w 1 hand...xo

Bethany- The ART teacher is allergic to markers!?! You do teach in an elementary school right? I would think part of the job requirement for an art teacher would be the ability to use markers. Just so you know, I went to school in New York state (orange county), all schools are not like yours. Though you certainly will be well prepared for anything after your experience there.

Sherly- Sorry about your daughter, I know it doesn't help but it's nice they tried to create a position for her.

Balsamic chicken, veg, and starch for dinner.
