Anyway, dinner last night was terrific! I'll post the recipe if anyone wants it. The only one who didn't like it was Jacob, and he doesn't like anything with tomatoes.
Zesty Turkey Tomato Soup (double this for more than 3 people)
1/4 pound ground turkey
1 small zucchini, diced
1 small onion, hopped
1 can (14.5 oz) chicken broth
1 C. Mexican diced tomatoes
1/3 C. uncooked whole wheat pasta
1/2 tsp. minced fresh basil
1/4 tsp. ground umin
1/8 tsp. pepper
1 Tbsp chopped jalapeno, optional
Shredded cheddar cheese
In a large saucepot, cook the turkey, zucchini and onion over medium heat until meat is no longer pink; drain. Stir in the broth, tomatoes, pasta, basil, cumin, pepper and jalapeno if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 13-15 minutes or until the pasta is tender. Garnish with cheese.
I loved this! There's plenty for my lunch today! I served these with whole wheat crescent rolls (that I made from scratch. Go ahead, pat my back!!!) and it was a great meal!!!
Dinner tonight will be broiled Greek fish fillets (if I can get to the store)
Keep your fingers crossed that Leslie wakes up with no fever! She went to bed without one, so if she wakes up without one, she can go to school. Of course, I'll have to go over there once to give her another dose of cough medicine, but that's ok!
