The What's For Dinner Thread - Feb '09(recipe index in OP)

I'm so glad that the boards are up and running! I went to bed almost holding my breath!

Anyway, dinner last night was terrific! I'll post the recipe if anyone wants it. The only one who didn't like it was Jacob, and he doesn't like anything with tomatoes.

Zesty Turkey Tomato Soup (double this for more than 3 people)

1/4 pound ground turkey
1 small zucchini, diced
1 small onion, hopped
1 can (14.5 oz) chicken broth
1 C. Mexican diced tomatoes
1/3 C. uncooked whole wheat pasta
1/2 tsp. minced fresh basil
1/4 tsp. ground umin
1/8 tsp. pepper
1 Tbsp chopped jalapeno, optional
Shredded cheddar cheese

In a large saucepot, cook the turkey, zucchini and onion over medium heat until meat is no longer pink; drain. Stir in the broth, tomatoes, pasta, basil, cumin, pepper and jalapeno if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 13-15 minutes or until the pasta is tender. Garnish with cheese.

I loved this! There's plenty for my lunch today! I served these with whole wheat crescent rolls (that I made from scratch. Go ahead, pat my back!!!) and it was a great meal!!!

Dinner tonight will be broiled Greek fish fillets (if I can get to the store)

Keep your fingers crossed that Leslie wakes up with no fever! She went to bed without one, so if she wakes up without one, she can go to school. Of course, I'll have to go over there once to give her another dose of cough medicine, but that's ok!
 
Holy Moses, Chicklet! That's quite a morning! I seriously think you need to move to my town where the worst thing that could happen to you would be too many moms coming in to do reading help with the kids. Seriously, you need a job that lets you catch your breath!

I agree with you. Bethany....come here! No fires, no drama no police in teh schools....we do have winter though.....but we get snow days :thumbsup2

Ladies, I'm requesting more prayers for DD.
She is also having surgery on Friday, so things are just really rough for her right now.

Also can y'all say some little prayers & send some good vibes for Bob this evening. It looks like we will have an aide come out tonight. I am really nervous about it, so I can't imagine how difficult this is going to be for him. The lady came out Saturday & we really liked her. The agency actually called him today to confirm, so I'm hoping it works this time!:

I am seriously annoyed for Angelina :mad: I also agree with Janice, that "friend" will get what she has coming to her and so will the office that employed her. That was not nice and I firmly believe that when these things happen it is the best thing , although that is not easy to believe when you counted on the job

Prayers for her on Friday as well.

Got an appt. for the ENT Wed. afternoon.......Tomorrow spending the day with DM, some mother- daughter bonding in the beautiful weather, please cont. prayers for DM while work is still going through changes.

Last night DM had a family that the Mom suffocated the Dad in front of the 14 year old daughter.......she was with the family for many hours. I just can't imagine what's going to happen to that child.
:sad1::sad1: I was coming on to thank you for teh "magic" but...

My heart breaks for that poor girl, I hope that your Mom was able to help her.

Dinner will be either stuffed peppers or Glynis' curry chicken. I am not sure yet. I also need to make soup, Kady has been complaining that there is none for her. Now I will make it and she will not touch it and I will be eating soup for days :upsidedow
 
Class tonight, hopefully I can get home and make dinner before I have to go. I remembered to take the fish out of the freezer last night! :woohoo:

I think that is what I am making too! The Pioneer Woman website featured this for dinner yesterday and it looked so tasty. I had thought about making it yesterday but I did not have enough energy.

I have a wicked cold and it is driving me crazy! Dinner last night ended up being stuffed shells, salad, and garlic bread.

Bethany, what a crazy day! You must be looking forward to the end of the school year.
 

Well, Leslie felt well enough to go to school today. Her cough is still icky, but she can deal with it. Mary, however, decided she needed to stay home. I think she wanted some alone time with Mommy since Leslie got some yesterday. At this age, I think it's ok to miss a day of school. She will have to go with me to run errands that I couldn't do yesterday. Since she doesn't have a fever, I don't feel badly about it.

Bethany -- You must have a lot of patience to deal with everything you face every day.

My schedule is off today because one of my neighbors invited me over for a chat and we chatted for three hours. I still have to figure out an Abraham Lincoln costume for Liam and get to the store to get something for dinner. I am in the mood for fish.

Good Afternoon Ladies! Sorry I've been MIA, but I have been experiencing techincal difficulties. Our internet service was out at the office yesterday, so I had to actually work. :confused3

But the big issue is that I probably won't have access to a computer from Friday afternoons until Monday mornings. The guy who is working on my kitchen floor only works weekends, so it is going to take a while and I have to get Hailey out of the house while he is working. So, I will be spending the weekends at my parent's house. And since they just got an answering machine 2 years ago, you can all probably guess that they don't have a computer. ;)

Lauren - Cute, precious pictures of your littlest guy!

Kathy - I'll be praying that sale goes through. I know you are certainly ready for it.

Sheryl - I'm so sorry about Angelina's job situation. Some friend. :sad2:

Robin - Thanks for sharing the creamed spinach recipe. I'll print it and make it for Father's Day lunch this year. My Dad loves creamed spinach.

Nancy - Tell Marisa I'm proud of her. If she can watch you all eat lasagna while she eats WW, she has done something impressive. :cheer2:


Tonight's dinner is taco salad for me, tacos for the children, and leftovers for Kenny who hates mexican.

Thanks for all of the prayers & good wishes for Angelina & Bob! :grouphug: This job really wasn't her "dream" job, but not getting it was hard for her.

Janice, I told Angelina exactly the same thing!

Nancy, I suggested that Angelina immediately DE-friend her on FB. ;)

The aide did show up last night which was actually a surprise with the way that's been going. Bob was about as comfortable as could be expected. I just hopes she sticks with us. We'll see.

Becky, Sorry that you're sick, hope you feel better soon!

Maria, I'm praying for your Mom & that poor girl. How sad.

Glynis, Glad to hear that Leslie is improving! I hope Mary isn't getting sick & just needs some Mom time!

Dinner will be probably be more chicken.:sad1: I bought a huge pack of chicken breasts on Saturday, only to come home to find I was out of ziploc bags.:sad2:
 
Drive by - crazy day!!

I have a girl's night event tonight so I will be eating there. Dh is eating leftovers - we have tons!!

If you have a chance, say a quick prayer for Ace the Foster Dog. I am taking him to spend the evening with a family that is interested in him. Well, dad and the kids are interested and mom is not sold on him yet. I've been coaching him to mind his manners and be painfully sweet. The big key is if he and their elderly dog get along okay. Dad doesn't expect elderly dog to be around much longer and thinks the kids will handle it better if another dog is already in the house. Doesn't make the pain go away but may help a little to have another furry friend to cry on. If this home doesn't work, I'm going to have to really start hitting the adoption circles to find him a home.

She is so NOT sick! She definitely wanted a day at home, just like Leslie. We talked about it, and she knows that she can't do this again. We talked about the boy who cried wolf. I told her that if she feels like she's not getting enough attention, to let me know and we can fix the problem, without her faking being sick.
 
Aimee - I'll keep my fingers crossed for Ace! It sounds like this would be an ideal situation for him (and for you!)

Thanks, but I did not make this one. I just went to the party store, bought a hat and I'm giving him an old black jacket to wear. I was not a. making a black suit or b. buying a black suit, so this will have to do. It looks a bit ridiculous because the hat is too big and makes Liam's ears stick straight out, and the jacket is mine, so it doesn't fit right. Oh well. I am so done with this project and it isn't finished. How come so many school projects become more my problem than my kids' problem?

Sheryl -- That is good that the aide showed up and the visit went as well as it could.

We did have fish tonight. I made striped bass with a pineapple salsa, mashed sweet potatoes and sugar snap peas. The kids had salmon, sugar snap peas and Caili had a baked potato. Liam hates potatoes unless they are fried. He did eat some of the striped bass.
 
Kathy I was going to use either my regular cupcake recipe or something else. I must be tired I don't see oil in the recipe alot of butter but no oil.:confused3
