The What's For Dinner Thread - Feb '09(recipe index in OP)

Thanks guys!

Kat, Best wishes and prayers that the sale goes through.

Becky, Very interesting about scallops. I have only made them once and they were dry, I guess.

Baby is crying...gotta go!

Well, I think the flu bug has hit us! .

Oh No! I hope Monday finds you all much better!

We got snow last night and it is still snowing. Alex and some friends are going sledding. This seems so wrong for almost April. I always thought the saying was April showers (as in rain) brings May flowers:confused3

Snow and April should not be in the same sentence! Years ago, when the kids were little, Buddy and I were planning a trip to Disney. I had never been and we were going the Friday after Easter, April 16. We had a blizzard the week before, school was closed for almost a week and then the week after Easter for vacation. It was a mess! Came back 10 days later to 80 degree weather. New England!

Calling the ENT tomorrow, enough said.

Becky got your scallop problem solved. I know that I tens to only buy fish from the fish market in the next town or Costco. I have never had a problem there. I was at Sam's and their fish looked gross!

I'm asking for prayers that this happens. .

Prayers said!
signed, Becky the PITA customer at the fish counter. :rolleyes1

With the cost of seafood you have to be picky. I don;t cook fish often, i generally wait until we can grill, but I know my dinner cost is way higher. Buddy still thinks that fish is an inexpensive meal but he has not visited the fish market. He would :faint::faint:, clutching his heart all the way down.

Since my DM is working tonight I am going to pull everything out of the freezer and cabinets, catalog all of it, then make a menu for this week.

You go girl! I would be curled up on the couch with a cup of tea and a book

:lmao:

You sound like my DH. He asked me today if I had inventoried everything in the house. Uh, no? :confused3

:lmao:
Hey Aunties!

Here are some pics of the baby from today

Do I remember you asking if he was eating enough????? :rotfl2:

You have two handsome guys there, Lauren! Your little one is getting so big and Andrew sure looks like he enjoys being a big brother. You are truly blessed.

Dinner was so good! Jeannie brought over two big lasagnas and I made a salad. Erica made cheesy garlic flatbreads for an appetizer served with sliced bagguettes and olive oil and balsamic vinegar.

Dessert was a lemoncello gelato merangue coverel puff from Costco. It was excellent.

Yeah now I'm scared I jinxed myself by saying I have no inventory of the stuff. :headache: Guess I'm a weebit superstitious like that. :confused3

I'm asking for prayers that this happens. We got an offer on M&D's house yesterday and my agent called and told me they accepted our counteroffer. This buyer is a much stronger buyer than the ones we've had before that fell through. She's putting down 20%! I'm just praying that this goes through this time, I'll believe it when the check is in my hand.

I'm crossing everything I can for you!!!

Hey Aunties!

Just what I needed to brighten my day! Thanks, Lauren! Both you sons are adorable! You are one lucky woman!!!

They were not "dry" scallops. That's what you need to ask for. Not "fresh" but "dry."

Wow, you learn something new everyday! Thanks for the scallop lesson!

*squeal* He's so beautiful!!!

It's official - we both like corned beef  I was making it and it looks dis.gust.ing. DH came in from his trip and I told him if it was gross, we were going out. Tasted it and we both liked it :thumbsup2

No good movies on tonight?

Not really! ;)

So sweet! Although in that last one he looks like he's saying "don't squeeze so hard I can't breathe"! :rotfl:

You go girl! I would be curled up on the couch with a cup of tea and a book

I did that yesterday! :thumbsup2

I decided to inventory after I realized I had 2 and a half bags of peas!:rotfl: Now down to two! Didn't get to the cabinets tonight but I have a basic idea of what's in there.

I am doing a menu so I can get back to doing WW, the pounds have been creeping up in the last couple weeks. :scared:

Hi, everyone. Here's an update:

Talked to both of Scott's parents yesterday. Jan is doing ok with the chemo so far, only a little nausea, which is good. Kevin and Amand drove up there yesterday to visit. Amanda took her hair clippers and did a 1 guard of Jan's hair (which is already very short). She didn't want her hair falling out in clumps, so she took care of that for her. I was glad they went. Neither one of them had seen her since she got sick. I have no idea why Amanda never went and visited her at the hospital when she was 10 minutes away, but I digress. Just a vent for another day.

They both seem to be in good spirits. We probably won't go next weekend. They JUST started this intensive chemo and I have a bad feeling that she is going to get really sick soon. I know that they've even put people in isolation up there at some point. We don't want to be in the way. As it is, we are calling and e-mailing, and I've stocked up on funny cards to send.

Dewitt mentioned us bring up some Cokes and such when we come (Kevin may have brought some, too). They have a fridge in her room. He also tossed out, "Bring us a brownie, or something." I am throwing around ideas of things to take up there. Do you guys have any ideas? I want to be as helpful as possible!

Good Morning!

I am taking a quick trip to my Mom's after school...she has not seen Thomas yet since she will no longer leave the house. So, I am putting a Glynis pot roast in the crockpot along with potatoes and carrots. I will also make red cabbabe...I love that with the roast!

Tom is going back to work today so I need to try and figure out a schedule...will that ever happen???

Lindsay, Not sure if your MIL's diet should be the same as my brother but he was told to avoid processed sugar and stick to natural sugars (fruits and veggies) and high protein. You may want to do some research as to what foods will be good for Jan now.

Glynis, Hope everyone is feeling better.

Marilyn, I agree the baby was like WTH in the pic...they were both sick of getting pics taken. I need to clean out the fridge and panty too. I love peas with pasta and ate alot of that when I was on WW...

Aimee, glad your corned beef turned out well. It does look kind of funky as it cooks.

I probably missed alot...sorry! I hope everyone is doing well.

Have a great day!

Morning all. Very busy weekend, sorry I wasn't around. WFD tonight is Lemon Fusili with arugula, saw it on Barefoot Contessa last week and it looks yummy!

Kathy--PD that the sale goes through!

Lauren--what a cutie! Thanks for sharing

Lindsay--thanks for the update, continued prayers

Morning everyone, hope you all had a great weekend.

Lauren- loved the pictures, thanks for sharing with us. I think I'm the only one who has never had Glynis' pot roast, I really need to give it a try.

Lindsay- Is your FIL staying there also, if so he might want some real food too. I kept a bunch of muffins so I didn't have to waste time at home. I also brought my toothbrush and real, not hospital toothpaste. I found most visitors, while it was appreciated, mostly brought sweets- cookies, brownies, candies, and we were really starting to crave savory foods. I don't know what your mother in law can eat, but maybe cheese and crackers for your father in law.

Aimee- Glad you liked the corned beef. I wanted to get another one to try to make corned beef hash, it's up to $4 on a pound. I refuse to pay that on principal, since it's leftovers no bought. I saw your easter request. I made a really good boursin creamed spinach for my husband's birthday, you made it the day before and cooked it the next day. I look for the recipe, it was real easy. I think the difference between a gratin and scalloped potatoes is cheese and no cheese. I'm all for using cheese any chance I get.

Becky- IQF sea scallops are $12 a pound here, day boat scallops must be a fortune, I don't think there's anything wrong with smelling them. It's not just the cost, it only takes one time of not smelling them and realizing just as your about to make dinner your fish is bad.

Speaking of seafood, I keep hearing lobster is really cheap so I thought I'd get couple for dinner last week. Well they aren't cheap here, it makes no sense to me. Oh well, I'll just wait until my local lobsterman sets out his traps this summer, it's my dad. (recreational, he's not very successfull)

Kathy- hope all goes well and you don't have to wait to long to find out.

Tonight we are having turkey pot pie. I roasted a turkey breast and was determined to get enough meat to make a pot pie. I think it might be more of a veggie pot pie, there wasn't as much meat left as I thought.

I'll stop hogging all the space now, have a great day everyone.

I've made that dish, it is very good.

Lauren, I love the photos. He is getting so big!

Kathy, good luck with the house! I hope it goes through this time.

Glynis I hope you and your family are feeling better.

I am either making asian noodle bowl or chicken marsala tonight.

Kathy -- Good luck with the house!

Lauren -- SO sweet!! Thanks for sharing.

Tonight is our late night, so I think I am having a meatball sub with the leftover meatballs from the other night.

Does Jan have a hobby? Maybe you could bring her some magazines to help take her mind off things. Quiz Dewitt on what sounds good to her. Her tastes will probably change as she goes through this. Anything she mentions, even in passing, might just hit the spot at some time. Can you get her a comfy bed robe? I know when my mom had her heart surgery, she really loved the bed robe her sister got her. It was cozy, warm and made her feel good. Books on tape/cd? Movies to watch? Those are my suggestions.

Good Monday morning! We are back in winter here! Woke up to 4 inches of new snow! I'm hoping the sun will break through the clouds and melt it all before the kids get home from school.

Leslie is still sick. She's running a fever off and on, and has a horrible cough! So, she's on the couch watching all her Barbie movies that no one will watch with her.

So far, everyone else seems to be ok. Timothy still has the sniffles, but they are no worse than they were last week, so I'm ok with that!

Dinner tonight will be zesty turkey tomato soup. Sounded warm and comforting as I read the recipe. We'll see. I'm also going to make some biscuits to go with it.

Dinner will be gnocchi, I forgot to leave the fish out of the freezer last night. :sad2: I'll have it with a cream sauce and have some green beans, no peas! :rotfl:

Tonight will be if the grouper I didn't make last night.
Last night we had turkey, cheddar & bacon sandwiches......

Here is a little Monday magic:
