The What's For Dinner Thread - Feb '09(recipe index in OP)

Well, I think the flu bug has hit us! Leslie is down with a fever, upset tummy, and hacking cough. Timothy has a nasty cough, as well, and Jacob has a fever. Since I play the music for church, Alan will stay home with the sickies, and I'll take Katie and Mary and the 3 of us will go to church, this morning.

Other than that, all is well. Although, I hear we're supposed to get another snowstorm this afternoon. Hopefully, it won't start until we're home from church and snuggled in together.

Dinner tonight will be slow cooker lemonade chicken with brown rice, a jello salad, and some kind of veggie. I'm leaving that up to Alan. For dessert I had planned on making a caramel apple-pear crisp, but we'll see how many sickies I have by that time. No sense making it if there's only 3 of us that will eat it.

I have been praying for Wendie & I was thinking dropping her a card will be a good reminder of how much we're here for her. Any opinions if you think that's okay welcomed.

Last night I had a dinner disaster.......
I bought "fresh scallops" just wanted to blacken them as usual. Patted them dry with paper towels, used my regular spices &herb mix & some olive oil in the cast iron skillet. In about 2 minutes the skillet was filled with liquid!!! Foamy, milky, cauldron of freaky liquid!
Where did this liquid come from? So I took them out & tried to get a little color on them on my cast iron skillet....bottom line disgusting! What happened girls?

Dinner tonight is grouper something....not sure.

Calling the ENT tomorrow, enough said.

Not sure about dinner yet, have errands to run so it will depend a lot on how long it takes. I may make the Pad Tai kit I was going to make earlier this week and add some peas and mushrooms to it.

I don't buy the big ones but I do know they had liquid into the little ones so that may but what happened.

This happens with scallops sometimes. I just keep cooking them until the liquid evaporates, and then I can sear them. I think it is easier to get a good crust on them on the grill or in a grill pan.

I am sure Wendie would appreciate your card. That is a thoughtful idea.

Dinner today was really good. It is such a dreary day here that our menu of roast chicken, mashed potatoes, mashed turnips, zucchini and butternut squash was comforting.
 
The snow threw me completely off I forgot to mention WFD.

Baked savoy chicken potatoes and green beans. Pound cake with fruit for dessert.:thumbsup2

The snow is already melting. The kids went sledding. Guess which kid landed in the mud! Yup Alex :laughing: He was none to happy. What did he expect it rained yesterday.:confused3
 
I'm asking for prayers that this happens. We got an offer on M&D's house yesterday and my agent called and told me they accepted our counteroffer. This buyer is a much stronger buyer than the ones we've had before that fell through. She's putting down 20%! I'm just praying that this goes through this time, I'll believe it when the check is in my hand.

They were not "dry" scallops. That's what you need to ask for. Not "fresh" but "dry." Dry is a term for scallops that have not been soaked in phosphates, which is a preservative. As you know, scallops are extremely perishable, so the options are 1. sell immediately 2. freeze or 3. soak in phosphates. Soaked scallops, sometimes called "wet" scallops, can give off as much as 30% of their weight in water. It's impossible to sear them.

One way you can tell if your fish market is selling "soaked" scallops--look at them. If they are uniformly white, it is likely that they are soaked. Dry scallops will range in color from white to cream to pink and even light orange. Also, you can ask to see the tag--markets are required by federal law to retain the tags that come with the fish/shellfish they sell, which shows country of origin, farm raised/wild caught, additives, soaked or no.

Another thing--I think soaked scallops smell funny--chemically. I did not use to do this, but now I always smell fish before I buy it. After they wrap it up, I open it and check for freshness. One guy at my local fish counter knows me enough that he lets me smell the fish before he wraps it, because I have handed back fish on four occasions in the past few months.

You sound like my DH. He asked me today if I had inventoried everything in the house. Uh, no? :confused3

There was a commercial on tv for something about having an inventory of everything in your house and keeping it in a separate location in case something happens to your home. But that does not mean I have done it...yet, I guess. I told him to do it. :rolleyes1
