The What's For Dinner Thread - Feb '09(recipe index in OP)

Tonights dinner,

I butterflied the little roast you get when you trim a filet, seared it on both sides, put some blue cheese on it, rolled it and tied and baked it till done.

Fire Roasted Artichokes -- Boil the artichokes until almost done, remove and cool, cut in half and scrape out the fur. lightly cover with your favorite vinigrette. Let sit for 15 minutes to a few hours in fridge as needed. Put on your BBQ leaf side down at very hot temps (about 400) and let them get nice grill marks then flip and grill mark other side. Can be served with mayo if desired but not really needed.

This recipe was really good!

Tangerine BBQ Chicken and Curry Couscous

3 tablespoons EVOO
4 blsl chicken breast halves
salt and pepper
1 red onion, finely chopped (I omitted)
2 cups chicken broth
grated peel and juice of 2 tangerines
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1-3 teaspoons hot pepper sauce, to taste
3 carrots, shredded
2 scallions, finely chopped
1 tablespoon turmeric
1.5 cup couscous
1 tablespoon curry powder
1/4 cup sliced almonds, toasted

1. In lrg skillet, heat 1 tablespoon EVOO over med-high heat. Season chicken with s&p, add to skillet and cook, turning once, about 12 minutes. Transfer to plate and keep warm. Add 1 tablespoon EVOO to skillet and heat to med heat. Add onion and cook until soft, about 3-4 minutes. Add 1/2 cup chicken broth, tangerine peel and juice, Worcestershire sauce, brown sugar, and hot sauce. Lower heat and simmer under reduced slightly, about 2 minutes. Return chicken to sauce and turn to coat.

2. In lrg saucepan, heat 1 tablespoon EVOO over med heat. Add carrots and scallions, season with s&p and cook for 2 min. Stir in the remaining 1.5 cup chicken broth, curry and tumeric, and bring to a boil. Stir in the couscous, turn off heat, cover pan tightly and let stand 5 minutes. Fluff couscous with fork and stir in almonds. Serve with chicken.
 
I had the strangest dream last night Alex and I were in epcot and ran into Gretchen and her family and met up with all the rest of you near Canada. Needless to say I am tired after running around with all of you and feel strangely hungover. :rotfl2: How do all you feel this morning?

:rotfl: No wonder I was so tired this morning. :laughing: At least you didn't dream you were at work like I did last night. I guess I've been working too much because it seems Hailey was just after some attention. She had to sit on me or by me all day today and woke us up this morning by crawling in bed with us at sunrise.


This is too weird, I came here to post a WDW dream I had last night - Nancy & Buddy bought the AKL and invited us all there to bid on shares of it, strange, I know.......:rolleyes1

Today, I went and played around at Babies R Us. So much fun, what cute things for little girls. I can't wait to put bows and frilly dresses on her!!!
Dinner was takeout pizza.


Ahhh, you've found the drawback to having a baby girl. ;) So many cute things, so little $$$$$. And this is me speaking from experience, I promise.

I didn't cook tonight, this was our second attempt at a valentine's dinner out. This time worked great. The babysitter remembered and we were able to get reservations at a better restaurant. We went to Oak Steakhouse in down town Charleston and it was wonderful. We each had the filet (mine with a veal demi glace and Kenny's with the basalmic bbq sauce) and on the side we split the shrimp and lobster macaroni and cheese. It was fabulous. If it weren't so pricey we'd go more often.

*** I'm getting better girls...forced myself out today with Mom & tomorrow night I have invited a friend over for a little Oscars fun. I went to the party store for some decorations & I'll put together some snacks & have a bottle of champagne.

My Mom taught me a few things that I have been reflecting on tonight...God never gives you more than you can handle & when times are the toughest the cream rises to the top.......Thank you for rising to the top.

I hope to have the chance to be there for all of you when you need me & please know that I never lost sight of you... all remained in my prayers regardless of what has been happening here.

Maria Sometimes it feels like your going through the motions,That is life sometimes. Sometimes it throws you a bunch of lemons. It is up to you to discover what to make out of the lemons, lemonade or even lemon chicken;)

Gretchen maybe we scared Hailey with all our carring on in my dream. Glad you finally got your Valentine dinner.

I am not feeling great today. I have a horrible headache and just feel lousy. I am going to rest today and get a few things done. Dinner will be whatever. Last night I had cereal, soup, chocolate and ice cream...I guess the meds work since my sugar was fine.

Maria - Glad to see you. I don't exactly know what's been happening to you and I don't want you to have to go through it again with me, especially if it is upsetting, but I'm glad to see you starting on the upswing.

Lauren - I don't mean to upset you, but given everything else about your condition you've told us, that sounds like your blood pressure is elevated. Trying lying on your left side and do as little as possible. If you have a way for Tom to check your BP with not much fuss, do it. Otherwise, try lying still and quiet (on your left side) and if you don't feel better, you may want to hit a pharmacy to get your BP checked.

I know I sound nuts, but I had that problem with Hailey and my BP went sky high just before they induced me. I won't bore (or scare you) with the details, but it eventually hit a point so high they did an emergency section. It was very scary for me and for my family and I don't want to see you go through that. Please take it easy today and watch that BP.
 
I am back in NYC. That means no alligator for dinner tonight. :lmao:

I have to go back to work tomorrow. BLAH! We had a good trip though. :goodvibes
 
Just a quick checkin to report what I am making us for dinner.
Lamb chops, rice pilaf, and califlower au gratin.

It is rainy and miserable here, but better than the snow they forecasted!!

I am feeling well, as I hope all of you are too!

WFD ~ I made a cheese & fruit platter & an Italian antipasto for munchies.

Dinner is boneless pork chops in cream & mushrooms & wax beans.
Red velvet cupcakes for dessert & champagne is chilling.
 
Yesterday turned into a great day! The kids worked their hind ends off, so as a reward, we took them to see "Bolt." What a darling movie! We all really enjoyed it. After that, we dropped the kids off at home, and went out with BIL and his wife. We went to see the movie "Australia", (Hugh Jackman:lovestruc I could eat him up with a spoon!!!), and then to Olive Garden for dinner.

Today, DH woke up feeling icky. He's spent the afternoon throwing up, and I'm desperately hoping it was something in the food he ate last night, and not some stomach bug that's going to run rampant through the kids. Yikes!!!

Dinner tonight is a new recipe from the crock pot blog (I love that thing for Sunday!). It is Beef in Pomegranate sauce. I'll report back if it's good or not!

Tonight is family fun movie night. We haven't seen many of the Oscar movies, so instead, we're going to watch the Incredibles. I'm making caramel pineapple sundaes to have while we watch.

Lauren - Please take it easy! If you feel the least bit worried, go to the ER! We need you and Bean to be well, please!

Maria - I'm glad you are back and feeling a little better. Please know that you have been there for all of us, and we are hoping you'll let us be there for you! Take care of yourself!

Bethany - Sorry your vacation had to come to an end. Unfortunately, they always do.

I am glad that is all she needed. Your Valentine's dinner sounded wonderful.

The kids broke out into a giant fight while I was trying to catch up (have I mentioned how happy I am that February vacation is over? Whoever dreamed up the idea of having a vacation in the middle of February definitely was not a parent living in a Northern state!), and now I've lost everything. I will be better tomorrow.

Caili did a great job at her skating competition yesterday. She placed second in her individual program and her team placed first, which was really exciting. The only negative was that she was fourth (out of four) in her Wishes program, but that is a completely subjective event and yesterday, they liked the girl who dressed up as a dog and ended her program pretending to pee on a fire hydrant (yes, I am serious) better than Caili's spotlight. Caili was a bit upset, but she was happier once she saw the fourth place medal, which had a very bright and pretty yellow ribbon.

We spent the weekend (after the rink) with Becky and my parents. Dinner yesterday was the always delicious linguine with clams, and today we had maple-glazed cornish hens, roasted acorn squash, potato casserole (mashed potatoes, bacon, cheese, sour cream...all baked until puffed and hot :lovestruc ), green beans with almonds, and my mom made a wild rice dish. I think she was a little upset about the potato casserole.

Just wanted to check in. I still have this headache (sinuses) and my BP was a little high but not high enough to call the doctor (I have been checking it twice a day). I have just had a rough couple days with news of my brother, these stupid headaches and a few other things...but not to worry, I don't feel bad enough to go to the ER.

Maria, I did get your call earlier...thank you - sorry I missed it. I will try to call you back tomorrow if that is OK.

I think I'd rather lose to a book than a girl pretending to pee, that's crazy.:sad2:
