We are having roast chicken tonight. Sides will be roast potatoes, broccoli rabe, gravy, and probably one more thing, but I can't remember what else is in the fridge.

Caili has a skating competition tomorrow, and after that we are heading to Becky's for the weekend. Have a good couple of days!
 
No cooking here this weekend. FINALLY, Johnny is going to do some more work in the kitchen - backsplash, painting and trim work. Trying to get this man to do work on our house is like pulling teeth, then when baseball starts that's the new excuse. We're in a Mardi Gras break from baseball so he agreed to work on the kitchen this weekend. Sorry for the rant, I also have a :headache: today.

My short rib recipes are at home, but I will put them up this weekend. With short ribs, I always cook them a couple of days before serving them. Then I just stick the pot in the fridge overnight, and when I am ready to serve, you can take all the fat off the top of the pot. Then I pop them back in the oven for a while longer.

I am making gruyere-cider fondue tonight.

Becky, That's a great tip on the short ribs!:thumbsup2 Your pasta looks yummy! and OMG gruyere fondue! Oh does that sounds good! Something else I should go online shopping for a fondue pot! ;)

Rant away m friend! The only time Buddy starts a project is when it is totally inconvenient for me. I will never forgive myself for letting it slip that I work well under pressure :headache:

I don't know what is for dinner tonight, not really in the mood for any one thing. Going to go to my sisters tomorrow and staying until Sunday, got to go see my baby's and get my Girl Scout cookies.

I've really been in a funk since finding out about the surgery. ( shhhh but cooking also keeps DH from wondering what I've done all day. ) I have to call the dr's office again today, I have called twice this week with questions abot the surgery & they haven't returned my calls. :mad:

When you mentioned soup I remembered I ran across an interesting recipe that I may try next week - Lasagna soup, anyone ever tried it?????

I need some prayers for my brother...I found out today that he is extremely ill with stomach cancer. He can really use some prayers and good thoughts. He is my oldest brother and Godfather, has a young daughter and is truly a very down to earth, nice guy.

I am so upset by this...and trying not to be so my BP does not go up.

It's a good thing my guy has a sense of humor, if he did not I would not have near as much fun teasing him.

What is the holdup on the return call? That is a pet peeve of mine, if I call a DR I want a call back fast!

I recently saw a recipe for lasagna soup in a magazine and I thought it sounded great. I can't remember which magazine but I am trying to find the recipe.
 
The only thing I have felt like doing lately is cook & online shop:scared: . I've really been in a funk since finding out about the surgery.
:hug: I know how you feel. I've been in a winter funk, myself, and I don't have nearly your excuse. I have, however, managed to avoid the online shopping. Last year's winter funk garnered me an ice cream maker, a fondue pot and a bunch of clothes I never wear.

Hi everyone, I tried catching up this evening, but Hailey is not really having it. I don't know if she just doesn't feel well or exactly what the problem is, but she has been doing that whiny, pitiful cry every 10 minutes or so, which means I don't really have time to read everything.

However, I didn't want to sign off without letting Lauren know I am praying for your brother and for you too. Take it easy, I had preeclampsia with Hailey and it can be serious for you and bean. Please take care of yourself. :hug:

lasagna soup I know I too saw a recipe somewhere too. I will have to go on the hunt.

My cat has finally earned her keep she killed not one but two mice while I was at work. :cheer2:. And the little darling didn't leave them on my chair. She usually leaves me hairballs on my recliner of which Alex just thinks is sooo funny, not. :eek:

We are supposed to get dumped on with about 6 inches of snow tonight. I want to go to the Doorway to Dreams thing tomorrow morning. I NEED a rice krispie treat.:worship: I hope the weather people are wrong.

I think I am having gnocchi and a salad tonight.
 
Laura - great pics, have you posted the spinach gratin recipe yet? I've been cooking lots of spinach lately and I thought your gratin looked great!

Gretchen - I'll say some prayers that Hailey isn't getting sick, poor princess and poor Mom.:hug:

I'm definitely going to make the lasagna soup next week, it just sounds too good to pass up!

Here is the Lasagna Soup recipe I saw in Family Fun Magazine. Is it similar to the recipe you found?

The description of the soup says: "The tomato-y broth, brimming with sausage and pasta, melts the mix of cheeses placed in each bowl before serving. A quick swirl of the spoon ensures diners will get a bit of gooey cheese in every bite."

RECIPE INGREDIENTS:
2 teaspoons olive oil
1 1/2 pounds Italian sausage (bulk or with casings removed)
2 onions, finely chopped
4 garlic cloves, minced
2 teaspoons oregano
1/2 teaspoon red pepper flakes
2 tablespoons tomato paste
1 (28-ounce) can diced tomatoes
6 cups chicken broth
2 bay leaves
8 ounces fusilli pasta
1/2 cup finely chopped fresh basil
8 ounces ricotta
1/2 cup grated Parmesan
1/4 teaspoon salt
Pinch of pepper
2 cups shredded mozzarella

1. In a large pot, heat the oil over medium heat. Add the sausage and sauté, breaking it up into small pieces with a wooden spoon, until the sausage is no longer pink, about 5 to 7 minutes. Drain any excess fat from the pot. Add the onions and sauté until softened, about 6 minutes. Add the garlic, oregano, and red pepper flakes and sauté for 1 minute. Add the tomato paste and sauté until the paste turns a rusty brown, about 5 minutes. Add the tomatoes with their juice, the broth, and the bay leaves and bring the soup to a boil. Reduce the heat and simmer for about 30 minutes.

2. Add the pasta, then increase the heat to medium-high and boil the soup until the pasta is tender to the bite, following the time recommendations on the pasta package. Discard the bay leaves, then stir in the basil. If desired, season with salt and black pepper to taste.

3. In a small bowl, combine the ricotta, the Parmesan, the 1/4 teaspoon of salt, and the pinch of pepper. To serve, place about 1 1/2 tablespoons of the ricotta mixture in each bowl, sprinkle with some of the mozzarella, and ladle the soup on top. Makes about 13 cups.
