The What's For Dinner Thread - Feb '09(recipe index in OP)

Anyone ever fix Salmon with lentils? I'm thinking about trying that tonight. Last time I was looking for something to do with lentils, salmon kept popping up! Is that a great combo that I didn't know about. Ina Garten has a recipe I could try.

I think I had this combo at Jinko's.....wonder if it's on their menu.

My dates are on the other thread for F&W Oct. 15-21 at BCV....Greg doesn't want to go so it may be me for a few days alone, maybe DM for a few days.
Now I have to go look on the other thread & make sure I'm posted.

I was going to get up early & feel great & get things done....well, quiet house & I dragged myself out of bed at 12:45 just not 100%.

I am having a hard time wrapping my brain around this....maybe I need to tag along next year and experience it myself.;)

To much chocolate & alcohol? How does that happen? Can that happen? I didn't know it was possible!;)
 
Hello all. I'm glad to see Glynis survived the 10 kids, I'm sorry about your elbow though.

I think there is a chocolate tour, or was, in Boston, and it always looks interesting but no matter how much you like chocolate it must become to much. Next year you should bring some saltines for palete cleansers. I'm not a big chocolate fan, but it sounds like fun. I think I would prefer a pasta tour.

Laura- Ranger training must have been tough after a long vacation. So are you and the kids able to talk with him until the next class starts then?

Glynis- I love snow, but I have to say I've had enough for the year too.

We are actually having a beautiful day today, the sun is shining and it's above freezing. It's supposed to be in the 50's later in the week!! Yesterday we went to the beach, unfortunatly a whale died on a beach a few minutes drive from our house. I was suprised how comfortable it was, I had on my winter coat, but it wasn't freezing! A little spring teaser. Of course it wasn't until after we got home I realized up until yesterday the biggest dead animal the kiddo had ever seen was a mouse. But you don't get that many opportunities to get that close to a whale, still always really sad when it happens.

Today I did my monthly run to Trader Joe's, Bj's and went dryer shopping. We are having a rotisseree chicken from BJ's for dinner, some green beans and a still to be decided starch.

Cabbage Roll Casserole

1lb extra lean ground beef, cooked and drained
1 medium onion chopped
1 bag coleslaw mix 16 oz
1 can tomato soup
1/2 tsp pepper
3 Tbsp Worcestershire sauce
1 cup brown rice, cooked and drained
1 tsp salt

Brown ground beef with chopped onion, Worcestershire sauce, salt and pepper. Place half the chopped cabbage on the bottom of a 9x13 pan greased with Pam. Top with half the cooked beef mixture. Spread half the rice over the meat mixture. (You may add the rice directly to the meat mixture and spread over the cabbage) Repeat with a layer of cabbage and another layer of meat mixture. Mix the tomato soup with a can of water. Pour this over the casserole. Cover with foil and bake at 350 for 1 hour.

295 calories 9 Gr fat 5 G fiber 6 servings

this comes out to 6 points. You know I monkeyed around with the recipe.

This makes double that posted recipe
2 20 OZ packages ground turkey
2 big bags coleslaw mix
1 big can diced tomatoes
large container Chinese brown rice about 2 cups
tomato paste mixed with water

I added the tomatoes to the browned turkey and onions and worchester

layered the same way suggested

mixed some tomato paste with some water and poured it on top of casserole

I omitted the soup

It makes a large casserole so we have leftovers. This lowers the points but for us it is completely Core

Tonight's dinner is something new for me - maple glazed chicken thighs. I'm making it with rice pilaf and broccoli. We'll see if what the family thinks. Kenny wasn't wild about Friday's baked shrimp scampi, but he couldn't tell me what he didn't like about it. :rolleyes: Oh well, that one's off the rotation.

No objections from me, I love seeing other people's disney plans. I keep a running list of "Next time I go to Disney..." so I don't forget to do anything when I get there. You guys talking about it will maybe just add to my list. We are really hoping to stay at the new Contemperary building next time we go, I've never stayed at a monorail resort. Our second choice will be Wilderness lodge villas or beach club villas, not bad for second place. We aren't going until next february, can you tell I like to plan ahead?

Don't set up a new thread! I like to live vicariously through your planning. I would love to join y'all, but it's unlikely to happen. Since we're going to DL in June, DH will tell me I've had "enough Disney" for a couple of years.

Is there such a things as enough Disney?

Yup, plain brown rice. It is unhulled and a little chewy. I like it better than what I can buy in the grocery store, especially in recipes that are cooked again after adding it. It does not turn to mush.

Please don't go to another thread for you plans.....I also want to know all of the details. I doubt that I can join you but I still need to know what is happening.

Robin, A monorail resort rocks! Especially with kids or for people who have trouble getting around. We love the Poly, but the new Contemp. looks way cool too! I love BC, but Wilderness Lodge is also gorgeous! Oh I can help add to your list all right! But I'm surely no help figuring out which one to choose.

Glynis, I thought there was a possibility you could come! Unlike chocolate you can never get too much Disney! :laughing: Plus it would be Disney + your WFD girls & food/wine fest muching!!

Ditto to Nancy on the above! all the rest of you too!

Just got back from the Dr. with two prescriptions, one for a pretty bad sinus infection I didn't even know I had:confused3 and the other is a medication that will help with the dizziness should that happen again. I am so relieved.:) Thanks to everyone who was kind enough to ask about me today!:goodvibes

I said I was hoping you had a sinus infection! I'm surprised you did, but glad! Because that means it will get cleared up & you probably won't ever have it happen again! :cool1: Yeah! much better news than a chronic vertigo problem!!! :goodvibes


DH has requested beer & potato chips for dinner or beans!!! That means he is having a very bad day!:scared: I'm too late for fixing beans, so I'm fixing Nancy's cabbage casserole. It's a comfort food type dish I think he'll like. I'll also have the beer & chips ready when he comes in the door!
 
Next WDW trip will be in June for me, going on a family reunion.:scared: Some of the family are a little out there. ;) We are staying at the new AKV! My sister and I went over to SS to look at the models for that one and the new Contemporary rooms. The AKV one is so nice, the C was a little weird. In the studio they had the bathroom sink in the same place as the kitchenette. :confused:

Also got to see a scale model of the new Treehouse Villa's, they look pretty nice too. Only thing with them is that there is no food service on site. They do have a full size kitchen and are just a short boat ride to DTD but that kind of stinks that there is nothing there.
 
Afternoon all--not sure what was wrong with me yesterday, but feeling much better today. Dinner tonight is going to be a mexican chicken casserole.

And yes, please keep all the plans where we can see them. I love to live through other peoples' trips!

Okay need to go make sure the chicken has defrosted!
