The What's For Dinner Thread - Feb '09(recipe index in OP)

Hey y'all,

I just can't seem to keep up on here! I tried multi-quoting but it went on forever & my brain got all jumbled!:upsidedow

Let's see if I can comment on at least some of it.

Maria, I'm sorry that you are worrying so much about Greg! I pray that was his one & only episode!

Ellen, I'm glad your FIL is doing well! But gosh that recovery sounds so hard! More prayers for him & a good outcome!

Lindsay, Glad that Jan is feeling a little better. More prayers being sent!

Laura, With that schedule I can't figure out how you manage to think straight? I'd be so physically & emotionally worn out by the end of the day! You are such a good Mom!!! :thumbsup2

Your flounder & sides sounded delish!:thumbsup2 Bob loves sweet potatoe fries. How do you fix them? Are they packaged fries or from scratch?

Laura, Angelina is doing well after the surgery. She did get back into the gym & managed to overdo the bicycle 1st time out and had backache from that. I thinked she pushed it, 20 mins for the first time back on the recline bike. But overall she is feeling better. She is annoyed at not being able to work out hard, she is an adrenaline junkie (Mom's opinion not her's ;))

Robin, I've never heard of Harlequin (bakery? here in Nola?) But from the sound of those desserts you made for dinner... You need to send me some!! ;) Have fun & tell Gram, HAPPY 90th!!!

Gretchen, Your non-politically correct dinner sounds awesome!! :thumbsup2 Recipe please?

Robin & Laura, I can't believe as long as I've been on here, we haven't discussed RICE & GRAVY! Like Grechten's Kenny, Bob is not going to believe y'all! Down here things don't go together like bread & butter, the saying is like rice & gravy! When you fix pot roast or anything with gravy, what do you do with the gravy? Only on mashed pototoes? Noodles? I guess Grechten is right, must just be a southern thing. :confused3 Another question then, Rice is used how? Pilaf, eaten plain? Are y'all just messing with my head???

Kathy, Please take it easy! You've had a very rough couple of days, you don't need to overdo it.

That's all I can remember right now. I'll have to go read back again to see who or what I've missed.

oops here's one I forgot!

Good Luck Jacob!!! Glynis please post some pics!

Am I on ignore, you guys? :confused3

No.

I don't know about everybody else but I'll eat gravy on just about anything, including bread and butter. ;)

As for rice I generally eat it with some sort of "sauce" on it or with Chinese food.

Gretchen what wonderful news!!!! Continued prayers for your Dad:hug:

Kat , how are you feeling?

Laura your one busy Mom, your incredible. How is Greg doing? Any updates?

Nancy, I'm being good......I'm actually glad it's cloudy today, makes it easy for me to stay in. After the weeks you have had I would like to know what your doing for NANCY this weekend (stern face here;)).

Ellen, so glad your FIL continues with good news, prayers continued for him.

Sheryl, Angelina is still in my prayers as you are......she really came through her surgery well:hug:

No idea about dinner, the cupboards are bare. Tomorrow I have to stock up. I was going to run to Trader Joe's last night but wanted to stay with Greg.
I will check in later...

One of my favorite foods in minute rice with just a little butter on it, maybe a squeeze of lemon. I'm wondering if potatoes just grow better in the north so we've grown up putting our gravy on potatoes instead of rice. It's embarrising how interested in this I am, good thing work starts soon, that'll give me something to do. When my mom would make stew she would serve it on rice, but I still can't wrap my head around gravy on rice instead of mashed potatoes.

Sheryl- Sorry, harlequin was the name of the dessert, not the bakery. I love baking desserts and since I have a baking and pastry degree, I always get volunteered to make them. Of course for my gram I'd make her anything. We only in New Orleans for a couple of days and it was so long ago I don't remember much, but I do remember the butterfly exhibit at the zoo.

EJ4disney- my father in law had a detached retina and had to spend plenty of time in that postion for the bubble to be in the right spot.

Gretchen- wonderful news!

Ann- Everytime I see you mention Emma is confuses me a bit, especially since I meant to go to the childrens place today to get mine some shorts, but I wasn't happy when I left the dentist and didn't feel like going to the mall.

I would just like to say I hate the dentist. I have no cavities but I get to go back next week and have my teeth ground down and my bite rebuilt because my jaw is so bad that MIGHT help. I can barely open my mouth for them to clean my teeth, I don't know how they are going to to all that. The next step is replacing the joint and I'm not ready for that. Oh well, there are much worse things in life than a bad jaw.

Am I on ignore, you guys? :confused3

Of course not! It's just getting harder each day, for me anyway, to respond to everyone.

Kathy, Please take it easy! You've had a very rough couple of days, you don't need to overdo it.

I know, I am. I have a lot of work I brought home yesterday to keep me busy, but I'm feeling horrible about not going to the gym.:guilty:

WFD - Boiled crabs & crawfish....

Am I on ignore, you guys? :confused3

No, speaking for me, I am just so dizzy trying to catch up i chat and when I forget where I left off i stop. I'm sorry you are feeling left out, jan has ever been in my prayers.

:sad2: That is a lot of work my friend. I hate the dentist too so i can sympathize

Gravy :goodvibes:goodvibes We love it here. I put gravy on noodles and potatoes but Buddy hates rice (says it tastes like an old boot :confused3) so we seldom have it as a side. I love it and would eat it plain and be happy.

I usually make gravy any time I have potatoes, Buddy then takes a spoon and "samples" it, gets some bread and butter and dunks it. My niece Kim filled a coffee to go cup with it and drank it on the way home. She did have her buns and butter but :scared:. Kady tests it "I'm not afraid, Pa!" to see if it has been Nanatized :rotfl: Yup....we are gravy people! I did not need WW for nothin' :rotfl2:

You must need this :grouphug:

::yes:: Now you're talking!

Thanks! How are you feeling (besides worrying about Greg) ? Can you breath through your nose yet? Prayers for both of you!

Robin, If there is something wrong with being curious about other peoples cuisine.. Well I'm in serious trouble! They are going to lock me up & throw away the key!

As Kat said, we usually put brown gravy over rice. In my family turkey gravy goes over the turkey dressing & the potatoes.

I'm so sorry about your jaw! I'm not sure that there are worse things than dental work! I hate it almost more than anything. Prayers that this work will solve the problem. :flower3:

 I always make potatoes when I make gravy. Occasionally, I put leftovers on noodles or sometimes a hot roast beef and gravy sandwich, but never on rice. When I make rice, I either make it plain for the kids, fried rice or served under something like Indian food. I also like risotto.

How is Greg doing? Any updates?

Hopefully, he heard today that he passed the mountain phase and is on to swamp. His last letter said that he got injured falling down a slope, so he failed something due to the injury. After that, he was able to get some medical attention, and he felt good going into this week. I'll let you know if I hear more.

Lindsay -- I'm not ignoring you. I just forget to reply to everything sometimes.

It's probably all the Irish influence here.

Okay...must run. I think I am going to cook something...but I'm not sure what.

Greg would have gravy for breakfast if he could get away with it:)
My FIL even at the end of his life would leave chemo & want sausage, biscuits & gravy. I'm sure it had something to do with it being his comfort food.
I like sauces...lemony, cheesy, tomato, yummy.

Sheryl my nose is clear! Just some pain left in my sinuses.
Robin, I just had a paragraph written about rice but deleted it because I thought I sounded nuts:rotfl:
Lindsay,

Don't feel guilty! Your body needs the rest.

:rotfl2: Kady's not afraid! Nan, You really have a reputation don't you!

I don't know you must make one heck of a gravy if your niece is drinking it! :upsidedow Just the thought makes my stomach hurt! :rotfl:

Speaking of rice, I made this cuban style rice last week ( I think that was last week) . It was so yummy for plain white rice, I caught myself eating it, without any gravy!

Arroz Blanco: White Rice
Recipe by Lourdes Castro

Cuban rice is made rich by cooking rice with water in garlicky olive oil. If you are short on stovetop space, Lourdes Castro recommends finishing the rice in the oven. Bring the rice to a boil, place the covered pot in a 350° oven and cook for 30 minutes. Let stand for 5 minutes, fluff with a fork and serve.

Arroz Blanco: White Rice
Recipe by Lourdes Castro

2 tablespoons extra-virgin olive oil
1 garlic clove, smashed
2 1/2 cups water
1 teaspoon salt
1 1/2 cups long-grain white rice, such as jasmine

Directions
In a large saucepan, heat the oil with the garlic over moderate heat and cook until the garlic is golden, about 2 minutes; discard the garlic. Add the water and salt to the saucepan and bring to a boil. Stir in the rice and return to a boil. Cover and simmer over very low heat until the rice is tender and the water is absorbed, about 20 minutes. Let stand off the heat for 5 minutes, then fluff with a fork and serve.

Yes Maria, please print it! I've said enough crazy stuff today, I need a little company! ;)

I'm glad you can breath already! That's very good recovery. :goodvibes

Am I on ignore, you guys? :confused3

No! I am sorry I have not commented more. I've been keeping Jan in my thoughts. I did not know that Hawaii was off and then back on again. Is that the post you deleted? I did not get to read what you had written before it was deleted.

Related to "ignore" though, I discovered today that gmail has a feature that you can use to block incoming emails--you can create a filter that sends any mail from addressees that are driving you bonkers either into quarantine, or even right into the trash! I have been getting like 6 emails a day from someone (NOT from the DIS! Or I would not be talking about it here)--and they are the most annoying emails! Some political (UGH!), some lame jokes, usually with pictures (UGH!!!) some religious...just not appropriate emails to be sending to a casual acquaintance. Well, I made a filter just for their email address. Goodbye acquaintance spam! If you have a gmail account, you should check this feature out. You can remove the filter any time you want.

Back to food...I have never heard of brown gravy on rice either. It must be a regional thing. I probably would not eat it anyway. I am assuming brown gravy is beef gravy??

Not sure on dinner yet. All I have in my fridge is cheese and eggs. So, it's either the grocery store or out to dinner.

Am I on ignore, you guys? :confused3

Lindsay, sweetie, I am so sorry if I didn't respond. I certainly didn't mean to offend.

Please know that if I forget one of you it is NEVER meant to leave you out but sometimes I get behind and forget. I am so sorry.

Sorry, you guys. It's just in the midst of reading everything else, hearing kind words, people calling each other, I was just worried that I had done something to the group. I don't know. I really don't have anyone to talk to about all this going on (outside of Scott) and after awhile I got the idea no one was was really reading my posts anymore.

Just checking in. My stepsister is in from Albuquerque so we will be going over there tonight to visit with her.

Jan is doing ok. No word yet on when she's going to be able to come home. She is feeling better though and her blood levels are improving.

Kevin and Amanda are going to Hawaii after all. I truly hope nothing bad happens while they are gone (Amanda's grandmother is in the hospital, too). They seem to have enough sitters to last the week. They hinted around that I take Ryan but I simply cannot do that.

Good news on Jan! Hooray for Kevin and Amanda, too!

It's good to see you posting again, Lindsay! I've missed you, but have seen you around Facebook. It's just not the same, though.

Becky, Glad you figured out how to delete that mail! I haven't figured it out, but Bob has, so I just get him to do it for me.

Brown gravy is usually a beef gravy. Like gravy for pot roast or thin steaks cooked in gravy. ( Many stores here even label them as gravy steaks.) We brown the meat in a oil, take it out, then make a brown roux in the same pot, adding water & seasonings, putting the meat back in and slow cooking the meat in the gravy. Typically people down here, anything with gravy or any kind of sauce goes with rice. Take red beans for instance, not really a gravy but it's eaten over rice. As is gumbo, sauce piquant, seafood stews, you name it's eaten with rice. We've always had stews served over rice, even if potatoes are in there. ( Maybe that's why I'm not a stew person.)
Rice is grown is S. Louisiana, so I'm sure that's one of the reasons it's so prominent down here.

Ladies, this is just a quick check in but I had to share my fabulous news. The MRI has come back and the cancer has NOT spread to Daddy's brain. Because of the position of the tumor on his vertebrae this was a concern of the oncologist. So this is one hurdle we have made it over.

He is getting his chemo today and will get another treatment in 3 weeks. Two weeks after that they will do another PET scan to see how effective the treatment is.

This is GREAT NEWS!!!! Congratulations!
