The What's For Dinner Thread - Feb '09(recipe index in OP)

Maria - I'm so glad that Greg is ok. Scary stuff!

Nancy - What is with some people???? I can't believe family members would act that way! We had a "crasher" at the dinner after mom's funeral. It was a lady who's had a crush on my dad for about 22 years! She showed up, sat with the family and ordered the most expensive entree. It irked us, no end!

Gretchen - It's so nice to see you posting again!

We have Pinewood Derby tonight, so dinner is fast; chicken nuggets and baby carrots. Not my favorite meal, but my kid's will eat it, and I know that there will be junk food at the Derby. I did find Mickey shaped chicken nuggets at Costco, so that will be fun! I'll try to remember to take pictures of Jacob and his car. He's very proud of it.

I ended up coating the flounder in panko and cooking it in a skillet. Sides were spicy cole slaw, sugar snap peas and sweet potato fries. The kids thought the fish was so good, they had second helpings. They also discovered that they like sweet potato fries better than regular. :thumbsup2

I am just letting you all know now that we are just moving into our most insane month of the year. In the coming weeks, we have baseball games, baseball clinics, baseball practices, skating practices, skating shows, skating competitions, dance dress rehearsals, ballet recital, hip-hop recital, school recitals...it is just nuts. If you could see my May calendar, you would faint. Sample day: Baseball clinic 8-10 am, gymnastics 10-11 am, dance dress rehearsal 9-10 am, dance dress rehearsal 10:30-11:30 am, skating competition time TBD, baseball game 4 pm, skating show 7 pm. I apologize in advance if I fail to keep up. I will try to check in, but don't send out the search party if I don't. I am just in my car driving from one activity to the next and trying to find one of those time things Hermione had in the third Harry Potter book.
 
Today was a catch up day...seems like we lost much more than 24 hours:confused3

Greg's "heart spasm", could happen again but likely will not. The doctors told us if the symptoms present themselves again to go straight to the ER.
I'm still very nervous about what happened & I thought Greg was calm until I went into our office & he had several windows opened on the computer doing research on what happened.

Late this afternoon we stepped out for a walk & some air, then we ate at the Bobby Flay burger joint that opened a few towns over........he's napping now & here I am:surfweb:
Hope everyone is okay & I will read back in the morning, I'm to nervous to sit still.
 

The funeral for my Aunt was a little stressful but we got through it. I am shocked at the behavior of some of my cousins.

Tonight we met a friend at a place near UT Austin campus - it was a brazilliany place. I had chicken paella that was SO GOOD. I've never had the real thing :thumbsup2

Tomorrow I am hitting the outlet mall while DH hits the golf course. Dinner will be the rehearsal dinner at an italian place.

A quick fly by...not sure of dinner. We wound up going to the diner last night so I have some ground beef. Probably make some cheese burgers over a salad. Gotta try and cut down the carbs. Andrew is supposed to have a game tonight, weather permitting. We can always eat at the snack shack too.

Just checking in. My stepsister is in from Albuquerque so we will be going over there tonight to visit with her.

Jan is doing ok. No word yet on when she's going to be able to come home. She is feeling better though and her blood levels are improving.

Kevin and Amanda are going to Hawaii after all. I truly hope nothing bad happens while they are gone (Amanda's grandmother is in the hospital, too). They seem to have enough sitters to last the week. They hinted around that I take Ryan but I simply cannot do that.

Morning all, hope everyone is doing well today.

Lauren- Cutting down carbs only lasted about a day for me. I'm trying to limit them a bit, but I strongly believe they belong in my diet. I always have an excuse.

Laura- Trader Joe's has the best sweet potato fries. I love flounder, we used to catch it all the time but we haven't had luck in years.

Kathy- Hope your feeling better.

I'm off to the dentist for a cleaning. I'm actually quite proud of myself because I really wanted to cancel but I didn't. I was even able to eat breakfast this morning. Of course I have a 40 minute drive there so I'm sure I might not be so confident by then.

Dinner is at my parents. It's my gram's 90th birthday. I made a raspberry gelato recipe I found on allears (I think it's more of a sorbet) and I'm going to make Artist's Point blackberry cobbler. Other than that I don't know what we are having.
 
Laura, She hasn't heard anything yet. The GM & Owner are supposed to be discussing it today. Hopefully she'll hear something today or tomorrow. She takes off for a vacation in NYC on Saturday. I'm glad she was able to get in the surgery & her vacation while out of work. Hopefully everything else will work out.

I'm sure it will all work out and like you said, it is nice to be able to get in her surgery and her vacation prior to starting her new job. Some places are just so difficult when you need time off.


Back to the rice, is it the same kind of gravy you would put on turkey? I've had sauce on rice before, but never gravy.

I have never had gravy on rice either. Like Robin, I was wondering what kind of gravy do you put on rice. :confused3

Ok, I guess it is just a southern thing, but when I told Kenny neither of you had ever heard of putting gravy on rice, he said he thought that putting gravy on rice was kind of like putting milk on cereal. :lmao: Told you how that man feels about his rice and gravy.

Anyway, yes Robin it is kind of like the gravy you make with turkey. Usually, gravy is made with the pan drippings of whatever meat you cooked thickened by a roux.


My Dr. appt went well. No real changes to report. :goodvibes . Emma's heartbeat was 148, and my belly was measuring correctly. My BP was 112/70, and I have gained a total of 3lbs total since start of my pregnancy. Next appointment is in 2 weeks.

That is wonderful! I gained so much with Hailey that I would get on the scale with my eyes closed and dare the nurses to say anything. :laughing:

Tonight's dinner is very unpolitically correct. We are having veal with proscuitto and shrimp in a white wine and dijon sauce. I don't know what kind of veggie we are having to go with yet, I'd like some asparagus, but I need to see what it looks like at the store.

:rotfl:Numbers may not be rising to quickly but yesterday I chuckled because my belly was in the way of the nurse seeing the scale! My body is certainly changing to accommodate my little one.

We just got up about a half hour ago. DS ended up in my bed this morning and then we both passed out. DH & DM both called because they did not hear from us so late in the morning. It felt good to sleep, I have a small sinus cold again and had trouble falling asleep.

I just placed and order for the kids at Childrens Place...that budget board is going to get me in trouble someday. It was a deal I could not resist...40% sale items then a code for an additional 15% off. I got Emma a beautiful white crocheted cardigan, a white sunhat, 2 headbands (pink & white), and the cutest ruffle socks. DS got a shirt for the fall. Total was $29 including shipping.

We are going out today with my DM. I am going to take her to my DA then we are doing her grocery shopping.

I am down to dregs at my house for food. I am so happy that my new fridge is coming tomorrow. Last night's meal was scrounged from stuff in the standing freezer. Pasta with chicken, peas, bacon, and parmesean cheese. I did not even have anything to make a salad with it! John asked me this morning what is for dinner tonight and I told him I have no idea! Anyway, here is a picture:

No idea WFD, going to my sister's tonight for the weekend, and really won't have time to cook much. I may just make grlled cheese.

As I think Becky said - "Life gets in the way of Life" I totally agree!!

As I have said before, I work for our church and what a few weeks I have had. We have a congregation of around 600, with 2 pastors and I am the only secretary to both. We have 2 services a week with a full schedule of activities on Wednesday. I know Amiee will understand, I am NOT the pastor but the one and only gopher to all. ;)

I have read back all 11 pages. That in itself was a task. I feel I have missed so much. Please know that prayers are said for each of you every day.

Maria, I am so glad that Greg is okay. What a very scary thing. Take care of you also.

Nancy, I am sorry that you had to deal with family besides the loss of your aunt.

Kat, I so hope you are feeking better and Kyle too.

Glynis, how did the talk with Abby's Mom go?

I am going to stop here as I know I will/have forgotten somebody. I will try to do better. The school year is almost over and activities will be stopped for the summer. So I should have more time to play. :rotfl:

Doug's Dad is doing great. Doug took him to his week check up ysterday and he has to be flat for 4 more days, then they want him to be upright. They have to wait about 3 weeks for the gas bubble to completely dissolve to see if the surgery worked. :confused3 What the he** is that all about. I would think you could tell if it worked way before that. Oh well. What do I know.

We are having chef salads tonight with leftover sliced Steak over the top. I can't wait!!

Ladies, this is just a quick check in but I had to share my fabulous news. The MRI has come back and the cancer has NOT spread to Daddy's brain. Because of the position of the tumor on his vertebrae this was a concern of the oncologist. So this is one hurdle we have made it over.

He is getting his chemo today and will get another treatment in 3 weeks. Two weeks after that they will do another PET scan to see how effective the treatment is.

Dinner last night was grilled steak, peppers and onions, a medley of carrots, zucchini and summer squash, and a green salad. Tonight is still up in the air. I am ironing and washing, cannot think further than that.
