The What's for Dinner Thread - August 2014 (recipe index in OP)

Morning all!!

First off I want to apologize to all of you. I had every intention of checking in over the weekend. And I tried - really I did. But if you all remember, I got a new Mac a few months ago. When I tried to log in, it asked for my password. Well to be very truthful with you, I always log in here at work and for YEARS I was just automatically logged in. Well, I couldn't remember for the life of me, what my password was. And between my phone and the darn new laptop I couldn't get in. So sorry. But I now have it written down and all fixed.

Brandi ~ Oh sweetie, I feel so bad for you. I can't understand that big of a weight gain either. Your calorie intake is right on. Just keep on doing what you are doing and soon you will feel better and can up the exercise.

Alison ~ I am so darn proud of you. You are doing such a great job. Keep it up my friend. I know you feel better!

We had a great weekend, but of course it went way to fast!! As Matthew and Katlin drove off last night, Doug remarked that it seems like they just got here.
We golfed 18 holes on Saturday and the got another 9 in yesterday after church. It was 103 here yesterday and even with numerous reapplies of sunscreen I am a bit red today. Hopefully it will tan and not peel. It is cloudy and raining and not suppose to get out of the 70's today. Thanks goodness the weekend was perfect!

Ellen, I am so glad to hear that you are having such a wonderful time, I hate when I lose/forget my passwords, they are so darn hard to get back.

I had PT again this morning, and she really worked my leg and stomach muscles.
 
I really have no idea how either. I am around 1500 to 1700 calories a day, and mostly all good food. It is not helping my state of mind to put all this weight back on. :(

That's really strange. I'm in a similar calorie range, not eating nearly as healthy food as you and seem to be dropping with now real cardiovascular exercise. At the Chiropractor I do strength training twice a week, but my cardiovascular is mostly moving boxes and furniture. Hopefully you can get back to working out again.

BUT I am very proud of you, I know it is hard, and you are doing great!

I'm trying to stick to a diet, and doing OK, but without time to exercise regularly, it's tough.

Alison ~ I am so darn proud of you. You are doing such a great job. Keep it up my friend. I know you feel better!

Ellen, so good you had a great weekend. Not having a 9-5 I never have weekends and sometimes I work harder on Saturday and Sunday than the rest of the week.

PIO - hopefully you'll join us on a regular basis soon!

We went out last night at DL and I'll have a full report on my PTR once I finish the last night we had at DL. Tonight I'm fixing pork chops and green beans. Fran has been complaining about boring meals so I'm going to make some instant potatoes to hopefully make her feel better. I'll put a few on my plate so she doesn't think I did it solely for her benefit.
 

Alison - Well done on keeping to your eating plan. You look amazing!

Brandi - I need to start exercising! I've been gaining weight here and I seriously need to drop some. I need to take inspiration from you and Alison.

Ellen - Glad you got your password issues sorted out. Golfing in 103 heat? You really must enjoy your golf.



I certainly hope that life is returning to normal. Despite everything that is happening at work, I'm going to start claiming my 3-day working week back....starting Thursday.
WFDT? Tuesday night....baked potatoes. Some things really don't change. LOL.

Wow, I am just swamaped this morning. Between writing bills and payroll checks, it was tax time for the quarter and monthly withholding. This is the first time I have had to pop in.

Alison ~ WOW, I have to agree with PIO you really do look great. Maybe you don't realize it but you are doing something right.
Is Fran Feeling better these days?

Brandi ~ Are you noticing any progress with the PT? I feel so bad for you. I hope you realize what you did to hurt you in the first place so you know what not to do in the future.

PIO ~ So glad to see you. I am loving your pictures and TR of Sydney. The pictures are just amazing. Thanks so much for sharing with us.

When I let Cooper out this morning it was fridged out. The temp said 51. If I didn't know better I would have thought it was fall out. But we are getting the smoke from Canada and they are warning everyone to stay inside. The visibility is about 1/2 mile. It really isn't very nice out at all. The smell alone is awful.

Alison - Yup. I've been working 5 days a week for the last 4 weeks. But I draw the line tomorrow. Enough of the pro-bono work days and time to get back to lifestyle.

Wednesday and it was dinner at mum's tonight. She had an unusual fish as a dish....King Salmon aka Chinook. The cooking was pretty standard as Mum fried it and then served it with a bit of soya, which is pretty standard for an Asian kitchen. But I was dubious about the fish....turns out it was lovely. Who knew?

Hoping to spend time with DS tomorrow. He's still on school holidays and I haven't had any time for him yet. What did he say when I asked him what he wanted to do??



Stay home and play computer games!!!

PIO ~ Good for you!! I would give anything if I could work just 4 days a week. Actually that is a good idea. Pastor Dyton takes Monday off - maybe I could to. Hmmmmm........?

Alison ~ I love seeing you all happy and with friends. Loved that picture!!

One of my best friend's father is really sick and probably will not last much longer. I have been taking dinners to them the last 4 nights. They have really appreciated them and I feel so much better knowing they are eating. If you could and feel inclined, would you please keep Tom and his family in your thoughts. At this point, we are just asking for a peaceful passing. Thanks!!

WFDT ~ An egg sandwich and tomato salad. Doug will eat at the Country Club as it is Men's night.

The PT is getting harder every time, and the pain is NOT getting any worse, so for them they do a scale of 1 to 10 with 10 being an emergency room visit.
I would say that the past week has been about a 2. So overall it is getting better, it is just so much slower than what I want. I got 12,000+ steps yesterday and today I am in no more pain than a 2.

Brandi ~ I am glad that you are back to exercising and not much pain.

Marty and Stephanie are going on a Poker Run/Fund raiser this weekend so we have the girls. I will go pick them up as soon as I get off of work. Tomorrow we are having Bible School here, so Lilly and I will be at the church all day. Doug and Harper are hanging out. It is suppose to be hot as heck so we might go to the pool also. I think Lilly has a play date with Liam also. Should be a fun and VERY busy weekend. Wish me luck!

Well I had my re-evaluation for my Hip on Friday and the Dr was not happy with the progress.
She has ordered an MRI with a T3 magnet. This is the strongest magnet for the MRI and of course not every place has it, so I have to go out of my area to get it. She suspects that I might have a tear in my hip joint. Not what I wanted to hear.

David took me out to eat Indian Thursday night, and Friday I ate watermelon for dinner. Just was not hungry.
Saturday night I made pizza and a salad.

Tonight will be eggplant parm, for me and veal parm for David.
