The What's For Dinner Thread - August '09(recipe index in OP)

Tom has accepted a new position with a company so he is changing jobs and companies. It was a family decision since this company is based in Pittsburgh and WV (5 hours from here) so we are needing to relocate.

Congratulations to Tom! Uprooting is always a lot of work and a little nerve-wracking, but it's also exciting. I wish you all the best. I'm sure you'll be able to work things out with visitations.

Doug and I are going to the winery again tonight with a bunch of friends. I told him that we can't make a habit out of this and he just :confused3 and said Why?

It sounds like a pretty good Friday tradition to me!

But I hate to tell you, the king size bed might not make much difference. It doesn't for Hailey.

It doesn't for Caili either. She rolls right on top of me. If I move, she moves. By the end of the night, I am practically falling out of the bed. Nice to see you Gretchen. Good luck getting through all the work!

Just got a call from the attorney's office that is handling the closing, looks like it'll be done by Wednesday!

Kyle is coming in Monday to get his physical for baseball. Try-outs begin on Wednesday, we shall see......

That's great news on the closing! Good luck to Kyle! I'm glad you're feeling a little better. Those back injuries are nothing to mess around with.

Ann -- I'll be thinking of you Monday. Sunday too. That prep is awful (I've seen my mom go through it)

Stephanie -- I hope you had fun shopping.

Caili has skating this afternoon, and afterwards the kids and I are going to our neighbor's house for pizza.
 
Kathy, you will love Portofino Bay! I love the theming and all at the Disney hotels, but Portofino is really so much nicer! King sized beds, really nice linens and toiletries, quiet rooms (can't say that about any of the Disney ones), free bottle of wine on check in (yay!), well stocked in-room mini bar, HUGE bathrooms, turndown service, etc.

Great news on the closing too! Fingers crossed!

Sorry for the oversharing but it is easy to feel like I can around here.

Afternoon Y'all,

Alexis is doing really, really well! She even played outside a bit yesterday evening. Motrin seems to be controlling her pain. She's not very happy with all of the other OTC Chris picked up. She's okay with the fiber & vit c gummies but the lactobacillus stuff isn't a gummy but a capsule. Chris was splitting them open & mixing that with the mirolax. Alexis told her she didn't think she should be taking that because the dr. didn't order it!:laughing:

I just told Andrew's Dad who did not take it so well so I am a bit upset now but so happy for Tom...this is an oppotunity of a lifetime...he will be head of a compliance dept for north america. Andrew is OK with everything but I am just a bit sad about visitation but we are working it all out.

School is still going well! I'm glad tomorrow is Friday though. I'm going to the LSU game on Saturday in Baton Rouge!

Sheryl--let me apologize as a part of Walgreen's for what Chris went through. Really makes me :mad: when I hear of situations like that, especially for the company I work for. I have my beefs with Walgreens--especially b/c they expect us to do all this work with no extra help. I worked 8 straight hours last night w/o a break (even to the bathroom) b/c it was just two of us. But that doesn't excuse rude employees and "lost" prescriptions. Again, I apologize for them. Glad to hear that Chris got the rx straightened out. I will say if she wants to make a complaint the number is 1-800-walgreens, and it should direct her to the district office of the NOLA area.

Okay, I am feeling lousy today. Just that change of season allergies/head cold. And after working like a slave last night, I am just drained. I am going to drag myself to the gym and then maybe hit the mall for a bit of retail therapy (have a gift card burning a hole in my pocket). Not sure WFD tonight, maybe lasagna? I had my mom use leftovers for dinner last night and she somehow made some yummy taco casserole w/what was in the fridge. I am always amazed at what she comes up with.

Now I have to apologize for going off on the company you work for!! :guilty: I did not know! :sad1: I have to say that the local ones are never well staffed around here. 2 people max working the pharmacy & I can assume that the employees are overworked & overtired like you! I hope you're retail therapy helps you feel better. :hug:

Thanks for all the well wishes, I'm feeling a bit better. I had pulled my back out and didn't let it get better before I went back to the gym and really messed it up. I'm taking it easy for a few days.

Not oversharing out all! I need to head back to the gastro dr myself, but I've been putting it off. Prayers that you feel better & that you get the good meds for the test! I know the scope is the easiest part of it, the prep is yuck! I'm sorry.:hug:

Dinner last night was spinach tomato salad with feta, grilled NY strip with an herb-paprika rub, Roasted Potato & Vegetables Salad with Smoked Paprika Dressing. I had been griping to DH that I keep finding recipes calling for smoked paprika & couldn't find it anywhere. The sweet guy went online & ordered some Spanish Smoked Paprika for me! I decide to use it & can't find all those recipes I kept coming across. So of course I just Nanatized a few recipes & mostly just made it up as I started preparing. I am going to try to write a recipe for the roasted potato salad.

I don't think it's oversharing but I have an Irritable Bowel Disease :laughing:

My favorite advice, if you haven't tried it in the past - do liquid only for 2 days prior. The prep is honestly a piece of cake after that. There just isn't much to clear out :eek: :laughing:

KATHY!! Make that appointment! It's honestly SO SO easy and such a fantastic tool that we have.

I got a call from the hematologist - things are not good with my iron like he assumed. Matter of fact, so low they want me to do weekly infusions for 4 weeks and then see where we stand. And he wants me to start in less than a week. He just couldn't guess my levels based on how I felt because I'm flaring and feel like crap anyways. :laughing: The iron boost may help me some, though.

We are having lemon ricotta chicken. If it's good, I'll post the recipe.

If anyone is having problems finding any spices let me know. I plan on making a run to the spice house either this weekend or next. I'll be glad to pick up what ever and ship it.

Becky, I think I came up with an actual recipe! :laughing: It took me awhile, I pulled ideas from about 3 different recipes I found online. A spanish potato salad, a Bobby Flay grilled one & one on a blog with a fancy french name. I hope it makes sense.

Roasted Potato-Vegetable Salad with Smoked Paprika Dressing
Makes 4 servings

Roasting Vegetables:

2 large Baking Potatoes, scrubbed, cut into 1 inch cubes
1 large onion, 2 inch cubes
1 large red bell pepper, 2 inch cubes
1 large tomato, 2 inch cubes (use whatever taste best, I used Creole)
Dried Herbs, basil, oregano & crushed rosemary
Kosher Salt, Fresh Ground Black Pepper
Olive Oil
3 small cloves of garlic

Heat oven to 400 degrees. Place potatoes, onions in one baking pan. Place the bell peppers & tomatoes in another pan. Coat all vegetables with olive oil. Sprinkle all vegetables with dried herbs & season with salt & pepper. Place garlic cloves on aluminum foil, coat with a little olive oil, fold foil & place garlic in oven while roasting vegetables. Roast potatoes & onions until crispy. Roast tomatoes & bell peppers until tender but still maintain their shape. (The tomatoes & bell peppers take less time than the potatoes & onions.) Roast garlic about 10 minutes.

Dressing:

Olive oil (2 tbsp)
2 tbsp prepared mayonnaise
1 teaspoon Dijon mustard
2 teaspoons red wine vinegar
1 teaspoon Smoked Paprika (Spanish)
3 cloves roasted garlic
¼ cup diced onion
Salt, fresh ground black pepper

After garlic has roasted until tender, remove from oven & squeeze into a food processor. Add all dressing ingredients to processor except olive oil. Process until garlic & onion are fine and blended well. Drizzle olive oil through tube until blended. Season with salt & pepper to taste.

Salad Ingredients:

1 tbsp capers, diced
¼ - ½ cup small Spanish olives, diced
¼ cup chopped fresh parsley
1 tbsp chopped fresh basil
1 tbsp chopped fresh rosemary
1 tsp fresh thyme

Mix capers & olives in a large bowl. Add roasted vegetables to bowl & mix gently. Toss all the herbs with the vegetables. Add dressing right before serving.
 
I just spoke to Kathy. She & Johnny had to say "goodbye" to their Sammie.
The vet said she had a very large mass & while she was in no pain she was very ill & would continue to go down hill.
Kathy & Johnny were able to hold their furbaby & Sammie went peacefully.

Please keep them in your prayers...Also Kyle is not able to come home this weekend so he is heart sick at school:hug:
