The What's For Dinner Thread - August '09(recipe index in OP)

Hi, everyone! I'm so sorry I've been MIA for a few days. I've missed so much!

Gretchen - I'm so sorry about your father. Even though you know it's a good thing, it's still so hard to accept. I feel that way about my mother. Please know that you are in my prayers!

Sheryl - I'm so glad that Alexis is home and healing. I hope that she does well at home, and heals quickly. She has been in my prayers.

The rest of you have also been in my thoughts and prayers.

I've been so busy lately! I don't know if I mentioned that I began taking some classes to learn medical coding. I have a job lined up once the classes are over. It's something that I can do at home, with the baby, so I'm trying to get certified by the end of the year to help bring in some money. It's taking up much of my free time!

Nothing spectacular for dinner lately. Tonight is tuna wraps and potato soup.
 
I went to the allergist/immunologist yesterday....she ordered so many blood tests. We're trying to get to the bottom of how sick I've been all day as well as we may do some drug challenges for different meds because I have been having adverse reactions to so many meds. My wires are crossed somewhere.

Oh, I hope they can figure it out. And your insomnia! I, thankfully, have never had issue with getting a few sleeping pills to do the trick.

Hey Y'all, Good news she is home!! Well she's at my house right now, while Chris gets the meds & straightens up her house for her. She is very happy to be out of the hospital. Just tired from the ride home.

She'll be on 2 antibiotics, just praying her tummy will handle that. She's eating a little & "other stuff" has started working. She requested noodles with white sauce, so I'm fixing that now.

I hope all is well with everyone. I'll try to read back tonight.

Today was a typical Wed - though an extra meeting meant getting out of there at 9pm instead of 830. I had hot dogs and Cheetos when I got in.

I see the hematologist tomorrow for the first time since I reacted to that iron infusion. I think my iron is low, so I will stop in for labs prior, and I hope he can figure out a way to still get an iron infusion of somesort. Just have to figure out what I'm allergic to in it...
 
:eek: I know the risk of attack is low, but that would be enough to keep me out of the water. My favorite piece of advice they had for swimmers was to not swim with the seals. People do that?? That's nuts! (My apologies to anyone who regularly swims with seals.)

We had back to school night tonight. It was typical and makes for a long day. Not a difficult one, just LONG.

I can't believe we're a third through September already! :eek: The last week has just FLOWN by!
 
Good Morning! Quick check in...gotta take Sasha to the vet at 9 so I need to get ready. Dinner will be braised pork chops, steamed broccoli and those Knor noodles.

Tonight is parent night at Alex's school oh joy. I really want to be lazy tonight. I have had a bout of no sleeping too. Maybe we should have an insomatics camp.

I am one of those gals who could be chatting in your camp. I wake up a lot and every once in a while I give up and get up. I hate those nights :headache:

Don't waste freezer space, I will save room in my recycle barrel. He will be gone in less than two weeks. My plastics and cardboards can wait a bit :woohoo:

Last nights dinner was really good. I needed to use a recipe for a plain eggplant casserole and nanatized it to include ground turkey and extra cheese. We have a WW support group and meet at Marisa's every Wednesday. There are a few gals who do not prepare for the week so we decided that every week 4 of us would make a dish and bring containers for a meal for everyone. I came home with either a lunch or dinner for at least three days so if this keeps up I am going to be thrilled. My turn was the casserole so hopefully my nanatized version is okay. Buddy said it was "Okay" and was happy tht it did not have "Horsefeed" in it.:lmao:That translates to "Thank goodness that there is no bulgar wheat, quinoa, brown rice or beans or couscous in it."

I need to put my sister's loose touring plan for Disney today and get her ADR's in order. They are not planners so I just need to make sure I write down a few things and make a list of fun things that they should not miss. My other sister adn her husband bailed on them, I am not sure if this is a good thing or not. Mike's Mom will be using an ECV and they will be visiting DHS for Fantasmic, EPCOT for Illuminations and the MK on a long day that includes, the afternoon parade, Spectromagic and Wishes. I think I will have them make their way to the Train Station for Wishes so that his Mom does not get trampled going out that night. Does anyone else have any hints or suggestions that I can help them wiht? They have not been since CHris and Debbie were little. I feel badly that I am not going to help them but I was not comfortable asking Welby to take time off for me. And honestly, Buddy's company has been so slow this past two years, he is nervous about that, he makes the majority of money in the summer and fall months but the past few years work has dropped significantly. We are not seeing those "shovel ready" projects in our area :sad2:

I figure out dinner after I check what I have left in the fridge. Buddy may get that casserole again this evening...lucky guy!

Sheryl -- I'm so happy Alexis is home! I hope she continues to improve and is back to her usual self soon. As far as the two antibiotics, will she eat yogurt? That should help her stomach and also prevent other issues.

My big boy got a hair cut today...he looks so darn handsome and old. :sad1:

Aww...I remember Liam's first haircut. I was so sad seeing all those baby curls hit the floor.

:laughing: There was an article in the paper today about a helicopter pilot who has been monitoring some of the sharks. He saw a diver jump out of a boat to retrieve some equipment, and as soon as the diver was in the water, one of the sharks changed direction and starting charging right toward the diver. :eek: They got the diver out of the water when the shark was 100 feet away.

:laughing: I can't think of any tips for your sister off the top of my head, but I do think your train station suggestion is a good one. We have done that when the kids were in strollers, and it was so much easier.

We actually have most of the afternoon off here today. Shocking. I do have to go meet Liam's teacher after school, but that won't be long. I think we might have spaghetti and meatballs for dinner.

We have never stayed at either... POFQ or CSR ??????

He respects you all so much he wants your opinions please! We are currently booked at POFQ but the newly renovated rooms at CSR with the queen beds vs. doubles at POFQ are calling his name. (And so is the outside bar!);) We have walked around both resorts and are torn. I told you more changes would follow. :lmao: A split stay is out, just to much work now with the two kids.

Everything I've seen and heard recently about CSR have been awesome. The next time we go moderate that's where we're going. Our experience at POFQ last year was not what we expected. Not sure if it's because we're from NOLA but it just didn't excite us. The only things we enjoyed about it were the boat to DTD and Scat Cat's! That said, POFQ is just loved by everyone else.:confused3

So, dinner last night was...NOTHING! Those of you who are readers will think this is funny. John had a business dinner last night so I was on my own. I got home and made a panini, but it was earlier than when I usually eat, so I left it on the kitchen counter and went into the living room to read. I got all caught up in the book, and when I got up to check the time it was 10:15 PM! :laughing: So, I just went to bed without eating. I have lunch for the next few days though!

Dinner tonight is likely going to be pasta with fresh tomatoes and basil, plus a salad.

I am so sorry I haven't been around lately. We have been so busy here at the church with everything starting back up that I just have NO time to play anymore. I worked till 6 last night and was back here from 8-9 last night. You should have seen my desk this morning. I am the only secretary so it all falls on me. I have a pastor that is NO help what so ever. :mad: So such is my life at the moment.

Sheryl ~ I said prayers and sent good thoughts for Alexis. I am so glad to see she is home and doing better. Loved the tea party image - precious!!

Stephanie ~ I am so glad that Katelin is settling in so good. It has to be that Nebraska blood. We ARE pretty good people. :lmao: Please let her know us Nebraska girls have to stick together. GO BIG RED!!!

Laura ~ A very late Happy Birthday to Caili. Glad to hear the kids are liking school.

Kat ~ Don't worry about the tears. I still fuss everytime Matthew leaves. But I have gotten to the point I don't let him see me cry. It was so hard on him that I had to keep it together until he left. Then I just sit on the proch for a bit. It will get easier - not better just easier. I so feel for you my friend. I wish I was closer, we could help each other.

Aimee ~ good luck at the doctor today. I hope they have some answers for you.

Alexis is doing well, eating some & moving slowly. But she is starting to sing & smile,princess: overall acting more like herself! :dance3:

Her poor Mom had reached the ragged edge yesterday & had a meltdown. She dropped off the two rx's at Walgreen's then went home to clean up. Went back to pick them up & they handed her one prescription. When she told them she dropped off two, they tried to tell her she hadn't! Well after much fussing & Chris insisting they find the other rx, they finally found it but said "Oh we can't fill this it's a compound prescription". Well by this time it's 6:00 & they tell her she'd have to go across town to another store. She shows up here in tears. She calls the Walgreens across town & they tell her they'll have to see the prescription before they'll know if they have the medicines on hand to make it & that it would take them 24 hours to do it!!! :mad::mad:
So I finally had her call DD's best friend who's a pharmacist at a little privately owned drugstore near our house. (the one I always use) She told her that they could fix it for her when they reopened in the morning. She also told Chris not to worry that Alexis would be fine with just the one rx overnight. She went in this morning & had her medicine within 20 minutes!
 
Aimee, I hope your dr. can figure out how to get you the iron you need!

Laura, I told Chris to give her yogurt. Chris offered it to her last night & she said she doesn't eat yogurt! Well she always eats it over here! Chris also tried to fix her oatmeal last night & she said she would only eat oatmeal at Nana's! Chris did find a acidophilus gummy vitamin for her & she likes it! :goodvibes

Kathy, I'm sorry you're sad seeing Kyle leave. It will get better, I promise!:hug:

Maria, How are you feeling? I looked back but couldn't find what the dr. told you about your allergies, etc. Also when do see someone about the mammogram? Thanks for the Princess welcome home! princess::cutie:It made her smile.
