The What's For Dinner Thread - August '09(recipe index in OP)

Morning. Happy Hump Day! I really need to get moving this morning. My allergies have turned into a cold and so I'm dragging again. But I'm the wednesday helper in Emma's class, so I've got to get moving. Can't disappoint a room full of 5 and 6 year olds!

:sick: This is happening way too early in the season! Welby's Dr said half jokingly, to "take a ticket and get in line", :sad2: Feel better today!

Can y'all pray for my momma? :flower3:I don't want to share too much on a public thread but we had a long talk last night and she's having to make some major decisions about her future that will affect her greatly, and could potentially affect us greatly. The tourism market is just not improving yet...

I will add prayers for your Mom. I hope that she is able to come to whatever decision is best for her. This year has been horrible for so many businesses, large and small alike.

That bread had better be tasty. I'll post my favorite banana bread later, it's easy too.

Please post it. This one was good but not outstanding. Kady did take a huge part of it home to share with her Daddy though. Buddy said most of it was gone at work but requested that I do not experiment with his coworkers again. He made me sound like some kind of mad scientist :rolleyes:

Laura – Thanks for the well wishes for my boy! I’m pretty nervous, but in all honesty, I’m pretty sure this is probably the end of the road for him. It may be a blessing as I'm really worried about him, he told me yesterday he's never been as stressed out as he is now. I couldn’t be more proud of what he's accomplished!:goodvibes What is zumba??????

I am impressed that he decided to try to walk on! He is such a motivated young man and has managed to channel all of the energy that teens have into a strong work ethic and good character. IMO, this is not the end of any road but perhaps a different route. You and Johnny have every reason to be proud of him and his accomplishments. I am waiting to hear how the scrimmage works out!

Nancy, I was about to tell you what an awesome photo you took of your banana bread, but then I realized it's a copied photo from the Pioneer Woman's website! :laughing:

:lmao::lmao: I guess you have never seen the poor pictures I have taken :rotfl2::rotfl2:Between headless humans and bottomless trees they are pretty pathetic! When I was a teen I worked in a small restaurant. They served Welsh Rarebit............out of a can :scared: and it was pretty gross! People ate it every time it was on the menu though but I have never gotten past that first taste.

I'm so ansy to get to work tomorrow, it's like waiting for summer vacation. I love my job, but I'm kind of excited I'm done for the season in four days.

I wish you could have seen all these little 1st graders giddy with excitement about thier secret! It was sweet. I left church, went get my toes "pedi-foured", then spent most of the day doing a little retail therapy.


Laura, Alexis hasn't been allergy tested at all. Chris is scared to death to do it! She finally got the referral to an allergist a few months back, then she talked to them & found out that they would want to do the scratch testing. She's not ready for it & after the recent hospital stay there is no way I'm going to push for it anytime soon.

Kady's pediatrician would not scratch test her and was furious that the allergist that he sent her to did it. He did blood tests. I honestly do not know much about allergy testing but I do know that he took really good care of Kady and now, after following his very strict instructions she has outgrown them. She thrived without dairy. Marisa told me that she tends to prefer many soy products over the dairy so she does not push it.


I just want to update you all on Marisa's knee. She went to a specialist yesterday and is going to have a pretty huge surgery. It is going to leave some "pretty nasty scars" and involved bone and ligaments etc. 12 weeks on crutches at the minimum. He was concerned about her job but Marisa is working a lot from home already becasue sitting at the desk kills her and she is really zapped after therapy. I think it is the third week in November, after she takes Kady to see Miley Cyrus.

We are all feeling much better but the cough is lingering. I still have not let my brother come over but did amble down the street to make some body butter with Welby. It feels good but we did not put enough essential oils in it to counteract the smell of the shea butter. I can smell teh lavender in one and in teh other the cloves and orange stays on your skin but at first there is a strong hint of the shea. I think we need to work on the recipe a little more ;)
 
Hi gang, I have been MIA a couple of days and have not had time to read back and catch up on you all. (For that I am so sorry!)

Sending prayers :grouphug: for Glynis' Dad and Aimee's Mom. Marisa please take it easy...sorry to hear about the procedure, I hope it gives you some relief in the long run.

Things have been a little hectic around here. We paid for our Disney trip the other night so WDW here we come. Southwest came out with some good flight prices, so we decided not to drive and have booked our flights. Because we are no longer driving we changed our dates to 11/9-11/16, so I think this now means I will miss Lauren and the F&W. :headache:

The Dr. adjusted Ron's BP meds yesterday, so please keep your fingers crossed and say a prayer this gets his BP where it needs to be. It is down to crunch time for him to pass for his med card. :headache:

I hate our new insurance!!!!!!! I got a call yesterday that my colonoscopy was going to cost me $1,000 because they consider the medical facility an out of network location. I have had to change everything...and find a new doctor they approved to get it covered.

So enough of an update on what is going on here and my rambling. The kids are great. Luke is to smart for words. He has learned his alphabets recently and has gone peeps on the potty 6 times this week. I am not pushing the potty training to hard because of our trip. Emma is really getting a little personality. Her smile melts my heart. I took her to my hair appointment on Tuesday and she was quite the charmer. Can I just ask why when you show a hairdresser a picture you never leave looking like the photo??? I wanted something different and I look exactly the same! :scared1:

Nancy - Thanks for the update on Marisa. That surgery sounds rough and 12 weeks on crutches.:eek: My thoughts and prayers will surely be with her.
 

He's struggling with what I'm sure every college student struggles with, learning how to manage his money and his time.

If he can figure that out during the safety of the college years, he will do very well in the future. I still struggle with that sometimes.

My last (as in never again) dancing attempt ended with a trip to the dentist. On the bright side, I finally got over my fear of going to the dentist and now faithfully go every six months.

At least something positive came of it. Enjoy the last few days of work.

I have wanted to try that but just haven't had the chance yet. I have a gym membership through work and rarely use it and REALLY need to.

That zumba sounds right up my alley!

Give it a try! I am not a big gym person, just because I find most of the stuff really boring and I can't do weight training because the last time I did it, I injured a nerve in my neck. It can flare up at times still, so I'm not willing to risk doing more damage. I like to dance, so zumba is great for me, and it is a really good workout. I can see how it wouldn't be for everyone. I don't think it would put anyone in traction though. There are some women in my class who are much older than any of you ladies.

Also because our priest always yells "Gooood Morning Boys & Girls!" and today they were going to surprise him with yelling back "Haaaappy Birthday Fr. Mike!".

Chris should ask the allergist to do a blood test for the allergies, especially if there may be food allergies involved. It is far more accurate than the scratch test, and it is a lot easier on the kid. After her surgery, Alexis is probably a pro at getting blood drawn. Liam always gets tested using a blood test.

Like Nancy said, if the doctors can get Alexis on a plan, then she has the chance to grow out of the allergies. We are still hoping for that for Liam. Even if he never outgrows his egg allergy, he is much healthier since he has been off eggs. His allergist said that if he continued eating eggs, the allergy could get much worse and he could develop asthma.

I agree! There is a stomach bug going around, some virus that causes fever and headache, strep...it's ridiculous.

Thanks for the update on Marisa. I wish her lots of luck and strength.

Can I just ask why when you show a hairdresser a picture you never leave looking like the photo??? I wanted something different and I look exactly the same!

I think the hairdressers don't believe people when they say they want a change. Whenever I have asked for my hair to be significantly shorter, I always end up asking the stylist to recut it.

I'm glad the kids are doing so well, and I hope Ron's new medication helps!

Today Caili has her routine physical, and hopefully, she'll get her flu shot while there. I'm not sure what time we'll get back, but I am planning to make fish, corn on the cob and green beans.

I haven't decided on dinner yet. Maybe fish. I've been asked to go look at DD's business prospect this morning, so I'll think about dinner later. Say some prayers for Angelina, it looks like this might be happening for real! :wizard: Last night was leftover's of Nancy's yummy lentil soup. I made the naan but it needs work, too chewy.

I'm not Laura and Nancy... but yes, they do blood testing for all allergies. The labwork is more effective than the skin test. I don't know an allergist around that does the skin version of allergy testing anymore.



I am :banana: this morning! Today is my 90+10 but thanks to the Dis, I knew that the online booking opened around 2am central (3am eastern) so I just stayed up late last night. I really was nervous about booking Christmas Eve and Christmas Day - I have NEVER booked dining at the first available date but we have never gone during peak times.

Well, because of how my planned reservations were laid out we had 1 extra table service credit. I didn't want to "waste" it on a breakfast but because we are having dinner at 9pm on Christmas Day at CA Grill (my choice - want to view Wishes from there) mom said that I should consider a nice big meal in late afternoon. I jokingly said, what are the bets on getting LeCellier on Christmas Day and she said 'in your dreams!'

Now, I HATED LeCellier when we tried it last - horrible service, food wasn't good, dingy atmosphere, etc. But it gets rave reviews most of the time and let's face it, it's a great 1 TS credit.

So I plugged it in after I got my "must eats" and :eek: it was open for the time I wanted!

So here is what I got:

23rd for dinner: Captains Grille (mother says it's a hidden gem similar to GF Cafe, has anyone been? We wanted to stay close to Boardwalk)

Christmas Eve for dinner: Coral Reef (DH's choice)

Christmas Day late breakfast: Kouzzina (since we're staying right there)
Christmas Day late lunch: LeCellier
Christmas Day late dinner: CA Grill

I went to bed a happy camper! :woohoo:

Today we were going to see my BFF and her family but she just called and her oldest has thrown up 4 times in the last 2 hours so... that's a no-go. I already arranged to take the day off so when mom gets out of the shower we'll talk about what she wants to do. BFF was going to cook dinner at her house so now we'll figure something out here.

Sheryl - Your soup and naan look so good! I know you said the recipe for the soup was Nancy's. Is it posted? It looks like it would be good for a crisp Fall day! What about the naan. Is it hard to make?

Dinner last night was a partial success. The meatballs were a hit, but the sauce was not. The inside out egg rolls were also a success. I'll post the recipes and y'all can take 'em or leave 'em!

Dinner tonight is a spinach/Swiss cheese/egg pie. My kids call it Popeye Pie. It's fast, and that's what I need tonight, with Katie's parent/teacher conference and pack meeting back to back. Busy evening!!!
 
Inside Out Egg Roll

Heat a couple of tablespoons of sesame oil in a large wok or skillet (I didn't have sesame oil, so I used canola). Brown 2 cloves of minced garlic in the oil. If you want to add some chopped onions, do it now so they can soften (my kids don't like chopped onions, so I skipped this step and added onion powder later on). Add a whole package of coleslaw mix to the skillet and stir to coat with the oil and garlic. Cover and let it cook until it gets soft (this took me about 10 minutes). Once it's all soft, add rice wine vinegar and soy sauce to taste. To make it a complete meal instead of a side dish, you can add meat to it, as well.


Saucy Asian Meatballs

2 cloves garlic, minced
1/2 tsp. ground ginger
1 tsp + 1/4 C. soy sauce, divided
1 pound ground turkey
1/4 C. rice wine vinegar
1/4 C. tomato paste
2 Tbsp molasses
1 tsp. hot pepper sauce

In a large bowl, combine garlic, ginger and 1 tsp. soy sauce. Crumble turkey over mixture and mix well. Shape into 1-inch balls. Place in a 13 X 9-inch baking dish coated with Pam. Bake, uncovered, at 350 degrees for 20-25 minutes or until meat is no longer pink. In a large saucepan, combine the vinegar, tomato paste, molasses, pepper sauce and remaining soy sauce. Cook and stir over medium heat for 3-5 minutes. Add meatballs; heat through.

My family liked the meatballs plain. The sauce was a bit sweet for all of us, and I'm not sure that I'd know what to do to fix it. We piled the meatballs on top of the cabbage and ate it that way. I was going to fix rice, but thought this would be a healthier alternative. The kids ate the cabbage like it was going out of style, and they liked the subtle asian flavor of the meatballs. It was just the sauce they hated. I can't blame them, it was not to my taste, either.

Well the baseball saga will continue until next Tuesday. The try-out scrimmage was rained out today. He's struggling with what I'm sure every college student struggles with, learning how to manage his money and his time.

It is AGAIN rainy and cloudy and now very cold. I was such a woosy that last night I turned the heat on to "just take the chill off".

We have a Church Circle "picnic" here at the church tonight. So I have no idea what I will be eating for Dinner. All I do know is I don't have to cook it. And in my book that is GREAT!!

Nancy, that sounds like a serious surgery for Marisa! Hopefully it will help.

I ended up changing dinner last night and made a Moroccan egg tagine and some pita. It was really good. I have photos but haven't uploaded yet.

Tonight I am either making spaghetti and meatballs or brown rice with soy broccoli. It will depend on what time I get home.

Hi ladies - busy busy for me at work this week so I haven't had time to post. I have been trying to read to keep up.

Anyone have a clue what could be wrong before I make a doctor appointment…I noticed a little pain in my ankle on Tuesday but nothing extreme. It’s continued and I continued my treadmill yesterday and today. I’m now noticing my ankle is swollen, any thoughts????
 
Hey all...

quick check in...

Mom went to my other sister's house today...she was supposed to go tomorrow but I have been having chest pains (like muscle soreness...like I got hit with a bat) since yesterday so I called my sister and she came and got her and I went to the dr. My heart rate was about 90...the dr said if I didn't have a thyroid problem she would have sent me for tests. She gave me some meds and I have been resting a bit and feeling better. Anxiety is yest another symptom of hyperthyroidism and the fact that everything going on has been causing me stress.

I had a problem with a realtor being very pushy, A's dad second guessing his move after he told Andrew, landscapers here for 3 days, My Mom, the baby and the move...just too much right now.

My sister has agreed to keep my Mom until Jane gets home from vacation...we are going to Pittsburgh this weekend so Nancy (sister) was going to take her Fri - Tues but she said the rest of the time is fine.

I am just so sad that I can't take care of my Mother. She is at the point where she does not remember anything...waking us in the middle of the night cause she cant fing the bathroom, not being able to work the TV remote and calling me every five minutes to help her change the channel or volume...having accidents...I am rambling right now...just exhausted.

Dinner will be take out pizza and I will make a salad. It is just A and I. Tom is doing last minute running around.

Keeping everyone in my prayers.
 
On top of it all...while taking my script to the store, there was a spill and I slipped and fell right on my side. Needless to say, I had a breakdown.

Kathy, can it be arthritis? It can cause swelling...
 
Lauren :hug: Sounds to me like an anxiety attack. My chest gets like that when I have to make too many decisions in too short of time. Seeing your mom like this is also very stressful. Oh how I wish I lived closer to help out. If talking is helpful call me.

Kathy Since I'm paying doctor, it sounds like maybe you stepped on it wrongs. Rest, advil and some ice.

Tonight is Library so it is a quck dinner of burgers and fries.
