The What's For Dinner Thread - August '09(recipe index in OP)

Good morning. I haven't read back because I've missed a whole lot. I'm so sorry I haven't been a good friend to all of you. I don't really have an excuse except to say that I've just been in a real funk and I can't seem to shake it. I am ready for vacation and I hope the packing, etc will help, but I'm just not myself.

In my state, they have a right to fire you if they don't like how you look that day. I hope she can get the unemployment approved without much issue.

I have a retreat tonight/tomorrow so I'm about to start the marathon day of prep and shopping before the kids arrive. Dinner will be whatever fast food I grab while on the way to the camp.

Thanks for all the input on allergies & testing! :grouphug:

I just got off the phone with Chris, she is going to call the allergist office & ask particulars on the testing. She knew nothing about blood testing for allergies. In fact she was thinking about how to get a referral to a gastro doc. The school called her again this morning because Alexis was crying over stomach pain. She spoke to her surgeon who said to give it a little more time, if it didn't improve in a few weeks take her back to the ped. for a referral to a gastro. (The pedi. had to do the referrals)

But after her & I talking about it we are now thinking that maybe the stomach pains could be food allergies. We both think she has issues with dairy, while niether of us are giving her milk to drink, we haven't cut out her noodles with cheese or the occasional ice-cream.

Gretchen, It's quite understandable that you would be feeling rotten! I hope the upcoming vacation helps some. :hug::upsidedow

Nancy, I kind of figured the dentist would have come up with some excuse for firing her. I hope he doesn't fight her on the unemployment, but my guess is he will. Especially in a small business, one unemployment claim will affect his unempl. tax rates. I'll pray he lets it slide, knowing that he unjustly fired her. :flower3:

Vickie, The A I talk about most often is my niece 6 yo Alexis. I've taken care of her since she was born & her Mom Chris went back to work. She's the one that had the appendectomy. My daughter Angelina 27 is considering a business venture. Sorry I confused you with all the A's!

no real cooking for me tonight. We went to my DM for lunch and I ate like a P I G !!! Swordfish, salmon, flounder, carrots, green beans, twice baked potatoes, and salad. I am going to make a frozen sweet & sour chicken meal for DH. I picked him up a slice of chocolate cake from a local restaurant known for their desserts as a treat. I also picked up myself some of their almond biscotti...yum!

Dinner is going to be fresh shrimp. I went out to get my flu shot at Walgreen's & saw my neighbor selling shrimp. I've just got to figure out what to do with them now, that's non-fattening! I got on the scale this morning!:scared1:
 
We just got back from getting our flu shots and to do a little shopping at Costco. The line was not bad, I excepted worse. Alex let me go first what a chicken.:rotfl: The nurse though he was being a gentleman.:rotfl2:

Ann What a lunch. I need a mom like that.

Sheryl How about grilling the shrimp for a topping on a salad. I love grilled shrimp.

Vicki – I’m not going to be of much help on the burger recipe as we like just a good mix of ground meat seasoned with salt & pepper in our burger. Now for toppings we like grilled onions, blue cheese, really any kind of cheese, bacon, lettuce, tomatoes, pickles.

Lauren – Hope T-man had a good swim class!!! Have a good, safe trip tomorrow!

Ann – WOW, you lunch at your Mom’s sounded amazing!!!!!!

Sheryl - I love the chipotle grilled shrimp wrapped in turkey bacon – yummo!(It’s a Guy Fieri recipe)

Change of plans for Kyle, he had to schedule a tutoring session for late this evening so he'll be coming in tomorrow morning and spending the day with us. I guess I should be glad that he's thinking of his grades before anything else.:goodvibes

Does any one watch Chefs vs City. I love that show it's on foodnetwork. Kind of like Amazing Race but for the foodies.

Join the club ,my right shoulder is stilling botherin me, and no I am NOT going to a doctor. I burned my left arm getting something out of the oven yesterday. I tried to burn my foot tonight. I think I should pack it away and go to bed early so I can't hurt myself anymore today.
 
Vickie -- I am not much help in the burger department. I just season mine well with salt and pepper, then grill to medium rare. The toppings vary. I've topped them with guacamole, carmelized onions, bacon, various cheeses, etc. My standard is mayo, lettuce, tomato, onion and cheddar cheese.

I didn't make the linguine and clams tonight. I was too stressed out after skating. Caili had a very scary collision with another much bigger girl. Both of them are fine...Caili has a small cut on her leg...but it could have been so much worse. Someone was watching over Caili tonight. :littleangel:

Anyway, I just had some of the leftover corn chowder from the other night, and I made the kids baked flounder, buttered noodles and baked apples. The kids went apple picking last weekend and we have a lot of apples!

Friday is like an open house for lunch at my parents. It all just wasn't made for Luke & I. It ended up being my parents, Luke, Emma, two of my brothers, my nephew and I. It was enough food for a small army...lunch a la Becky style!

DM use to have to cook for 11 people in the house. So she does not like cooking for just two now.

We just had sandwiches tonight, didn't really feel like going out. We'll probably go out tomorrow night for dinner before Kyle heads back to Baton Rouge. I made Robin's Ranch chicken today for him to take back, it's one of his faves. Tomorrow I'll make a dessert of some kind for him.

Sheryl - my DIL is lactose intolerant and has some nasty stomach issues from dairy. She takes lactaid which is an over the counter med right before she eats any dairy product and it works well for her. I hope that maybe it will be that simple for Alexis.


They're all broken down here. Really. They add at LEAST 10 pounds.

Laura - how frightening; glad that Calli is okay. I do my best cleaning when I'm angry. DH knows to just go hide at that point :rotfl:

Vicki - I don't know that we ever do burgers the exact way each time we make them. Its usually ground beef, salt and pepper, sometimes onion and/or garlic powder. Sometimes we add an egg and some bread crumbs, and sometimes we throw in some worchestershire sauce.


I have to go into work for a little while today. Since I live outside of NOLA and have a 45 mile trip, DH will come with me and we'll have lunch in town.
Since we'll stop at the grocery on the way back home, I'll probably decide then about dinner.
