The child is absolutely obsessed with MJ, we are getting there early enough so that we can get seats so he can get up and dance. :rotfl:

Here too. They aren't closing schools here in town, but I've heard it is widespread in two of my town's elementary schools (not ours yet) and one of my neighbor's little boy has it from his preschool.

Your dinner from last night sounds so good. Enjoy dinner with Welby tonight. One of the farms near me slaughters some of their animals. These are animals they let you come pet and feed every weekend. Like Robin, I don't think I could meet an animal and later eat it.

Hey All, My computer is still acting up so I am making this quick...I keep getting booted. My IT guy relocated to PA so I cant get it fixed.

Riley got a good report at the dr. He is still blind but the rupture and infection are healing. He should not have to lose his eye. He is still on meds, has to wear the collar and eventually have his eye lashes removed. I will also have to put drop in the rest of his life. Thank you all for your good thoughts.

The meatloaf in the crock pot came out very good. I used this recipe as a guide. I used some breadcrumbs and oatmeal and more onion, garlic and worchestershire. It really is going to be great on busy days. I only have a handful of crock pot recipes that we like.

Home from the movie, it was very good! Kind of sad too thinking that some of the footage they used was just before he died. We were the first ones in the theater. When we got there they had a long line of people waiting to get in to the one theater but we walked right in to ours. :confused:

We sat in the second row of the second set of seats, for some reason he didn't want to sit in the first row. There was lots of singing along, clapping and cheering.

If anyone goes to see it make sure to stay until after all of the credits, there are a few things after them.
 
I watched Oprah today and it seemed like the MJ movie got rave reviews. Some of his family hasn't even see it yet because they say it's too early.

Probably because they aren't getting anything from it. Some of the Jackson family are exploiting him and don't want anyone else to make anything off of him.

Morning all, hope everyone is well.

My shrimp scampi came out really well last night, I even took a picture- but that didn't come out well. Then of course the battery died on the camera, but I'm glad it happened then instead of on halloween.

Lauren- What a relief on Riley, you must be on the top of the world. I'm sure he'll get used to the drops in no time. My old dog used to demand his morning pills, of course one of them came wrapped in cheese.

Laura- The jellyfish costume came out awsome. I think it's my favorite costume she's ever had. I'm going to try to figure out how to post pictures, not only did it come out good, it was really easy. Caili's skating costume looks so pretty.

Sheryl- It's just my opinion, but I will never eat at Chef Mickey's again. When I was little it was great, but we've been two times the past few years and I'm done. It's so loud and big, and I think every rude person in Disney eats dinner there. The food is awful for the price. We really like Crystal Palace, we go there for lunch. (I'm to cheap to pay for dinner prices) This trip I'm going to try really hard to eat at all new places. We are going to WCC again though, I though it would be fun for my husband's 30th birthday breakfast.
 
Good morning, everyone!

It's a very chilly morning, here, but at least it's not snowing!!! Today I have to go to the library, since I never did that yesterday. Then a stop at the grocery store, so I guess I'll have to decide about dinner before I go. I'm thinking some type of casserole.

We went to a church Fall Festival last night, and it was so much fun! All the teenagers had put together a carnival for the kids. There were about 10 booths with games, and no one walked away a loser! My kids were thrilled!!! There were also food booths where kids could get churros, nachos, cotton candy and apple cider. Mary was amazed that she could have these things without having to pay for them. Her comment was that it was "almost as fun as Disneyland." Tables were set up for the parents to sit and watch the fun. It was a really enjoyable night!

Lauren - I'm thrilled with the news about Riley! Even better that you don't have to cancel your trip. I hope this lifts some of the stress off you!

Becky - your picture looks wonderful! It's making me want to try some German food, and that's not something I would ever think of on my own.

Sheryl- Here's the spoon bread recipe, it make a ton. I just measured the pan I bake it in and it's 14 inches. It reminds me of a paella pan. It looks really impressive though at Thanksgiving dinner.

Crystal Palace Fire Roasted Spoon Bread
1 fresh poblano pepper minced
1 yellow pepper, small, diced
1 red pepper, small, diced
1/2 red onion, small, diced
2 1/2 cups roasted or grilled corn
1/2 oz. butter
1 TB sugar
3/4 tsp. cayenne pepper
3/4 TB black pepper
2 tsps. kosher salt
1 quart milk
1 quart heavy cream
4 cups corn meal
4 egg yolks
1 1/4 cups buttermilk
4 egg whites

1. In a pot over medium heat, sweat peppers, onions and chilies in butter.
2. Add spices and stir to incorporate.
3. Add milk and cream. Bring to a boil.
4. Reduce heat. Slowly whisk in corn meal. Cook for 5-10 minutes or until it thickens.
5. Remove from heat.
6. In a mixing bowl, whisk together egg yolks and buttermilk.
7. Temper yolk mixture and add back to base.
8. Completely cool corn meal mixture in the refrigerator.
9. Remove from refrigerator and break into small pieces. Leave at room temperature.
10. Whip egg whites to soft peaks. Fold into corn meal mixture and place in a baking dish.
11. Bake 30 minutes at 350 degrees or until golden brown.
 


Me too! I sour milk when I don't have buttermilk. It works as well I think.

We were not crazy about WCC. I know that it is subjective but we thought that the food was mediocre, the service slow ans the noise level was way louder than we liked. It was weird noise, I can stand noise but it was ike one big din :confused3

I don't think our town will close the schools. IMO, it really does not make sense, if the kids do not stay home what purpose does closing schools make? Last year the schools stopped closing because a lot of the kids just went to the malls.

I never visit or pet any of the animals that are going to be slaughtered. Buddy used to raise beef and pork. I would visit and pet the replacements but never the animals raised for food. This was one discussion that Welby did not win, she wanted to keep all of the animals and her DH finally put his foot down, she keeps adding hayburners and he keeps adding hay fields.:rotfl2:. Funny thing though, her Dad's GF is a vegetarian so she had support but :confused3. Her DH is like Buddy, really careful about what his animals ate and really compassionate about the living conditions and cleanliness so they know exactly what the meat contains when they are feeding Nola. I did tease her DH though, Nola loves the "girls" (chickens) and goes crazy when she is near the rest of the menagerie so I told him I would bet the house on how this plays out after she names them all :lmao:

As always, that costume is lovely! You spend a lot of time making sure that Caili has beautiful dresses to skate in. I imagine that the dress is part of that magic she has on the ice.

Comfort Food!

Dinner was good last night. She baked cookies for Buddy so he was happy!

I took turkey cutlets out for dinner. I am not sure how long we will be gone this afternoon so I'll figure out how to cook them later. I do have chicken poaching for a chicken something soup for tomorrow. I also am going to make an Italian meatball soup too. Gail is having an assortment of soups and sandwiches for her Halloween party tomorrow night. She has a kids area set aside so that they do not get bored so I am going to make that green slime punch and the silly witches hat that the kids like. I wanted to make the spider cake but I have not been able to fund any more black food coloring paste so I think I am going to let that go. Maybe I'll make some chocolate caramel apples and decorate them with Halloween sprinkle things.

been busy making calls to finalize everything for our trip. Car rental, pet sitter, checked in to the BC...have to do some last minute shopping later and pack.

Maria, what are your December dates? Laura and I, along with Liam and Caili and John (and Greg if he can get leave) are going in December too.

Sheryl, I am not a big fan of Whispering Canyon. It is really, really noisy. We ate there for both breakfast and dinner. Breakfast was OK, nothing special. I remember that the eggs were weird...like they were powdered eggs? Dinner, the skillet for the table was kind of dried out, and the food just was not very flavorful also. I would not go back. If you are staying at VWL, what about Artist Point? That's one of my favorites.

Dinner tonight is probably going to be a shrimp-white bean-arugula ragout with baguette and salad. If I get home too late to make that I'll probably just do spaghetti and meatballs since I have sauce and meatballs in the freezer. I am not really in the mood for pasta though.

Marilyn ~ I am so glad you had a great time last night. You are such a great person with kids. You just amaze me.

I have to laugh at all of you talking about eating your animals. I sit here and drool at all of your seafood that is so readily availabe to you all and am very jealous. It is so funny to be in different parts of the states, and it really does make a difference in the way we eat and fix dinners. We live on a farm and have beef, chicken, pork, and lamb stocked in our freezers. But never get fresh seafood. Your fish markets just amaze me.

I have to tell you all a story that happend when Matthew was small. We bought our farm when Matthew was just 4. Doug has always lived on a farm but I was a city girl. He couldn't wait to get back to the country so we finally did. As soon as we got settled we bought 2 calfs. One brown and one black. Matthew named them Chocolate and Carmel. We bottle fed those babies and then grained and hayed them till they got big. They were buddies. One day Doug came in and said it was time to take them to butcher. Well ladies, I am a small but mighty woman and I got right up in Doug's face and said NO WAY!!! Aint gonna happen!! Anything we name we are not eating. :eek: Well let's just say that the cows went to the sale and we bought our meat that year. But now I am not allowed out in the pens with the calfs. :rotfl2: :confused3

It is raining/snowing again this morning. I don't think I will ever see the sun again. My (and everyone elses) mood, depends on the sun. I never thought that, until I haven't seen it for over a week. Oh my!!

I so enjoyed my day home yesterday. I miss staying home. I love my job, but I really miss being at home. I was able to get my recipes in order. That is a great feeling and I also found some I can't wait to try.

:lmao::lmao: Buddy calls me a city girl too :lmao: He is all country boy and totally jealous of your farm. I tell him about your animals and he is always asking me how do they do this? How do they do that? His latest question is to fund out your feeding techniques. How much grain to grazing time to silage.............it goes on and on :dance3: His Mom and Dad had a dairy farm in a neighboring town adn when he was a teen they sold it to a developer. Now this was before land had any value so they got not much and there is now a huge apartment complex there. His childhood home is still there though and he drives by it several times a day in his travels. It makes him a little sad.
