pizza for us - I was supposed to have federal jury duty in Phila. but only had to be there yesterday :cool1: so I did not have a dinner plan

today is our 14th wedding anniv. but we are celebrating in NYC this weekend :goodvibes
 

We are having leftovers tonite. I have plenty in the fridge and want to use some up.

Tonight we are having a huge pot of chicken provencal soup. I got the recipe from 30 Minute Meals. It is so good and makes the house smell yummy!!

2 medium carrots, peeled and chopped *I actually buy a one pound bag, half the carrots, then chop them)
2 cloves garlic, chopped
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 medium zucchini
1 small to medium red bell pepper, seeded
1 medium yellow skinned onion, peeled and halved
Salt and pepper
1 tablespoon herbes de Provence, available on spice aisle or, 1 teaspoon each dried sage, rosemary and thyme
1 1/2 pounds small red skinned potatoes
1 cup dry white wine
1 (14-ounce) can diced tomatoes or coarsely ground tomatoes ***I use tomato sauce instead of diced or crushed tomatoes***
1 quart plus 1 cup chicken stock, available in quart and 1 cup paper box containers on the soup aisle
1 pound chicken tenders, diced
1 small jar black olive tapenade, 4 ounces, found with Italian foods or on condiment aisle
2 tablespoons chopped flat-leaf parsley

Crusty bread, to pass at table

One medium soup pot preheated over medium high heat. While soup pot heats, chop carrots into 1/4-inch dice, then add garlic, and stir to coat in extra-virgin olive oil. Chop and drop in the zucchini, pepper and onion next, 1/2 inch dice. Season all the veggies with salt and pepper and herbes de Provence. Cook the veggies together 5 minutes. While they cook, cut potatoes into thin wedges. Add wine to vegetables and reduce a minute or so. Add the tomatoes, cut potatoes and stock to the pot, cover the pot and raise heat to high. Bring the stoup to a boil, then add cut chicken and simmer 8 to10 minutes until potatoes are just tender and chicken is cooked through. Serve stoup in shallow bowls and stir in a rounded spoonful of black olive tapenade at the table. Top soup with chopped parsley and pass crusty bread at the table for dipping and mopping.

I am making cornbread to go with it. It sounds like a lot of work, but it isn't.

It's an easy one tonight! Chicken Cordon Bleu (frozen), rice pilaf (boxed) and broccoli in white cheddar sauce (also frozen). I'm having broccoli and cheese stuffed chicken breast (frozen), but nobody else here likes that. My son has a late afternoon appointment so who knows how long we'll be- I needed easy.
 
DFi is coming home today from France and HATED the food so he is looking forward to me cooking so I will be making:

Glynis' Pot Roast
Mashed Potatoes
String Beans
and Maybe Red Cabbage (I love Red Cabbage with Pot Roast!)

Tonite we are having spaghetti with sweet sausage and turkey meatballs. Garlic bread and maybe a salad.
 
I have to go into work tonight, so it will be something quick and easy for DH and the kids. Probably spaghetti and meat sauce

He went to France and hated the food?? We are planning a trip to France BECAUSE of the food! Maybe you'll have to tell me where he went so I can avoid those places. :)
 
We might be having ice cream for dinner. DS's stupid school changed the Honor Roll assembly from the normal morning time to 4pm. Then after the ceremony is an ice cream social, by that time it will probably be around 5:30pm. Not a great idea, in my opinion. Ice cream at dinnertime, what were they thinking? :confused3 The kids will probably like it though. :rolleyes:
 
A could see a card carrying meat and potatoes American man not liking the food in France. ;) Especially, if picky. I would love to plan a trip to France but I fear my husband would starve to death. ;)
 
I'm trying out the Paula Deen pot roast recipe today. I left it cooking in the crockpot this morning. DH is working a bunch of OT this week, the kids all have CCD tonight (at different times, of course) plus athletics right after school so I needed something that would basically cook itself! It's supposed to start raining this afternoon so I'm looking forward to going home and smelling the roast!
 
Tonight is Mozzarella Beef Roll Ups. It's easy and my kids like it! It's freezing here, so having this will be nice and warm.

My DD spent some time in Paris when she was 17 and ate bread and drank water :confused3 . The first day she was offered les escargots and that was the beginning of the end :rotfl: .
 
Tonight we're having an old favorite:

SHRIMPLY DELICIOUS RICE

¼ cup cooking oil
½ cup chopped onions
½ cup chopped celery
½ cup chopped green pepper
1 cup raw rice
1 lb peeled and deveined shrimp
2 tsp salt
½ tsp black pepper
¼ tsp cayenne pepper
2 ½ cup water
¼ cup parsley

In a large saucepan, preheat oil. Add onions, celery and green pepper, sauté until vegetables are soft. Add rice, shrimp, salt, black pepper, cayenne pepper, parsley and water. Stir, bring to a boil. Reduce heat to a simmer, cover and cook for 20 to 30 minutes, stirring occasionally.
