ETA: Does anyone know where I can find silicone baking mats??
 
Tonight will probably be leftovers--got lots of spaghetti and meatballs, and chicken reubens left.

Lindsay--I think you can find silpats at about any specialty cooking store--I know Williams Sonoma carries them, also might try Sur la Table--I suppose Bed, Bath and beyond would have them as well

I saw them last week at Bed, Bath and Beyond. They had traditional silpat as well as pink ones for Breast Cancer awareness in a special display. I almost bought the pink ones, even though I already have silpats.

Dinner tonight is Moroccan Chicken with Preserved Lemons. I still have some Preserved Lemons in the fridge, so I wanted to use them. Hopefully it's as good as the shrimp made with them was. I'm not sure about a side dish yet, though.

I was just looking at them at Walmart the other day.

We're having spaghetti/meatballs, broccoli and marinated cucumbers.
 
We went to Chili's for a late lunch and I am stuffed. Dinner later tonight will be brownies that we picked up at the Fresh Market and milk! :thumbsup2

Tonight we're going out - I think Chinese but tomorrow I've got plans to do some cooking for the week. I'll be making white chicken chili and stove top Chinese pot roast. Both recipes are from the latest copy of Cooking Light Magazine.
 
(made with ground beef, stove top italian roasted garlic stuffing,eggs,bbq sauce, onion, fresh basil, oregano,and garlic)..
Along with that we are having homemade garlic mashed potatoes, fresh cabbage from our garden..
And for dessert..in the oven alongside the meatloaf is a big pan of apple crisp..to be served for dessert warm with either ice cream or whipped cream..
YUM..I can't wait for dinner!
 
Chinese Pot Roast sounds really good. Let us know how it goes and post it if it is yummy! It sounds like it has major potential.

We're having Chicken Enchiladas tonight. Yum!
 
Grilled steak, parmesan roasted potatoes, and a tossed salad.
 
We ate out at a Chinese Buffet. Yea! Stuffed and happy. :)

The breakfast bake (pg. 180) I made the other night was decent. I think I liked it more than everyone else. LOL. The next time I make it, I think I'll have biscuits on the side and top it off with more shredded cheese. I'll have to tweak it some more. It wasn't wow. But it was good and filling. Oh well. Thought I'd give you guys an update.
 
3 weeks until we leave for WDW!!! :cheer2:

We are going out to lunch with my IL's to Chili's today, so tonight I am going to make us a small homemade pizza :)

Since the male half of our family is sick--I might take DD out for dinner--or maybe something really easy--just heat and serve
 
DH's birthmother is passing through town this afternoon/evening. We're going out to dinner with her tonight. She's vegetarian and kind of choosy about what she eats, so it's easier than cooking for her. So I get a day off. :thumbsup2
 
I'm using the crockpot. We're having chicken and gravy with diced potatoes & green beans. I'll bake some biscuits just before we eat. I think I'll make a vanilla pudding & Cool Whip pie for a light dessert. :)
 
I've got my version of Osso Bucco in the crockpot, will fix pasta with pesto sauce and roasted cauliflower to go with it! YUM!!
 
Tonight is a pork roast with lime cola glaze, mashed potatoes, and not sure what else....maybe some apple crisp for dessert.
