So, as I was putting the pot roast in the crock pot- I saw the split chicken breasts I just bought for .88/lb and thought Why couldn't I do this with chicken except instead of brown gravy mix use chicken gravy mix? I might even use a whole chicken.

Does anyone else think this sounds good???

Just found this thread- glad I did! I'm making the Ritz parmesan chicken tonight! Sound good! :stir:

I think I'll do either mashed potatoes and gravy or some kind of side dish pasta with it, and some kind of veggie.

I LOVE the instant pasta packets you can buy. I know Lipton is one of the brands, Lipton side dishes. They have all sorts of things. Lately, I've also been using the Uncle Ben's rice packets. You microwave them for 90 seconds and done!

I would like to try it for chicken thighs as well. I bet they would be so good! Let us know, please.

I am going to try it for beef stew this winter.
 
I made ,I think Glynis's pot roast yesterday. I'm going to use the leftovers today to make Chili con Carne with it.

Ritz Parmesan Chicken

4 boneless, skinless chicken breasts (I remove all the extra fat)
1/2 cup grated Parm cheese (pizza cheese)
1 1/2 "rolls" Ritz crackers, crushed (you can also use the low-fat ones)
1 stick melted butter or margarine

Preheat oven to 350.

Combine the cheese and Ritz crackers in a bowl. Dip the chicken in the butter, then coat well in the cheese-cracker mix. Place in a 9x13 casserole dish that has been sprayed with Pam (or whatever you use). I sprinkle what is left of the crackers on top of the chicken. I usually cover this in foil because your crackers can burn if you aren't careful. Bake for about 30 minutes or until chicken is done.

*You will NOT need to salt the chicken because of the crackers. I add some pepper to my cracker mix.

*I have also sprinkled some thyme on the chicken as well*

Forgot to mention, that I made this the other night. It was just dh and myself so I only made a few chicken tenders and I cut the recipe by about half. It came out delish - very tender and moist, too. :thumbsup2
 
LOL Well I was telling the butcher about it today and he said " hmmmm youll have to let me know how that goes"

It smells heavenly though!
 
I'm making crockpot beef tips and noodles for tonight. DH is doing some consulting after work, so I'm not sure what time we'll be eating. I thought the crockpot was the safest way to have dinner in a flash when everyone arrives home hungry.
 
DH just left to (finally) get the propane tanks filled. I can grill again, WOO HOO! I just bought some McCormick's Rotisserie Chicken Seasoning that I'm going to sprinkle on bone-in chicken breasts. I hope it's good. Not sure what I'm going to make for sides yet.

Tonight is leftover Chili Tots for us! We are leaving early tomorrow morning for the weekend, so I want to empty the fridge as much as possible. I will be spending the evening making peanut butter and banana scones, and pumpkin scones for a breakfast in the car with the kids. Wish me luck!
 
I had some of the Purdue baked chicken cutlets topped with leftover cherry tomato sauce and mozzarella and romano cheeses with some homemade low fat garlic bread and a salad.
 
Glynis--Could you post your recipe for the pumpkin scones??? I'm always up for a new scone recipe, and those sound delish! :goodvibes
