For dinner tonight we had meatballs in plum sauce, mashed potatoes and cranberry coleslaw. I am sure many of you have tried the meatball recipe that combines grape jelly with chili sauce and my recipe is a take on that, only I substitute plum jam for the grape jelly.

It is supposed to snow in Minnesota beginning tomorrow. I can hardly believe it. My body is starting to crave winter food. I think I might have to pull out some soup recipes as they are always tummy-warming..

Tonight I'm trying a new recipe. It's a "Campbell's" soup recipe called Cheesy Chicken & Rice Casserole. If it comes out good, I'll post the recipe if anyone is interested! :)
 

Looks like tonight will be either pizza or spaghetti and meatballs (I already have them made and frozen).
 
Tonight I am making parmesean chicken--not the kind with the tomato sauce and cheese. Instead, for this recipe you pound thin chicken breasts, marinate in olive oil, lemon juice, and thyme, then coat in a mix of parmesean cheese and breadcrumbs, saute until browned and cooked through, and then cover the chicken with an arugula salad tossed in a lemon vinaigrette, and shave some parmesean cheese on top. It's really quick and tasty.

This sounds yummy! Do you use certain amounts of ingredients or do you just eyeball them? TIA!!
 
Tonight will be a pork tenderloin in a creamy herb sauce, rice pilaf and roasted veggies, if I can get it all cooked and get my butt to the hospital!

The idea is pretty forgiving, so you don't really need to measure. This time, for the marinade, I used 3/4 cup olive oil, the juice of three lemons, 1 heaping tdsp. kosher salt, about 1/4 cup chopped fresh thyme, and about a tablespoon of coarsely cracked pepper. That is probably enough marinade for about 4 lbs of chicken. (I always make too much marinade!)

For the breadcrumbs, I do about 2 parts breadcrumbs to one part parmesean, and season with salt and pepper. I also dip the chicken in beaten egg before applying the crumbs.

I saute the chicken in olive oil.

I do have a panini maker--it is Flama brand. I have to confess though, that right now the panini maker is languishing in "Kitchen Purgatory," a large cabinet in my storage room that contains all of the kitchen gadgets I thought I really, truly needed, that actually get used about once a year, if that.

To make my panini now, I just heat a large, heavy bottom skillet, and weight the sandwiches down with a cast iron skillet while they are cooking. It is quicker and also simpler cleanup than the panini maker.
 
This weekend is the state teacher conference, so the kids are out of school Thurs, Fri, and Monday. We've decided to take an impromptu trip to visit my parents. So, I'm busy doing laundry and packing. Dinner will be really easy! Chili Tots, steamed broccoli and ice cream for dessert.
 
We're going to have a breakfast for dinner. I'm going to make a casserole (by the seat of my pants). It's going to be a sausage, egg, cheese, & potato casserole. We'll have some biscuits and fruit to go along with it. I'll let you know how it turns out! :)
 
I have to share this with my WFD buddies. As you may know, my Mom has been in the hospital since Saturday evening. It's been quite hectic since, as I'm balancing being at the hospital and taking care of the family, not to mention trying to work from home. Monday night I was exhausted and we did fast food, which I very seldom eat, therefore, I paid for it ALL night long. I swore after that, that even if it meant getting up at 4 AM, I would fix my family a meal! I just received a beautiful bouquet of flowers from DH and DS with their words of gratitude to "Superwoman". I'm in tears right now, I'm sure you can all relate. We do these things for our families, as a labor of love and don't expect anything in return.

P.S. The flowers are going to the hospital tonight!! That way Mom will have a smile on her face too! :cloud9:
