It's been quite hectic since, as I'm balancing being at the hospital and taking care of the family, not to mention trying to work from home. Monday night I was exhausted and we did fast food, which I very seldom eat, therefore, I paid for it ALL night long. I swore after that, that even if it meant getting up at 4 AM, I would fix my family a meal! I just received a beautiful bouquet of flowers from DH and DS with their words of gratitude to "Superwoman". I'm in tears right now, I'm sure you can all relate. We do these things for our families, as a labor of love and don't expect anything in return.

P.S. The flowers are going to the hospital tonight!! That way Mom will have a smile on her face too! :cloud9:

I do have a panini maker--it is Flama brand. I have to confess though, that right now the panini maker is languishing in "Kitchen Purgatory," a large cabinet in my storage room that contains all of the kitchen gadgets I thought I really, truly needed, that actually get used about once a year, if that.

To make my panini now, I just heat a large, heavy bottom skillet, and weight the sandwiches down with a cast iron skillet while they are cooking. It is quicker and also simpler cleanup than the panini maker.

Gotcha. I saw Giada make a wonderful looking panini and she mentioned doing it your way. It did seem a lot less complicated than the panini maker she used. Thanks!

Citrus Garlic Shrimp:

1/2 cup olive or vegetable oil
1/2 cup orange juice
1/3 cup lemon juice
3 to 4 garlic cloves, minced
5 tsp grated lemon peel
4 tsp grated orange peel
1 tsp salt
1/4 tsp pepper
1 pkg (1 lb) linguine
1 lb uncooked medium shrimp, peeled and deveined
Shredded Parmesan cheese and minced fresh parsley

In a blender or food processor, combine the first 8 ingredients; cover and process until blended. Pour into a large skillet; heat through. Meanwhile, cook linguine according to package directions. Add shrimp to garlic mixture; cook for 5 minutes or until shrimp turn pink. Thicken if desired. Drain linguine; top with shrimp. Sprinkle with cheese and parsley. 6 servings.

This is delicious - very light - add garlic bread and a salad. My entire family loves this! I have trouble finding uncooked shrimp, so I use cooked shrimp and just cook it enough to heat it through. This meal is ready in 30 minutes or less!

Tonite we are having my version of spaghetti and meatball stoup, crusty bread and apple pie. I am still fooling around with pie crust, and now I am on a mission! My DGD got fed up this morning, she is my helper and after she helped me with the dough and roll it out again and again she suggested I buy the package. Out of the mouths of babes.....:rotfl2: .

BTW the pumpkin pie came out okay, filling really good, crust okay.

No question is silly!! It stands for Extra Virgin Olive Oil...
 
Glad to be back on this thread but not so happy about having to cook again after a week of free dining! ;)

We had chili & cornbread tonight. Hit the spot on a chilly day!
 
I made tortellini soup and chocolate cake for dinner. Everyone liked it.

I don't make pie crust. I almost always just buy it in the freezer section. But somewhere I have my grandmother's piecrust recipe and it was really good. If I can ever find it, I'll post it here.

That's where I get my pie crust, too! I like to use the kind you can unroll into your own pie plate, so no one knows you didn't make it. :teeth:

Seriously, though, I've tried to make crust, and for the sweat and aggravation, I figure it's cheaper for me to buy 2 crust for $1.94 then it is for me to do it from scratch. My homemade crusts always ended up like concrete.

:rotfl: :rotfl: I cannot understand why something that looks so easy has turned my kitchen into a flour factory! Now this mission has become personal! They are not good, but they are getting better. Oh, well.

Last night the spaghetti and meatball stoup was a hit with just enough left for lunches for DD and DSIL. Today I have to do something with Easter kielbasa and a ham steak. I think I will have a veggie and some fried potatoes, with onions in vinegar. My DH is Lithuanian and in his family there would be fried potatoes and sour cream, sauerkraut, maybe cucumbers in a sour cream dressing and onions in cider vinegar and cracked black pepper. Really good ethnic food, but I can feel our arteries clogging just thinking about it.

We ended up having sandwiches while my breakfast casserole was baking. The time got away from me. It sure smelled great! :crazy: Basketball practice was quickly approaching. Didn't want to be late. Here's the recipe:

Annie's Sausage & Egg Bake

Grease a 9 x9 pan. Pre-heat the oven to 375. Layer the bottom of the pan with hashbrowns (I used 3 small potatoes I had and grated them). For the middle layer mix 6 eggs, a splash of milk, about 1 cup shredded cheeses, cooked crumbled sage sausage, sauted onion, yellow and orange peppers. Pour over hashbrowns. For the top layer mix 1 cup Bisquick, 1/2 cup milk, 1 egg, and about 1/2 cup shredded cheeses. Pour it over the egg mixture. Bake for about 45 minutes.

So tonight I'm reheating that baby! I'll let you guys know if it was a hit! :)
 
Baked Chicken Reuben here! :thumbsup2 DH doesn't care for it :rolleyes: but he's out of town--so I get to cook what I want! :cool1:

Tonite's dinner is done, so that I can spend time with Mom at the hospital - Chicken Marsala, pasta and lemon/parmesan broccoli!!
 
We're having something a little different tonight...I'm making vegetarian ma po tofu, steamed baby bok choy, and rice.
