Nope. It's a new recipe I'm trying for the first time tonight. I'm using my family as guinea pigs. If they like it, I'll post the recipe later tonight. It smells really good!
 
I copied the coffee cake recipe for later. I LOVE coffee cake and this one sounds yummy!

Tonight we had BBQ shredded beef on hot biscuits with coleslaw and cheesy potatoes (frozen stouffers). The beef was really good and it made a lot so we have left overs for poprawina!
 
We had pork chops, cheese potatoes and peas. I'm giving the crockpot a rest since I'll be using it a lot in the next couple of weeks. Today was a rushed supper too though. I'm trying to shampoo the carpets because DH's birthmom is coming to visit this weekend.
 
My husband is having is monthly geek meeting tonight and won't be home until late, so I will probably just have some soup or something. Easy night, woo hoo!

Chili here tonight. Maybe with a cornbread topping. I have to figure out how to cut Nigella's recipe way back! The kids will have left over pulled pork (which was as good as Smokey Bones I might add! :thumbsup2 )

tonight is going to be chili dogs and fries. DH is out of town the rest of the week, so it will be a challenge to find something that I can fix that DD will eat--most nights she just doesn't eat dinner b/c I refuse to cook more than one meal for dinner--I just don't want LOTS of leftovers.
 
I'm feeling a bit under the weather today, so I am opting for comfort food tonight.

Baked Potato Soup

2 Medium Potatoes (about 2 cups chopped)
3 Tablespoons Butter (or whole stick)
1 Cup Onion, diced
2 Tablespoons Flour
4 Cups Chicken Stock
2 Cups Water
¼ Cup Cornstarch
1 ½ Cups Instant Mashed Potatoes
1 teaspoon Salt
¾ teaspoon Pepper
½ teaspoon Basil
1/8 teaspoon Thyme
1 Cup Half and Half

Garnish:
½ Cup Shredded Cheddar Cheese
¼ Cup Bacon, cooked and crumbled
2 Green Onions (green part only), chopped

Preheat oven to 400 degrees and bake the potatoes for 1 hour or until done. When potatoes have cooked remove them from the oven to cool.

As potatoes cool prepare soup by melting butter in a large saucepan and sauté onion until light brown. Add flour to the onions and stir to make a roux.

Add stock, water, cornstarch, instant mashed potatoes and spices to the pot and bring to a boil. Reduce heat and simmer for 5 minutes.

Cut potatoes in half lengthwise and scoop out contents with a large spoon. Discard skin. Cut baked potatoes to make chunks that are about ½ inch in size.

Add chopped baked potato and half and half to the saucepan, bring soup to a boil, then reduce heat and simmer for another 15 minutes or until it is thick. (Can add the remaining stick of butter at the end.)

Spoon about 1 ½ cups of soup into a bowl and top with about a Tablespoon of shredded cheese, ½ Tablespoon of crumbled bacon, and a teaspoon or so of chopped green onion.
 
It's looking like leftover pot roast tonight. We had dinner at my mom's Sunday night and she gave us plenty to take home.

Here's a question that make me look silly but...how do you make a chilidog? Just pour chili over a hotdog? I've never had one before.

We also have the option out to add shredded cheese and diced onion if anyone wants that on it too.
 
We are having Lindsay's Crockpot Italian Chicken...YUM!

I have a roast marinating for tomorrow. This is my Mom's recipe. I make this pot roast on the stove it comes better that way (crockpot is just OK)
...sear on all sides in EVOO, then add the marinade and more water if needed and cook on low for 2 - 4 hours...make a gravy from the marinade...this is a good one!!!

Mom's Pot Roast Marinade

3/4 cup water
1/2 cup soy sauce
2 TBS sugar
1 TSP thyme
1 clove garlic crushed

Pierce roast and marinate for at least 8 hours. Cook as above...makes a great gravy!!!!

Trying to get dinner done now so that I can spend the afternoon with Mom at the hospital. We're having Swiss Steak, scalloped potatoes and corn.
 
Today is what Winnie the Pooh would call a "blustery day." It's cloudy, windy, and drizzly! So, we are having cold weather food: Salsa Chili with homemade cornbread and green beans. Yummy!

Last night's Pizza casserole was really good! DH and I loved it, and 3 of my 4 kids did, too. DS is picky and doesn't really like anything. He ate his required 6 bites, and then was done!

Here's the recipe:

Pizza Casserole
3/4 C. chopped onion
1 each medium sweet red and yellow pepper, diced
1 Tbs. olive oil
1 medium zucchini, halved lengthwise and sliced
1 tsp. minced garlic
2 Cans diced tomatoes, drained
3/4 pound smoked sausage, sliced
1 can tomato paste
1 tsp. salt
1 tsp. Italian seasoning
1/2 tsp. pepper
1/4 C. grated Parmesan cheese, divided
2 C. shredded mozzarella cheese
1 tube refrigerated breadsticks

In a large skillet, saute onion and peppers in oil for 2-3 minutes or until almost tender. Add zucchini and garlic; saute 4-6 minutes longer or until vegetables are tender. Stir in the tomatoes, sausage, tomato paste, salt, Italian seasoning, pepper and 2 Tbs. Parmesan cheese. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until heated through. Spoon half of the sausage mixture into a greased 13 X 9 baking dish. Sprinkle with mozzarella cheese; top with remaining sausage mixture. Separate breadsticks; arrange in a lattice pattern over the top. Sprinkle with remaining Parmesan cheese. Bake, uncovered, at 375 degrees for 25-30 minutes or until topping is golden brown and filling is bubbly. Let stand for 10 minutes before serving.

I didn't have any zucchini so I used summer squash. It was very yummy!

I love it! It's a great thing!

Tonight we're having pasta with cherry tomato sauce. Basically, all our cherry tomato plants exploded with sweet little guys in August and we could not come close to eating them all, so we put them in huge freezer bags and froze them. I made a basic tomato sauce out of them. I made garlic bread and it's waiting to go in the oven. :)
 
Hey Glynis, a question:

In your pizza casserole, do you think there could be anyway to substitute the diced tomatoes with tomato sauce instead? I don't do the actual tomato and wondered if there was a way to substitute it. Thanks!
 
Tonight is beef fajitas made with leftover flank steak from the other night with taco rice and either leftover coleslaw or leftover salad. In other words....LEFTOVERS! :rotfl2:

I'm sure you could. The sausage, pepper, and squash make it chunky enough. I'd start with one can, though and see how that goes. I think it would be good!!!
 
Tonight we are eating in front of the TV (I've confessed my Dancing with the Stars attraction before), so we are having panini--tonight's is a roast turkey, tomato, cheddar, and sweet onion one, with some arugula stuffed in once it comes off the heat. Plus I am making oven fries and we have some cole slaw that I snagged from my Mom yesterday. The only problem is that the show is on and the food's not ready!!
