Thank you Lauren, things are looking up for us - Mom's pneumonia is "very mild" according to the doctor. She was very alert and responsive yesterday, hopefully we'll continue with "good news"!

nucpharm29 - thank you so much. I know too well how sad the dementia can be. I'll keep you and your family in my thoughts and prayers.

I don't know what I'm doing for dinner yet. But we had the best, quickest lunch! :) I sometimes order quesadillas when I'm eating out, but I haven't made them at home! I just gave it a whirl with what I had on hand. It was great!!!

Cheesy Chicken Quesadillas

2 flour tortillas
1 breaded chicken patty (Tyson), or about 1/2 cup grilled chicken
approximately 1/3 cup of Tostitos Salsa Con Queso Medium (cheese dip with chiles)
approximately 1/3 stick of butter or margarine

Melt butter in a pan on medium heat. Liberally spread the Salsa Con Queso on both flour tortillas. Dice the chicken patty (I heated it first.) Place the chicken on top of one of the tortillas. Place the other tortilla on top of the other (salsa side down). Put torillas in pan. Heat both sides until golden brown. Enjoy! :)
 

We are having shepards pie tonite. Mine is made with ground turkey and has peas and corn. Yummm!


I tried another pumpkin pie today, and this one seems to be better, I did not like the pumpkin yesterday either. The crust is an oil crust I found on Recipezaar that was made in the pie plate. If it comes out as well as the reviews say it should, I'll post the recipe.
 
Either grilled lemon chicken with asparagus and crusty bead or turkey meatloaf with macaroni and cheese and brussels sprouts. I'm not sure when DH is going to get home tonight, but I hope it is soon, because I'm hungry!
 
We're having leftover baked ziti. Yesterday I made crockpot beef stew and it was yummy. I made up the recipe so I'll try to remember as best I can

1 1/2 lb lean stew meat
1 can low sodium beef broth
1 bottle beer
1 heaping TBS tomato paste
3 cloves garlic - smashed
4 or 5 red skinned potatoes - quartered
few handfuls of baby carrots
2 bay leaves
flour for dredging
corn starch for thickening
oil


Heat about 1 TBS oil in large pot. Season some flour with salt & pepper and dredge meat. Add to pot and brown for 2-3 minutes on each side. Remove meat and put in crock pot. Lower heat and add some broth to deglaze the pan. Pour mixture over meat and add remaining broth and the beer. Stir in tomato paste. Add carrots, potatoes, bay leaves and garlic. Set pot on high and cook 4-6 hours. Remove some of the liquid and mix with a spoonful of corn starch. Stir back into pot and allow to cook several more minutes until liquid thickens a bit.

Serve with rolls and salad.

Tonight we're having my mom's potato salad recipe and ham sandwiches made with refrigerated biscuits.
 
We're having sloppy joes, corn & lima beans. For dessert we're having:

Fluffy 2 Step Pumpkin Cheesecake

8 oz Philadelphia cream cheese (I used 1/3 less fat)
1 cup canned pumpkin
1/2 cup sugar
1/2 tsp pumpkin pie spice
tub (8 oz) thawed Cool Whip
1 Honey Maid Graham Cracker Crumb Crust

Beat with an electric mixer until smooth, the first 4 ingredients. Gently stir in 1 tub (8 oz) thawed Cool Whip. Spoon into 1 prepared HoneyMaid Graham Cracker Crumb Crust. Refrigerate 3 hours or until set. Makes 8 servings.
From Kraft Food & Family Fall '02. (I've made this a few times.) We love it! :)

Tonight will be the crockpot chicken dumplings posted earlier. Dsis made it Friday and said even her super-picky DH really liked it.

tigerkat and glassslipper--Prayers and hugs to both of you! :grouphug: Hope things get better soon. We got some bad news about DH's grandmother last night--they don't expect her to make it until the end of the year. It's sad b/c she also has senile dementia and doesn't know who anyone is.

We are having Pizza casserole tonight. We'll also have a green salad and garlic bread to go along with it. For dessert we'll have the leftover Peach Coffee Cake that I made last night. It was so amazing!!! I'll post the recipe in a little bit!

Sounds really good. I am not to big on sweets, but that Peach Coffee Cake does sound tasty! :bitelip:

I remember the first time I made apple pie...I was on the College Program and all of us worked on Easter but planned a nice dinner when work was done....I made cornish hens and apple pie...well, the apple pie was like soup!!! It was good! What do college kids know about cooking??? ! :)

I use a recipe that I found on Google now...I do not have the recipe handy but you may find it by googling "Grandmas Apple Pie". I have since been able to make a pie....we went apple picking yesterday but we are on diets and just made some apple sauce with cinnamon...YUMMY!

We are having Crockpot Italian Chicken tomorrow...I got the recipe here...YUMMO!

Here's the recipe

Peach Coffee Cake

1 C. butter, softened
1 3/4 C. sugar
4 eggs
3 C. flour
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 can (21 oz.) peach pie filling
Icing:
1 1/4 C. confectioners sugar
1/2 tsp. almond extract
3 to 4 Tbs. milk

In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, bating well after each addition. Combine the flour, salt and baking powder; add to the creamed mixtures and beat just until combined. Spread 3 3/4 C. of batter into a greased 9 X 13 pan. Carefully spoon the pie filling to within 1 inch of edges. Spoon remaining batter over filling. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted near center comes out clean (cover loosely with foil if edges brown too quickly). Cool on a wire rack. In a small bowl, combine the icing ingredients. Drizzle over coffee cake.
