I'll probably spend the morning and early afternoon with Mom and then come home and cook. If anyone is interested the Bolognese recipe it is really good - I'll never cook regular meatsauce again.

Today's Sunday linner is going to be the cod pomodoro that I posted the recipe for a while back. I'm also making garlic bread and an arugula salad. Served at half time of course, so nobody misses any of the Pats game. Go Patriots!

Which McCormick seasoning? This sounds good.

So does the Bolognese recipe. I'd love to have it, too.

Thanks for the reassurance on the pot roast gravy, I was a little worried about the ranch seasoning, but it smells wonderful, can't wait for it to finish cooking.

Thank you also for the well wishes for my Mom. This has been a trying few months. My MIL and her sister both passed away within a day of one another at the end of August. The whole family was with MIL when she passed, and while comforting, it was just really hard watching someone take their last breath and pass in front of you. Two viewing & funerals all within 3 days was a lot to handle as well, but we are a close family and have been supporting each other through it all. Now my Mom being sick, I feel like things are spinning out of control. She had a blood clot in her leg, was hospitalized for that, released on blood thinners, then went back in within a few days for a herniated disc. It's just been a bit overwhelming. The dis is a good place to try and forget your troubles for awhile. Sorry if this is really OT, but I feel a little better. Thanks for listening and all the great recipes, for when I have more time and energy to cook!

Don't mean to stay OT, but glass slippers, I can feel your pain in your words and the sense of feeling overwhelmed. Been thru a lot with my Dad - 16 years of illness prior to his death. I wish I could tell you it gets easier, but when it's your parents it's very tough. I will keep you in my prayers. I also want to thank all of my DIS buddies for being so supportive in times like these. I only have DH and DS, so you guys are like family. THANKS! :grouphug:

I haven't posted for about a week, and need to go back and read all of the yummy recipes I have missed. For dinner tonight we are having filet mignon with peppercorn sauce, baked potatoes with sour cream and chives, and iceberg lettuce wedges with homemade thousand island dressing.

The seasoning is called, Italian Herb Chicken! :lmao:

I really liked it so did everyone else in my household. It was our first time making it and it certainly wont be the last.

Here you go!

Ritz Parmesan Chicken

4 boneless, skinless chicken breasts (I remove all the extra fat)
1/2 cup grated Parm cheese (pizza cheese)
1 1/2 "rolls" Ritz crackers, crushed (you can also use the low-fat ones)
1 stick melted butter or margarine

Preheat oven to 350.

Combine the cheese and Ritz crackers in a bowl. Dip the chicken in the butter, then coat well in the cheese-cracker mix. Place in a 9x13 casserole dish that has been sprayed with Pam (or whatever you use). I sprinkle what is left of the crackers on top of the chicken. I usually cover this in foil because your crackers can burn if you aren't careful. Bake for about 30 minutes or until chicken is done.

*You will NOT need to salt the chicken because of the crackers. I add some pepper to my cracker mix.

*I have also sprinkled some thyme on the chicken as well*

This is on my list of things to try. I'm going to need a lot of crockpot recipes to get me through the last few weeks of rehearsals for the high school musical. Not only is DD going to be busy, but since our dog is in the play I guess I'll be there as well. :rotfl:

We use the crockpot alot. I would be more than happy to post more if you would like.
 
Sure. I love my crockpot. If anyone has something that will cook while I'm at play practice or would allow a family to eat in shifts, I'd be interested. ;) I'll be thrilled when October is over and we're back to normal.
 
My husband is off for Columbus Day, of all things (perk of being a government employee). We are going to do some Christmas shopping today and eating at the Macaroni Grill. MMMMMMMMMMM!!

Pulled pork- mashed potatoes and green beans! I started the pork in the crock pot yesterday and it will continue to simmer today! :thumbsup2
 
No crockpot today, we are giving it rest.

Instead it is, "Mom's Homemade Chili."

I will post the the details later, I am in a rush to get to college right now - 8 am class and I have to do so studying. It is really good though.
 
TigerKat and Glass-slippers: I am so sorry to hear about your Mom's illnesses. I will keep them and you in my prayers.


We have had some craxy days here, and my cooking has been hit or miss. Friday I cleaned all day, so DH and I had dinner out at an Italien restaurant in town. The management had changed recently. It was so good. DH still tries red sauce out, and is always disappointed. He likes mine. Saturday we had leftovers after delivering furniture to my niece.
Last evening was prime rib, mashed potatoes and gravy, steamed brocolli and garlic bread. Our starter was a warm cheesy artichoke spinich dip on sliced bagette. Yummy!Dessert was apple pie and pumpkin pie with homemade whipped cream.

I can cook and I can bake but I cannot seem to master apple pie! Our pie was okay last night, but it was not great. Do any of you bakers have any tips for me or a recipe you would share? I added about 2 T of flour to the apples, but it was still a little to juicy to keep any kind of shape when I cut it. It was warm but not hot, so I don't think that was the problem. Apple pie is my DH all time favorite dessert, and I would like to make my own instead of relying on Schwanns.
 
Nancy--sorry no advice on the apple pie--we rely on Mrs. Smith's for that! ;)

Tonight will be the crockpot chicken dumplings posted earlier. Dsis made it Friday and said even her super-picky DH really liked it.

tigerkat and glassslipper--Prayers and hugs to both of you! :grouphug: Hope things get better soon. We got some bad news about DH's grandmother last night--they don't expect her to make it until the end of the year. It's sad b/c she also has senile dementia and doesn't know who anyone is.
