DD and I went to the OU football game. On the way home we stopped at Sonic for burgers and giant lemon-berry slushes.
 
I think it's going to be a rotiserie chicken from the store...I am being lazy today...I was thinking about beer in the butt chicken on the grill also...and some sides. Maybe stuffing, corn and mashers...DFi is on Atkins so none of that for him...maybe some brocolli.
 

Tonite will be Linguine with Shrimp & Italian Sausage (family favorite), caeser salad and garlic bread. YUMMM!

Tonight I am going to a carnival at my parents' church - they have Polish food - kielbasa, pierogies, cotletti (meatballs) golumpki (stuffed cabbage) and paczki (doughnut holes, homemade with jelly)

Last night I made vegetable beef soup with barley. I used Lindsay's recipe but altered it based on what I had hanging around the house.
 
Not sure about tonight--we're meeting up with a group from church and everyone is supposed to bring some kind of finger food--I'm actually making a Buffalo Chicken dip to serve with a cut up baguette and bagel chips--so we'll just have to see what other goodies are there!
 
The turkey turned out really nice last night. I think the marinade would work on pretty much anything. Here is the recipe (you can use less red pepper if you don't like spicy)

Beer-Butter Poultry Marinade

1 12-ounce bottle dark or amber beer
6 tbsp. melted butter
2 cloves garlic, minced
4 sprigs of rosemary, minced
1 tbsp. red pepper flakes
1 bay leaf
1 tbsp. sugar
1 tsp. salt
black pepper to taste.

Combine all ingredients in plastic bag, add poultry and marinade at least 2 hours, or overnight. Discard marinade and grill till cooked (sorry, I can't provide bettr grilling instructions, DH is the grill master.)

Another amazing thing we had last night was a baked penne alfredo. It was so easy and delcious (and fattening!)

Baked Penne Alfredo

8 oz. penne, cooked al dente
4 oz. freshly grated authentic parmesean
1 1/4 cups heavy cream
salt and white pepper to taste
1 tbsp. butter cut into bits, plus more for greasing the dish

Combine the penne, cream, all but 2 tbsp of the cheese, and the salt and pepper in bowl and stir to combine. Place in greased baking dish, top with butter and reserved cheese, and bake in a 475 preheated oven about 10 minutes, until the cream is bubbling and the top is lightly browned.

Tonight we are having a seafood mixed grill: the bluefish I mentioned yesterday, with a mustard sauce, griled halibut with a vidalia onion marinade, and grilled tuna with my favorite sauce, devilled shallot butter. I'll post the recipe later as this post is so long! Sides are potatoes mousilline, asparagus, and sauteed summer squash.

Lulu..My trick is to use seltzer..This is my standard recipe and they always ome out as floaters not sinkers
1 cup matzo meal
1/2 cup seltzer
4 eggs, at room temperature
2 tablespoons shortening or olive oil
Salt and black pepper to taste

I'm a bit strange with my soup because I add tomato paste to the broth...I like a very rich broth..Not so much that it tastes like a tomato soup,just enough to give it a rih taste

I'm making ginger pot roast with carrots ,onions and mashed potatoes with crock pot apple crisp for dessert
 
Not sure what I'm fixing tonight. DD may finish her homework in time to go to youth group at church. If so, she'll be fed there and I'm on my own. Maybe I'll go pick up a burger or something? If she's home, I'll probably cook something easy like mac and cheese. I hate having to wait to the last minute to plan the evening meal.
 
Does anyone else skip posting if they're embarrassed that what they're having isn't as "upscale" as what everyone else is making? :blush: I wasn't going to post what I'm making tonight, but what the heck...

I'm heating up a bag of frozen Garlic Chicken Voila. I don't have any vegetables left in the house, except what's in that package. I'll have to grill a couple of chicken breasts too because DH (the carnivore) says there's not enough meat in it.

No need to be embarrassed...that sounds great!

Look at me...I bought a ready made chicken and I have Stovetop Stuffing, frozen broccoli and fresh string beans...I am going all out tonight!!!
 
We had Dairy Queen for dinner. ;) Actually we had pork BBQ sandwiches for lunch and we're so stuffed we decided to have ice cream for dinner. ;) Not very upscale. :)

Hey, I post my "less than upscale" dinners! :) We're having an extra cheesy macaroni and cheese bake (added stove top savory herb dressing and diced ham). It's my little experiment. :teeth:

I post whatever we eat, and I don't care what people think of my dinner. I really like looking at all the recipes that people post...it gives me inspiration for another day.

So, what is "Garlic Chicken Volia?" What's the vegetable/sauce flavor? :)

I don't have an actual recipe...I put a chuck roast in the crock pot on low wth cut carrots ,onions, a packet of brown gravy mix, a small can of diced tomatoes, a bit of red wine(or balsamic vinegar) and either ginger paste or a teaspoon and a half of powdered ginger and garlic(minced)....I cook all day and by the end you have gravy and vegies ready with the roast.....You can eather cook mashed potatoes or add chunks of diced potatoes for the last hours
 
I've been posting off and on, but this thread seems a little "cliquesh" if that's the correct word, I would have loved to share my thousands of recipes, but it seems like unless you're in the "clique" no one wants your recipes. So I guess I'll see ya!! Bye!!!!
