Lindsay, I've done the bacon on the meatloaf before and it was very good. But before I put it on top, I cooked it about halfway done and that helped to eliminate too much bacon grease seeping into the meatloaf and by the time the meatloaf was done, the bacon was just crispy enough. :thumbsup2


I'm feeling the need for a very indulgent meal today for some reason so I am going to go pick out some really nice, thick steaks and we are going to grill them ~ I'll make some mashed potatoes with real cream, parmesan and butter and I'll also make a pot of fresh corn on the cob. :teeth:
 
I'm cutting out of work early today (whoo-hoo!) and taking my niece and nephew (and dsis) to the Red Sox game. I probably won't feel like cooking much when I get home, so dinner is either going to be sausage subs (carrying over the ballpark theme), or BLTs.
 
As DSis mentioned, we are heading to the Red Sox game this afternoon, and based on the amount of food my children are planning to consume (two hotdogs, an ice cream, a bag of peanuts and two waters each), I am guessing they won't want dinner. We'll get back kind of late, so I might just make myself a ham and cheese sandwich or a cheeseburger or maybe even loaded nachos.

Did you do anything to the chops before placing them on the pie filling? Or just layer all of the ingrediants. Can you tell me time and temp? I'm heading to the grocery store now, and can't wait for dinner.
 

I just salt and peppered them. I baked it at 350 for about 40 minutes. The pork chops were really tender. I bought the big thick boneless pork chops and butterflied them.
 
Tonight I'm making BBQ chicken legs, corn and some kind of starch.
 
I'm making turkey cheesesteak sandwiches- based on a recipe from an old Susan Powter cookbook.

Turkey Cheesesteak Sandwiches

Saute 1 slice red onion and 1 bell pepper in Pam. (sometimes mushrooms if we have them) Add thinly sliced strips of shaved turkey (from the whole turkey breast at the deli). (about 1 lb.)

Season with salt and pepper.

Preheat oven to 400.

Slice 2 large deli rolls in half. Place open faced on a cookie sheet and top with one fourth of the turkey. Top with a slice of reduced fat provolone cheese.

Serves 4 for lunch (or children), 2 for dinner.

I will likely be serving this with some salad.
 
Well, I have to change my menu, as the idea of eating a sausage sub after spending the afternoon baking in the heat does not sound appealing at all! I think I am five pounds lighter than I was before the game from all the sweating I did. (But they won. whoo-hoo!)

Instead, I am making a spinach-ravioli salad. It's really yummy, and I'll post the recipe tomorrow. Right now I have to get off the computer and go make it!

Two final thoughts: Why is it that I just spent three weeks in a tropical place and did not get sunburned once, but after three hours at Fenway, my chest is as red as a cooked lobster? To keep this thought food related, I will add that the italian ices at Fenway are the best thing EVER for staying (somewhat) cool.

Dsis changed her dinner menu too--she's having indian food, and I am jealous!
 
we did stuffed pork chops and corn on the cob. I had enough pork leftover that I am having pork hash on Thursday.

It was excellent! I used assorted boneless chops, doubled the recipe to fit in a 10 x15 inch pan, and baked at 350 for 1 hour.

DH did not like it, but I knew this before I started, he does not like anything "mixed up" and prefers his "meat and 'taters" without "stuff all over it" :confused3.
 
Your DH sounds just like mine. I made his in a separate little pan with just stuffing on it, no apples.
 
We are having leftover meatloaf today. I didn't make enough smashed potatoes so we are going to have meatloaf sandwiches. MMM! Turns out I didn't buy any tomato sauce for my meatloaf and just used ketchup. It was the best loaf I have ever made and my hubby agreed!! :)

My DH's aunt always made the best stuffed cabbage in the world, so I asked his cousin to make them with me. She poured ketchup in the mix, not tomatoes, sauce or my Mom's old standby tomato soup. I have always added a bit of ketchup to my ground meat recipes since then, and they are so good. I'm glad you enjoed her trick, she would have been tickled to know that others liked her "little secret".
 
I have some extra steak so we're going to have steak sandwiches on onion rolls, more corn on the cob and homemade fries. :sunny:
 
Last night I made rainbow rotini with a vodka sauce and sided it with a chicken breast that was breaded with italian breadcrumbs and pan fried. I also, dipped and fried the summer squash that I got from my dmils garden the same way too.

Since I have to work tonight, I'm gonna make something simple like chicken and cheese quesidias (sp?) .

I'm thinking Lasagna or some sort of pasta... Right now I'm waiting for my DS to bring me An iced coffee from DD
