Lindsay, that breakfast dinner sounds fabulous! YUM! :teeth:

Today I am going to grill some burgers and make fries and corn on the cob to go with them :sunny:
 
Sorry I have not been posting as much--I still don't have my computer hooked up at home--soon, though!

Today the farmer's market opens up, so I am going there after work to see what I can find for dinner. I am hoping for at least a good baguette and some cheese--not sure what kind of veggies will be around yet.

Backing up, last night we made roasted chicken, sweet onion, munster cheese, and arugula toasted paninis. They were pretty good. Sunday was the yucky meal Dsis mentioned earlier. Saturday was really busy, so we just had grilled burgers (portobello mushroom burger for me, beef for everyone else).
 
Well, after a weekend of complete indulgence at DSIL wedding I think tonight calls for a light meal--salad, maybe. And everything for the next few weeks is going to have to be quick and easy b/c we found out we're moving and now we're going to be really busy trying to sell our house.
 
Last night was Mahi Mahi and zucchini on the grill with orzo and asparagus. Tonight is Manacotti, garlic bread and a veggie.
 

I think we'll be having Hamburger Helper tonight. DH is on a business trip and when he's gone I like to make things for the kids that he won't eat.
 
Tonite I am having the shepards pie that I wanted last week and never made. I willfix some sort of salad to go with it.
 
Tonight I am making fish and chips, corn on the cob and a salad. I probably won't get any of the corn though. The last time I made corn on the cob, DD stole mine. Of course, if I had remembered this at the grocery store instead of now, I could have bought extra.

Tonight I am making a Rachael Ray dish that I skewed a little bit. It's Cashew Chicken (not the Asian version). Her original recipe used honey roasted nuts, I use cashews. I will post my recipe. We are having a succotash made with red onion, a green pepper, and black beans. Also I'm making a tomato parmesan angel hair pasta. What a feast!!

WFD at your house?

Nutty Chicken

2/3 cup (eyeball it) cashews
½ cup plan bread crumbs
1 T. grill seasoning
2 eggs
Splash of milk
½ cup all-purpose flour
3-4 boneless, skinless chicken breasts


1. Preheat oven to 350.


2. Put nuts, bread crumbs, and grill seasoning in a food processor and combine. Pour breading into a bowl.


3. Beat eggs and milk and place in a bowl. Pour flour into a separate bowl.


4. Dust both sides of chicken with flour. Dip chicken into egg and then coat with breading.


5. Preheat a nonstick skillet over medium high heat. Add vegetable to lightly coat the bottom of the pan. Brown chicken about 3-4 minutes on each side or until light golden in color.

6. Place chicken in the oven a cook about 10-15 minutes or until chicken is done.
 
Lindsay--that sounds yummy--we might have that here tonight as well. I was wondering what to do with these cashews I have, and now I know! Thanks for sharing recipe!
 
I'm not sure what we are having this evening. I need to shop. I am in the mood for something on the grill.

I did fix the shepards pies. Yes I made 2 because DD likes ground turkey, and I really like it with ground beef. When you are hungry for comfort food, you gotta have it the way you remember it.

Is anyone doing anything special over the memorial Day holiday? I always think that it is the official start weekend for summer.

Just FYI, if you have an oven-safe skillet you can do this all in one instead of dirtying up a casserole dish :)
 
Last I made Broiled Balsamic Salmon, noodles, and peas.

Tonight I'm making Mu Shu Chicken Wraps. It's another recipe from the FamilyFun - Fast Family Dinners cookbook.
 
Today I'm making homemade chicken fingers, mac & cheese and sweet corn :sunny:
 
I haven't posted in a while..DH took a day off work and we had a great weekend here so it's been pretty busy.

Last night one of my DD's was gone and so the others had left over baked steak while I made a black bean soup for myself. We also had a homemade Sugar Cream Pie with the baked steak.

Not sure what's on for tonight. As a couple other posters mentioned, it seems easier for me to post what I had the night before.

BTW...this is my favorite thing to read on DIS everyday! Can you tell I like FOOD?! :)
 
Tonight is grilled steak, macaroni and cheese (DS won't eat steak), and sugar snap peas. I also have half a package of pizza dough that I might make into breadsticks. That would make the kids happy.

Tonight I was all set to make meatloaf and cheesy garlic smashed potatoes, but I have no tomato sauce or ketchup. So I am going to make hamburger steaks instead. I have some tomato paste but I've never tried that in my meatloaf before. I usually use tomato sauce. I'm really not in the mood to experiment so I am going to just go with the hamburger steaks. Will saute some onions for the top and I think I have some fries in the freezer.

I have to work all day so I'm leaving DH something easy to make ~ salisbury steaks and mashed potatoes :sunny:
 
I'm working, so I'm bringing in my leftovers. Cashew Chicken with Pineapple.

Hubby and kids are having Parmesan Chicken with asparagus. I'm so hoping there are leftovers this time-last time I didn't get any!

Lindsay, I use tomato paste all the time, and it is just fine. I tend to toss some in whenever I think ketchup would be good.

I will warn you that I am the Queen of Experimentation. My family says that I "Nanitize" everything, and lately my DH is begging me to stay away from the computer and "5 star recipes". :confused3

Anyway, they were all happy last night. Kielbasa (turkey, of course) on the grill, sauerkraut, cucumbers and tomato salad, macaroni salad with spinich and herbs, and picles.
DH was happy to have plain food.

Now I am not cooking tonite. I want to get my Holiday shopping out of the way, so DD and I are heading to Sams club.
 
It's DS10's last day of school so we're taking him out to celebrate. He wants to go to a Japanese place so he can get edamame and sushi. We had sushi at my brother's house a couple weekends ago and DS loved it. It was all cooked stuff. I've never ordered it at a restaurant so I'm going to be a little lost tonight. Any advice?
