Today is DD7's birthday so she got to decide the menu for dinner. We're having spaghetti and meatballs, salad, garlic bread and lemon lime poke cake (I got the recipe for that from the cooking exchange).

Tonight I am grilling some Carribbean jerk chicken. We are having some rice and probably green peas on the side. MMM! :)

It's raining again. I just don't know what I'm going to cook for supper. OMG I am beginning to hate the rain!

Tonight's menu is shrimp scampi, rice and fresh veggies from the farm stand. If I'm feeling very nice, I'll also make a small steak for surf and turf.

This was supposed to be last night's dinner, but I took a nap after getting home from work and my motivation to cook left with the nap!

Not cooking today :) ~ it is my oldest DD's 13th birthday today and we have friends and family coming for the weekend so I'm just going to pick up some pizzas and breadsticks while I'm out today :sunny:

Dessert will be homemade ice cream cake at DD's request (vanilla cake, cookies & cream ice cream and chocolate icing). :cloud9:

Today we are going to J. Alexander's with some friends. No cooking for me tonight :)

The men are having thai chicken, I'm working and having my leftover shrimp in cream sauce. I tried copying my favorite dish from a local seafood chain, and it turned out better!

My husband has a huge hankering (how Southern am I?) for the Spaghetti and Meatball Stoup, so that's what we are having tonight. I got us a nice crusty bread to go with it. :)

Chinese take-out today. We got sweet & sour chicken, General Tsao's chicken, shrimp fried rice, crab rangoons and egg drop soup. :sunny:

Yesterday I was at a wedding, so no cooking. The food was surprisingly good...clam chowder to start, Caesar salad in the middle, and prime rib for the main course.

Today, we had the usual linner at my parents' house. DSis's house is still a mess, so my mom and I were in charge of the meal. However, I had no input in the planning because I definitely would not have planned this...and judging from DSis's demeanor, she wouldn't either. We had grilled halibut with a mustard sauce, asparagus risotto with fontina cheese, and grilled baby squash. The fish was delicious, but to be honest, I really wasn't in a halibut mood today. The risotto was only okay. The texture wasn't really right and the fontina was a bit overwhelming. Plus, it had three egg yolks in it, so I guess I was not sold on the recipe from the start. The baby squash was just gross. I can say this because I grilled it. The baby zucchini was squishy and the patty-pan was bitter. Yuck.

I am having a serious snack later!

Leftover pot roast with red skin potatoes and baby carrots from last night. No one was hungry yesterday. That doesn't happen very often around here.

Jambalaya - and the best part is I didn't have to cook it. My mom made too much so we picked some up for supper.

We went over to greet friends who arrived at WDW today. After two days in the car, they were not driving anywhere, so I suggested that we take the launch from VWL to FW and have dinner at Trail's End. It was a good suggestion!

Tonight we are having leftover spaghetti and meatball stoup. It's always better the next day.

We are having smothered skillet chicken, macaroni and cheese and green beans :sunny:

We are finally back to normal. Yesterday we celebrated my nieces graduation from Central with lasagna, sausage and peppers, meatballs, and a nice salad with italian bread. Lemon bars and chocolate mousse cake for dessert. Yummy!
Tonite we are having hamburgers on the grill, (turkey burgers for DD) with potato salad, and tomatoes and cucumbers for salad.

Tonight we had Crazy Pasta. This is what I make when either I can't figure out what I want for dinner, or I haven't been to the grocery store in a while. Tonight, it was both reasons. The recipe is almost always different because I just throw whatever I have into the pasta. Tonight's version had grilled bratwurst, broccoli, sauteed onions, olive oil and parmesan. It's not fine dining, but we all ate it.

I am in a major comfort food mode right now. Tonight I am making scrambled eggs with Canadian Bacon, some cheesy hash browns, and some strawberry muffins. OJ to drink (we rarely buy it). I can't wait for dinner!!!
