It's rainy and very chilly here today...great soup weather. We're having Loaded potato soup.

What is loaded potato soup? I am envisioning potato soup toppped with sour cream and bacon. Is that it?
 
Mahi Mahi- not sure how I will cook it yet. Tomorrow night I am trying out the enchilada recipe SunFloridaDisney posted.

My poor cousin is staying with us and he is a meat and potatoes person, our house is chicken and fish. :teeth: I saw that one and thought he would like it. Now I need to see if there is any other beef in the freezer I can make between now and Friday when he moves to my sisters house. :rolleyes: I have about 20 packages of chicken, another 30 fish.
 
I did something tonight I almost never do and usually avoid...made three meals. I had tuna tacos, DD had baked haddock, and DS had black bean burritos.

The meals were okay...they were eaten...but I hate feeling like I am running a restaurant here.

Yes..that's right. I usually add the sour cream into the soup at the very end though. We just like this better. And usually its loaded BAKED potato soup, but I peeled them...I like it better that way :rolleyes: .
I don't use a recipe, but I just cook the bacon(chopped) and then add diced onion and some celery and carrots(I use a larger microplane for the last two so DD's don't notice they're in the soup). I then add a stick of butter after the veggies have cooked. When that's melted, I add a couple TBS of flour for a thickener, then a couple cups of chicken broth or stock. I then add milk til it looks right(I use anything from skim to whole to cream in this..its good every time). Somewhere in there I add my (larger) diced potatoes and salt and pepper to taste. I cook til the potatoes are done, then add cheese(tonight I added shredded cheddar and Velveeta). If I use all real cheese then i turn off the fire first and let the cheese melt that way. After the cheese has melted I take my hand blender and puree some of the potatoes to make it even thicker. Then i add the sour cream. I just would rather have the "loaded" ingredients already in, and maybe have extra for topping also. :)

This sounds really good.


Lindsay I made the Ritz chicken tonight with sauteed squash on the side. It was really good.
 
Tonight we are having grilled teriyaki salmon. Not sure what I am making with it.

We'll be having a chicken enchilada casserole (just your basic enchilada ingredients with boneless chicken breast in it) :sunny:
 
Meatloaf, mashed potatoes, macaroni and cheese casserole, slaw, and cornbread.

I'm already starving!

The mac and cheese casserole is the bomb, though...I'll post the recipe when I get home. Very fattening, but totally worth it when you want comfort food! (If you don't tell your kids what is in it, I guarantee they will eat it...I had to lie to my husband while I was making it.)
 
I picked up this new curry simmer sauce at a new market in our area today--so that's what's for dinner! Going to cook up some chicken breast and a package of bell pepper slices and simmer it in this yummy looking sauce. Serving it with Jasmine rice and warm pitas! Love me some Indian food!
 
Tonight I am making roast chicken with bread salad from the Zuni Cafe cookbook. This is the best method for roasting chicken I have ever come across. I'll post an adaptation of the recipe when I get home.
 
Soft tacos tonight, but the teriyaki salmon sounds a lot better!

It's mine and DH's anniversary, but he'll be working at dinner time so no special plans. (Last year on this date we had dinner at the California Grill! :goodvibes )
 
I'm making tortilini with and alfredo sauce and some salad
 
I have a lot of chicken left from last night (it was yummy) so I am heating it up in a light sauce, and serving with couscous and veggies. I will make a cucumber and tomato salad also.
 
DS has baseball practice at our usual meal time, so we're eating early. I'm making hamburgers and hotdogs...boring!

We're having baked pork chops with potatoes, onions, and sauerkraut...BTW...anyone wanna share a good spaetzle recipe?

I am making homemade vegetable soup for dinner tonight with some cornbread. Mmmmmmmmmmmmm! I can't wait!! :) If anyone wants my recipe for this soup I will post it.

I'm going to make grilled steak salads (mixed greens, grilled steak strips, boiled egg, cucumber, tomato, croutons and bacon bits in them today) ~ I may heat up a loaf of French or Italian bread to go with those :sunny:
