Hi everyone. I've been MIA for the weekend, but we were busy with our youngest's birthday. Her actual birthday isn't until Wednesday, but she declared this weekend as her "birthday weekend". On Saturday we drove to Myrtle Beach to take her to the Dixie Stampede which she loved. And yesterday, she picked the dinner - crab legs. I learned two things this weekend: 1) eat before going to any dinner show; and 2) my blood pressure issues will no longer allow me to eat crab legs (it got so high yesterday it was frightening)

Anyway, I am probably missing lots of folks, so forgive me if I miss you:

Nancy sorry I missed the post about Kady's birthday. Please tell her Happy Birthday from me. Also glad to hear about you working out things with your brother.

Stephanie Hope your little one gets better before you leave Thursday and I hope he hasn't shared with his sister. Diseases seem to be the only things my kids will share willingly.

Lauren the tile sounds great. I hope the renovation goes smoothly and I hope Tom manages to find something to eat on this trip.

Kathy I don't have any good stuffing recipes but I'm looking forward to the responses you get.

Glynis glad Alan didn't burn the steak (or the kitchen). :rotfl: I guess I should be thankful that my DH looks at my stove as if it will blow up if he touches the wrong thing. Seriously. He won't even turn off the timer.

I know tonight's dinner is going to involve the shrimp I have in the fridge, but I haven't really decided just what I'm doing with them. I'm leaning towards a Scampi or the Bubba Gump style dipping sauce over rice. We'll see.

The stuffing is our mom's recipe, and it is simple...no oysters, cranberries, sausage, etc. Just straightforward stuffing. She cooks it in the turkey (yeah, we know you're not really supposed to do that, and if you worry about stuff like that, you can bake it in the oven, covered, with some chicken or turkey stock, but it won't be as good) and it is a great gravy vehicle. In my case, it's about equal parts stuffing and gravy :laughing:

Mom's Stuffing

1 loaf stuffing bread, torn into pieces
1 stick of butter
1 medium onion, chopped
celery leaves (NOT stalks), as many as are in a bunch of celery, finely chopped
1 tbsp poultry seasoning
3/4 tsp dried sage
salt to taste

Melt the butter in a medium skillet, then add the onions and celery leaves and cook until soft.

Toss the bread with the poultry seasoning and sage. Pour the butter and onion mix into the bread. Toss gently. Add salt as desired.

I always put my stuffing in the turkey, it's soooooo good like that!

Okay, so back from the ped's office. DS has the "stomach virus" which means, no meds to treat; just let it run it's course. Ugh! Hopefully, he'll be all done by Wed. at the latest. DD has an ear infection--but at least that's treatable. Now I just gotta go read the TSA regs. on flying with liquid prescription meds.
 

Welcome Home! We missed you!

Nancy, Tom is coming home Friday. I basically kicked him out the door...I was looking forward to alone time but I miss him already. :sad1:

It's funny how much you think you want some "alone" time but then it is not so much fun when you have it. Buddy looks for some quiet, you cannot get any here and then he says it is too quiet if we are gone too long. He goes nuts if Kady is gone all night, she is one little chatterbox :lmao:

I'll try to pop on again before we leave Thurs. morning--but with work and getting the troops ready under the cover of night (the trip is a surprise for DD), I'm gonna be really busy. If for some reason I can't get on here again, have a wonderful rest of the week--and try to behave in my absence;)

Have a good time if you don't make it back here to visit. I saw that you little ones are not feeling too good. I hope thatr the "bugs" run their couse now before you leave.

I'm definitely going to do this recipe again, only without Alan's help!

This was our test run.

I have Caili home sick today. It's just a cold, I think, but she has a fever too. She always seems to get a fever for a day or two with colds. That means no school and no skating this afternoon. I'll probably just make buttered noodles or something like that for her dinner, and I am having the leftovers from yesterday. I usually don't like leftovers, but turkey dinner is one of the exceptions. Liam will probably want the noodles.

Poor baby. I hope she feels better soon. My sister works at Children's and she said they are swamped. The flu has already made an appearance and the respiratory things are going strong.

We always have turkey at least once in the Fall. I love it.

I had no idea that the crab would affect BP that way. I hope it goes down fast!

Thanks for all of the thoughts with my Brother. I love him a lot, which is why I don't like to have words with hi, He never thinks before he speaks and I have zero patience with anything lately, so it can be a bad mix. Neither one of us carries a grudge, which is a good thing since we can get our Irish up :rotfl2:

Dinner tonight is the ribs I never cooked with some yellow rice and I think Chinese Veggies.
 
I've seen this one before and I would love it but DS won't eat apples in anything.:sad2:

You could totally make it without the apples, but they just add a nice sweetness to the stuffing that is complemented by the chicken stock!

i finally have some dinners to share again!
This weekend we had Greg's parents over and i made an italian dinner:
Eggplant parm
Penne with a home made alfredo ( essentially cream, butter, parm cheese and a touch of nutmeg) with mushrooms, chicken and procuitto ( yum!)
Garlic bread.
Nothing fancy but i was happy that i actually cooked SOMETHING!

Someone say stuffing????? OH i love family recipes for stuffing..it really is my favorite part of thanksgiving, give me some of Greg's mother's stuffing with her cranberry orange relish and i am good to go! Ok..now i am in a rush for thanksgiving!

I'm excited we'll be home for Thanksgiving this year. Last year we were in Disney and I waited until we got home to do Thanksgiving dinner. Something about stuffing that just got us all going!!!!:lmao:

The stores here sell bread especially for stuffing, and it is just called stuffing bread. Any chewy, but not crusty, white bread would do, and it's better if it is at least a day old.

Ugh...I've heard that the stomach bug is going around here too. I hope DS is better soon -- if it's the same as here, he should feel a lot better tomorrow -- and the rest of you are spared! BTW -- you can fly with the liquid prescription. It just has to be in a ziplock bag and the prescription label has to be on it. That's only if you need to bring it in your carry-on. There are no specific rules for checked bags, although the ziplock is still probably a good idea. ;)

Yum! The turkey leftovers were great. I, for one, don't get sick of turkey. Okay, maybe I would if I had it every week, but we usually have the full turkey meal at least four times during the cold months. I could easily have it six times, though...once per month.

Laura I have a great recipe for turkey on the grill.

Sage, Orange, and Clove Rotisserie Turkey

From: Weber's Big Book of Grilling

One whiff of the orange, clove, and sage in this recipe is guaranteed to drive the neighbors wild. If you don’t have a rotisserie, grill this 12- to 14-pound turkey over Indirect Medium heat for 2-1/4 to 2-1/2 hours.

For the rub:

2 tablespoons granulated orange peel
1 tablespoon dried sage
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon vegetable oil

1 turkey, 12 to 14 pounds

2 small oranges, washed and dried
12 whole cloves
6 medium garlic cloves, crushed
1 bunch fresh sage, tied with cotton string


To make the rub: In a small bowl combine the rub ingredients. Set aside.

Remove the pop-up timer, as well as the neck, giblets, and any excess fat from the turkey and discard. Rinse the turkey, inside and out, under cold water and pat dry with paper towels.

Pierce the oranges several times with a knife and insert six whole cloves into each of them. Put the clove-studded oranges, garlic, and sage into the turkey cavity. Truss the turkey with cotton string. Pin the neck skin flap to the body with two or three small trussing needles.

Skewer the turkey lengthwise through the oranges and center on the spit. Rub the entire exterior with the rub mixture, pressing it into the skin. Set the spit on the rotisserie and let the turkey rotate over Indirect Medium heat until the internal temperature reaches 170°F in the breast and 180°F in the thickest part of the thigh, 2-1/4 to 2-1/2 hours.

Turn off the rotisserie. Wearing barbecue mitts, carefully remove the spit from the rotisserie and place it on a cutting board. Loosely cover the turkey with aluminum foil and allow to rest for at least 20 minutes. Remove the spit and discard the oranges, garlic, and sage. Carve the turkey into serving pieces. Serve warm.

Makes 12 to 14 servings.

This was so easy to make and left my kitchen free to do other things.

We ended up with shells and cheese right out of the box and grilled hot dogs. It was tasty and easy.

My allergies have me beaten down really bad and I'm afraid it'll evolve into something more. I am so miserable I just want to curl up in bed and sleep.
