I see that we have some new posters!

Welcome MysteryMachine, Momof2princess and mjantz! Please jump in and add some of your favorite recipes.


I have no idea what to make for dinner. I need to check the pantry and see what I can make without going to the store, I have to get caught up on chores that I passed over the past few months....oh, it was just days.....it seemed like months :confused3. Anyway I will try to do something constructive and stay away from the third Harry Potter book that I just started.

I just want to add that if I don't cook tonight it is the fault of my WFD friends who kept talking about Harry.. Harry this.....Harry that....chocolate frogs.....Now I can't sit without picking up a book 2 down, 5 to go :yay::yay::yay:!
 
Tonights going to be chicken & rice. Easy recipe:

-4 chicken patties (angel food)
- 3/4 cup rice (angel food)
-Campbells cream of chicken with herbs soup, 1 can
-1 cup water
-Cavanders Greek Seasoning

Put 3/4 cup rice & 1 cup water into covered casserole dish. Wisk in cream soup mix. Lay chicken on top & sprinkle seasoning over both patties & rice. Cook at 375 for 45 minutes.
Easy peasy & pretty darn good.

:lmao: I've been craving something similar to this- so I laid out chicken breasts today to defrost. I grew up with mushroom soup and white shredded cheese instead of the greek seasoning though. Sounds like we'll be having almost the same thing!;)
 

we have had a couple of sad nights......nothing comparable of course miner situation, or even health worries.........but sad for our home non the less..............our 17 year old cat became very sick with his kidneys shutting down fast, due to age and medicines he had to be on for other health isues,and he also started to lose use of one of his legs(he was missing a hip on one side).................due to all of this we had to make the hard, but right decision to have him put down today.......so our past few days have been enjoying him and saying goodbye

Wendie, So sorry you had to make that hard decision and watching your child hurt makes it so much worse. :hug: I wish I had something to say to make it easier, but it just takes time.

Looks yummy!!! Biscuits take a lot of work, I've found. I need to make some more for practice myself. My grandfather was a cook for a bunch of sheepherders during the Depression, and he learned how to make the best sourdough biscuits ever. He mixed them all up by hand (no spoon), and they tasted to light and fluffy! I wish that he had written down his recipes, as he was a fantastic cook, but he didn't. The only thing I have is a videotape of him making them, and it's hard to get things right just watching him.

Glynis, It's nice that you have the video of him fixing them. Next time you fix his biscuits, please let us know & share some tips!

Here is tonight's dinner: the grilled lemon chicken, with sliced tomatoes and a mache salad dressed with vinagrette and topped with (close your eyes Laura!) baked goat cheese. Dinner was pretty good, though I only got a few bites of the chicken--DH really liked it so I gave him most of mine. No big sacrifice for me, as you all know. Becky, Looks great as always! Can you tell me how you baked the goat cheese? I would have thought it would just melt into goo in the oven.

If I cook at all tonight that is. Maybe just salad tonight though, it's so darn hot, it's even zapped my appetite. and that's very unusual!;)

Kathy- I think that I am going to do just that. I brought Kady for a play date and have some wash going, but there really is nothing that will fall to pieces if I let it go. Dan has no help tomorrow until Debbie gets out of work so I will probably go and move boxes on and off the truck with him so I better take it easy today.

I think convert does ot come close. Marisa says I will become an addict once I get into the third book and I just started it. Kathy gave me the day off so I think After I DIS I am going to read :thumbsup2

I envy your video. Even a recipe won't help me unless I can watch the process. Good luck and share tips please. My homemade biscuits are like homemade paper weights :confused3

:lmao: :lmao: Mine too Nancy. Even my Daddy won't eat my biscuits and that is really saying something. Luckily for me, Kenny doesn't like biscuits (a fact which made Daddy question whether or not he was a "communist" while we were dating :rotfl: ).

Seriously Nancy, you have been going at it pretty hard. Take a break woman. As someone who routinely lets the chores pile up, they aren't going anywhere. ;)

For my DH the real test is whether or not a woman cooks and cleans. Imagine his dismay when he had to accept that DD hates to cook can cook but convinced everyone but me that she cannot, and would rather pay someone to clean :lmao:

The poor man keeps wondering where I went wrong :confused3. I cannot convince him that in this case he is the dinosaur :rotfl2:.

When we were dating he thought that I was a "city girl" because I did not have my own garden, so when he started getting confused becasue I always had home made jams and apple sauce etc around. One night he dropped by after the kids had gone to bed and I was canning tomatoes that I had picked and had to be educated how people have fresh veggies without their own gardens......never heard of "pic-ur-own :rolleyes1!

He was so special, and I miss him something awful....he has been a part of our lives longer then Ross, lol...but he was Ross' protecter....so my baby boy has had a tough day, and bedtime for Ross was something awful as Sammy always came in and said goodnight. My heart just crumbled tonight watching Ross, with his broken heart:(
At least we still have our big oaf of a dog..ToaTahoe..110lb black lab....dumb as can be, but loves us to death, lol.
Sorry I rambled on....................................thanks AGAIN for listening!!

There's nothing so heartbreaking as losing one of our furbabies. I dread the day that my 10 year old teacup poodle, Cozy, will have to be put down. She has arthritis terribly, and one of her kneecaps slips a lot. So far, she doesn't seem to be in too much pain, so we don't have to worry about it right now.

Many hugs to you and to Ross as you deal with this loss. :grouphug:
 
Hi, everyone! Nice to see so many people posting!

Dinner tonight will be easy: personal pizzas for everyone. I've premade the crusts, so tonight all I have to do is let the kids top their own, and put them in the oven for a few minutes. I'm hosting my book club tonight, so I wanted something easy and fast that they can take to the basement with them!

For book club I'm making individual Oreo cheesecakes, Margarita dip with fresh fruit and pound cake cubes, and watermelon lemonade. Hope it's yummy! I'll try to remember to take some pictures!

Not too much new on the miner front: They are drilling 2 holes from the top down, in hopes of getting more fresh air to the men, and also in hopes of finding out if they're alive or not.

Big news here though, is that Alan (my DH) got escorted off mine property by the sheriff yesterday. He was one of the photographers that was chosen to accompany the mine owner to the mouth of the mine. Alan said that once they got there, the mine owner began spouting a "commercial" about what a good guy he is, and how much the mine does for the community, etc. He refused to talk about the rescue efforts, or the miners themselves. He was really obnoxious, and Alan refused to film that. The guy told Alan to roll film or leave. Alan said, he'd roll when there was something newsworthy to film, and the guy went ballistic and ordered the sheriff to escort Alan off the property!

Alan was dumbfounded, since earlier that day, he had stumbled across the guy having kind of an emotional meltdown. His reporter wanted Alan to film that, but, again, Alan refused, saying that he deserved some privacy to collect himself. The owner, at that point, was grateful for Alan's ethics, so to have him turn on him was a bit frustrating!!!

Oh well. Alan will be home tonight for the weekend, and then will head back to the mine Monday morning through Wednesday night.

THE HAT---i am so sorry for your loss of your cat...I can't even imagine how heartbreaking it is. :angel:


On to the subject at hand...WFD? Tonight is grilled italian sausage with onions and peppers in nice fresh bulky rolls...easy, tasty..good enough for me! :goodvibes

What an idiot! I was not sure what to make of him but I am forming an opinion, and it is not good :sad2:. Good for your DH for having morals and ethics and sticking to his guns! While I'm sure he wants to do his jog, I know that being home with his family is looking real good to him!

The upside is that with all the overtime that this story is bringing us, I may be able to afford my new sofa sooner than I thought!!!

Of course, I'm also toying around with the idea of a Christmas trip to DL for my kids, too! I know they'd like that more than a new sofa.

I am not cooking tonight, I don't think. I have to go to a get together after work, and then I think DH and I are going out to dinner.

The board is running really slow for me today, so I can't go back and look at who asked me questions earlier, but:

No, I don't use any special lighting for my photos. I do have a tripod which holds the camera steady.

Baked goat cheese: I should have said sauteed goat cheese. All I did was lightly coat cold rounds of goat cheese with plain breadcrumbs, and then lightly fry in olive oil until just warmed through...about 1-2 minutes per side.
