Tonight its baked potatoes with ham & cheese & whatever else you want to put on it. I've also got 2 small packages of veggies for steaming from Angel Food that I might make use of as well.
The kids get fast food every Wednesday & in the past I've eaten fast food as well but I'm trying to save a little money & calories by eating at home afterwards. We shall see.

I finally finished reading Harry Potter. I know I read this one very slowly no need to rush since this was the final one. :sad1:

I'm making pork chops on the grill tonight as long as the rain holds off.

We had a whopper move through a couple of hours ago. I must leave in a blessed area, a little to the north of me(5-10 miles) they had a funnel cloud move through. Last weekend it was to the south.

Let's hope you are in a blessed area, that's way to close! I would be a nervous wreck, at least with hurricanes we can evacuate. I'll keep you in my prayers that you continue to "be blessed".:hug:

We broke a record for actual temperature today - 99. The bad news is there is no relief in sight and I don't even want to know what the heat index was. My temp on my patio was 112 - talk about huge hair.:scared:

Wow, you are more restrained than I am. I read it so quickly, I am probably going to reread it because I know there are things I've forgotten. I was finished the Monday after the release.

Dinner tonight was good. I had striped bass, but since the market cut the skin off, I couldn't grill it. I dipped it in egg, coated it with bread crumbs and then seared on both sides. I finished it in the oven and served it with a garlic/herb butter sauce. I also made eggplant sticks and cumin corn. The kids didn't want the striped bass, so they had arctic char, which I also seared, then finished in the oven. I topped it with a little brown sugar, salt and pepper before baking. They both ate well, however, when Liam suggested we have fish again tomorrow, Caili yelled, "NO!!!"
 
Dinner was very good. DH may cook again. :cool1:

I still haven't finished Deathly Hallows.... I'm on page 400something.... I'm savoring this book. I have loved this series of books like no other- seriously. I really like her writing.... I can picture everything so vividly.

Here is tonight's dinner: the grilled lemon chicken, with sliced tomatoes and a mache salad dressed with vinagrette and topped with (close your eyes Laura!) baked goat cheese. Dinner was pretty good, though I only got a few bites of the chicken--DH really liked it so I gave him most of mine. No big sacrifice for me, as you all know. Not pictured: crusty bread with vermont butter and cheese company cultured butter...yum. Photo:

mermaid----We might have to meet up here in Maine sometime so your dh can teach Kris how to cook.....I am not joking at all when I say that the only thing he can make is cereal.............you don't even want to know what kraft mac and cheese becomes when he cooks, lol.

Kathy---I can't wait to try the lemon chicken recipe you posted!!! One of Kris favorite meals is lemon chicken, and I am always looking for different twists on it.

Glynis- Thank you for the update on the miners........my prayers will be with them all, and the community as well!

Stephanie--I love the red on the walls in your kitchen....you did a fab job girl!!!

Ok just dropping in to catch up, and say hi....nothing to post dinner wise really as these past couple of nights we have just been eating whatever we grab......we have had a couple of sad nights......nothing comparable of course to the miner situation, or even health worries.........but sad for our home non the less..............our 17 year old cat became very sick with his kidneys shutting down fast, due to age and medicines he had to be on for other health isues,and he also started to lose use of one of his legs(he was missing a hip on one side).................due to all of this we had to make the hard, but right decision to have him put down today.......so our past few days have been enjoying him and saying goodbye............This was our second cat our first "born" Jake, we had put down 2 years ago, and now today Sammy cat, aka Mr. Belvedere(He acted like a butler, and we swear that if he could talk he would have had a british accent, and to top it off he LOVED hot tea, lol).... has left us as well. He was so special, and I miss him something awful....he has been a part of our lives longer then Ross, lol...but he was Ross' protecter....so my baby boy has had a tough day, and bedtime for Ross was something awful as Sammy always came in and said goodnight. My heart just crumbled tonight watching Ross, with his broken heart:(

Later I'll post my favorite BBQ Salmon recipe. My computer at home must not like it, it's being tempermental. Hope everyone has a good day.

Praying for a miracle that they get to those miners. I praying for no more set back. It must be just horrible for their families.
 
Here is the recipe

Grilled Salmon in Barbecue Sauce
Preparation Time: 15 mins
Cook Time: 20 mins Servings: 4

Ingredients
2 tablespoons peanut oil
1 medium onion peeled and chopped
1 clove large garlic peeled and chopped
1 1/2 cups ketchup
1/2 cup dark rum
1/3 cup CROSSE & BLACKWELL Worcestershire Sauce
1/4 cup cider vinegar
2 tablespoons chili powder
2 tablespoons paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 (6-oz.) salmon fillets
Directions For the marinade: Heat oil in a saucepan over medium heat, add onions and garlic and sauté until tender, about 3 minutes. Add ketchup, dark rum, Worcestershire sauce, cider vinegar, chili powder, paprika, cumin, coriander, cayenne pepper, salt and black pepper. Bring to a boil, reduce heat and simmer for 5 minutes. Cool to room temperature.

Brush salmon with 1/4 of the barbecue sauce, reserving the rest for dipping. Marinate fish in the refrigerator for 2 hours.

Preheat grill.

Place salmon skin-side down on lightly oiled grill. Cover and cook for approximately 12 minutes per inch of thickness. Close vents during the last 4 minutes for a more pronounced smoke flavor. Fish is done when it flakes easily with a fork. Serve warm with reserved barbecue sauce on the side.
 
I have gotten so many great recipes from you guys I thought I would throw in mine. Tonight we are having Double-Cheese and Veggie Macaroni and a garden salad. I love this one..it is so easy to make and I get to sneak some veggies in for the Kids.


Recipe:
1 pkg. KRAFT Deluxe Macaroni & Cheese Dinner Made With 2% Milk Cheese
1/4 cup Light Zesty Italian Reduced Fat Dressing
2 small zucchini, chopped
1 large tomato, chopped
1/2 cup Shredded Reduced Fat Sharp Cheddar Cheese



PREPARE Dinner in large saucepan as directed on package. Meanwhile, heat dressing in large skillet on medium heat. Add zucchini; cook 5 min. or until crisp-tender, stirring occasionally.
ADD zucchini and tomatoes to prepared Dinner; mix well.
SPRINKLE with Cheddar cheese.

He was so special, and I miss him something awful....he has been a part of our lives longer then Ross, lol...but he was Ross' protecter....so my baby boy has had a tough day, and bedtime for Ross was something awful as Sammy always came in and said goodnight. My heart just crumbled tonight watching Ross, with his broken heart:(

It's tough to lose a loved one, especially ones that love us unconditionally. I hope you both find some peace and solace. I hope that we are lucky to have Wanna B that long(sometimes I have to remind myself of that!)

Now how's this for a ha-ha on mommy- I walked home last night while talking to Rick. He always hangs on till I see Wanna B so he knows his baby is ok(now you see why he's a daddy's boy;) ). Well, when I got home Wanna B didn't pop up anywhere so I called for him- still no Wanna B.:confused3 I checked all his favorite hiding places- nope. Rick's freaking out on the other end of the phone, so I told him I'd call him back. I got the flashlight and really dug into the obscure hiding places I've found him in before(I swear he's part cat)- nope. I went to get up from checking under the daybed and looked up- the little *darling* was hiding in the entertainment center! The bottom drawer is still over in the other apartment and he climbed up on the shelf where the drawer goes!:rotfl2: I swear he was laughing at me.:sad2:

It was over 100 yesterday here and like you, I didn't want to know what the heat index was. All I know is it was miserable outside. Ahhh, the joy of a southern summer.

So sorry for the loss of your pet. They really become members of the family.

Tonight's dinner is the left over polynesian pork roast. It was good last night, but there was a lot of it.

:grouphug: Losing a pet is so hard for adults who have to make the decision. For kids who have have these friends in their lives for such a large part of their lives the pain must be so much more to bear. I dread the day when my babies start to get sick.

I am so far behind I know I would take up pages trying to respond.

My heart is breaking for those poor miners and their families. I know that we are all praying but :sad1:.

Last night I picked up chicken Alfredo and stuffed talapia, a rotisserie chicken and an apple pie from Costco for the girls to use for dinner. I have no idea what they fixed to go with them, I just had some fish and pasta when I crawled in at 9 PM. I begged to come home when my niece was going to make "just one more trip" and said that Dan would not mind the few things left in the house. "Please Please Please let me go home" SHe took pity on me and let me go.
