Tonight it's grilled BBQ sandwiches and waffle fries. BIL may be coming over to eat with us.

Wow, busy day while I was ironing!!!!!

Laura- thank for the recipe, Kady loves pancakes, it is what she always orders when she goes to breakfast and has been missing them. I am going to try them.

Lauren- Good news all over today- no scary news at the Dr and your "Lemon" yellow car is fine as well :thumbsup2. Send your sister to me, she and my older sister can torment each other and keep themselves amused.

Kathy- Have you corralled your flock yet? ;)

I missed a lot, I know. Dinner was good, Erica brought over her garden overflow so we had a saute of summer squash ans zucchini with garlic and scallions, green beens, carrots and potatoes. The fingerings worked well, but I would use them only as a last resort.

I'll check with my bunch to see if anyone is going to be home. If it is just Buddy and me we will have the leftover pot roast and veggies.

We are having cheeseburgers and chopped salad tonight. If I cut it all up small enough my picky eaters will eat it!!!! :thumbsup2

Ewwwww. I somehow don't think the garlic would enhance the flavor of the PB&J.:lmao:

Just because I am the "baby" does not mean she can tell me what to do. I am an adult and my husband takes great care of us. She is jealous for some reason...I am venting. OK, I feel better!!! :)

Your sister sounds like a bit of a challenge! Mine is just a freak. A selfish, self centered, it is all about me and my family, you don't understand do you???, if there is nothing in it for me I'm not here kind of person.

Buddy says how can she come from the same family Gail and I were brought up in????? I think they would do well together....Your sister can badger my sister and my sister can have a pity party that is enough for the both of them :thumbsup2


All whining aside, it has got to be hard to live in skin that is wrapped up so tight, don't you think?
 
Lauren--sadly, no the kitchen is not finished yet. The red is taking 3 coats and the only painting time I have is during naptime or after kiddos bedtime. I only have the walls above the cabinets left to do --but that's going to be the hardest part. I did buy some fun vintage wine ads to hang on the walls, but I managed to break one of the frames before even hanging the picture:headache:

Tonight we are having Lauren's braised pork chops. Special husband request. I will fix some white rice but I'm not sure yet what veggie we are having. For dessert, they are having Killer Turtle Brownies.

No fried green tomatoes for me tonight, I've been craving Chinese food for a while and tonight's the night!:woohoo: This city is getting pumped up - the Saints start training camp today!!:cheer2:
 
Sorry I've been such a no show right after joining...i lost the thread somewhere but alas..it is found :)

Dinner last night: Grilled Turkey burgers topped with a slice of provolone, cheddar ( Prov. and light american for me), red onions, lettuce and ketchup..corn on the cob..and baked fries ( for the man ;)..it was actually quite good..nice healthy alternative to red meat!

We have a wedding tonight, so wedding food whatever that may be!, and saturday we have a lobster bake ..YUM!!!
 
Hey y'all - DH brought home some Mahi Mahi that a co-worker gave him. I've never cooked it before, any recipes anyone?:confused3
 
Stephanie-- I was wondering about your kitchen yesterday as I was staring at my boring kitchen walls thinking I really should get going on painting them. At least your project is moving forward! Have a great trip this weekend.

Nancy -- The kids had the leftover pancakes this morning (I froze the ones that were left and reheated in the microwave) and they said they were even better than last night.

Becky -- I don't know why you thought the picture looked bad. Your food looked good to me.

Kathy -- All I can think of now is peanut butter and jelly on garlic bread. :scared:

I'm making corn pie for dinner tonight. I am making up the recipe, so it could very well be terrible. I'll have a tomato salad on the side. The kids will have ravioli.
 
Hey y'all - DH brought home some Mahi Mahi that a co-worker gave him. I've never cooked it before, any recipes anyone?:confused3

We don't often get Mahi Mahi around here, but I pulled out my Legal Seafoods Cookbook, and this is the recipe I would make if I had mahi mahi. (I've made this salsa before and it's tasty and goes well with fish. I would also grill the fish instead of broiling it like this recipe suggests, but that's just me. I never miss an opportunity to grill.)

Mahi Mahi Barbados (serves 4)

1.5 to 2 lbs mahi mahi
vegetable oil
Cajun seasoning
1 c mango (or peaches), diced
1 c diced plum tomatoes
1/3 to 1/2 c olive oil
1 tbsp fresh lemon (or lime) juice
1 c diced red onions
2-3 tbsps seeded and minced jalapeno
2-3 tbsps fresh mint, finely chopped (I would substitute cilantro or parsley since I never have fresh mint in the house)

Preheat the broiler.

Place mahi mahi on broiling rack and coat with vegetable oil, then sprinkle with Cajun seasoning to taste. Let sit at least 15 minutes (I would cover with plastic and put in the refrigerator to marinate for at least 30 minutes)

Gently toss together mango, jalapeno, plum tomatoes, olive oil, lemon juice and onion. Stir in the mint right before serving.

Broil fish until cooked through without turning. This will take 10-15 minutes, depending on thickness. When done, put on serving platter, garnish with half the salsa. Put the remaining salsa in a bowl to pass at the table.

Legal recommends serving this with jasmine rice.

All I could think about today was Chinese food, and then I went to my MIL's to clean while she visited with Kady. While I was vacuuming the circuit blew. I reset it but she would not put the AC back on! It was 96 degrees with humidity off the clock and not one window open..... :eek: I am so not cooking tonight. Marisa is bringing home Chines on her way home tonight.

I loved my visit in NO but I can't think of anything that's low-cal or child friendly ;). Glad you like it.


I'm still deciding on dinner Tomorrow we go by friends and I know I'll snack a little (tastefully simple party) so I'll save my points for then. I wanted to go out for dinner oh well this is all for me being able to loss the tire around my middle.

Things have been hectic here today AKA normal, lol.
I dropped Ross at Theater camp and then headed into town to do errands, halfway through Wal Mart Kris calls, and says that the electrician and the power company worker needed to get into the house as today was the day they were going to finish the power line, and fuse box issue, ugh. Needless to say I left the stuff in wal-mart, came home made sure the animals were ok and then headed back out. It is in the 90's here today.
I think we will just do pizza and breadsticks for supper. I have finally got the house to cool down as they had to turn the power off for 4 hours so no A/C running.

Tomorrow is Ross' play...he is in a production of Jack in the Beanstalk and is the strong man in the circus. We will take him out for dinner to celebrate afterwards. (his choice...which means...ruby tuesday)

Becky was very skeptical when I told her my menu plans tonight, but actually, the corn pie was pretty good. It was basically a vegetarian pot pie with a biscuit crust. Liam even liked it...shocking! The only problem is that it was fairly labor-intensive. It definitely wouldn't get Kathy's EASY rating.
