Glynis- How is Leslie today?

Lulu- Thank you for the recipe. I am going to add it to my file as soon as my cookbook is reinstalled.

Dinner tonight is Glynis famous pot roast with potatoes and carrots, along with green beans. Quick question, I have fingerling potatoes. Do you think they will work? I am trying to avoid going to the store for all purpose potatoes because I am not wired to to come out with one thing. $4 in potatoes can turn into a $50 bill :confused3

I think the fingerlings would work just fine. Just make sure not to add them too soon, so they don't get mushy. Or you could roast them in the oven. Of course that negates using the crock pot so as not to heat up the house. Hmmm.
 
Glynis- I made meatloaf muffins last night (tweaked a little for lower fat) and my DH wants to know if he can come live with you? "These are from the roast lady too?!?":rotfl2:

We met up with friends for Karioke (my ears are still bleeeding!) and he had to tell them about them- so now I have to print out the recipe for them too!

Anytime you guys want to come and hang out here in Utah, you'd be more than welcome!!! I'm glad the muffins were a success! They are a staple here. My son will eat 5 or 6 by himself. I'm always pleased to find something he'll eat, as he's a skinny little thing!!!

Dinner tonight will be taco salad. Very easy! I'm dead tired after my night with Leslie, so I wanted something easy and quick! I'm thinking a nap is in order this afternoon.

Alan took Jacob to work with him today, so the girls and I are having Mom/Daughter time. We'll head to the library in a little while for story time and craft, then somewhere quick for lunch (probably Arby's. They love the roast beef), then to Baskin Robbins for our traditional ice cream treat when the boys are gone! Then home for a nap!!!
 

Hmm... this thread was dead today!

Here is a photo of tonight's dinner. It is a panini based based on a recipe for a sandwich Laura used to get all the time when we lived together and would go to this restaurant called the Cottonwood Cafe. I was a vegetarian then, so never tried it, until tonight. The original recipe can be found on epicurious if you search "zuni roll". This sandwich had turkey, bacon, cheese, "raspberry enlightenment" from penzey's spices (basically, spicy raspberry jam), and chipolte mayonaisse. It tasted really good for not having any vegetables in it! :rotfl:

Sides were oven baked fries tossed with garlic and parsely, and sliced tomatoes from the farmer's market. The tomatoes were good, but I wish the heirloom varieties would come in.

Don't expect anything interesting out of my kitchen tomorrow. It is supposed to be hot and humid...I am thinking dinner out.
 
Today is my Pooh's birthday so I am making him his favorite: nutty Kitten chicken, Kitten-tash, and teriyaki noodles :)

It's Dr. day today...hopefully I will find out what is going on with my thyroid!!!

We are having Catalina Chicken (another family fav and low fat - we started weight watchers yesterday), yum, white rice and green beans or broccoli.

Last night ended up being lasagna leftovers. Tonight will probably be fish and chips or easy crabcakes(Kraft Family Recipe).

Dinner tonight will be leftovers from the fish last night and cukes with some crusty bread. It is to be in the 90's again today and humid, so I am not about to heat up the kitchen cooking. I don't need the A/C's running overtime, lol.

Good Morning Everyone!

LAst night we ended up having leftovers....again! I forgot that everyone but Buddy and me were going to a sneak preview at the movies so they ate out. Buddy was at the farm so we decided to keep the pot roast for tonight. Marisa will have a piece of chicken.

I'm not really sure what we are having tonight for dinner. Leftovers if it is just us, but my parents may come by and if so, I'm not sure what I'll fix. Mom and Dad are leaving tomorrow for two weeks and going on an Alaskan cruise celebrating their 40th anniversary. As Daddy likes to say, they have been married for 25 happy years. :lmao:

For dinner tonight, I am making an omelet with tomato, fresh mozzarella and basil. I'll have a salad and pesto bread with it. The kids won't eat that. I have to ask Caili what she wants because the only thing she liked at dinner last night was the carrots, so she just had that and then three slices of cheese from the refrigerator.
 
Lindsay, what is kitten-tash? I am thinking some kind of hash brown? If it is, please post the recipe, I am still on the quest for a good hash brown recipe. Happy birthday to your hubby!

I changed my mind and decided to cook dinner tonight after all. We are going out tomorrow instead. In yet another example of spooky sister mind reading, we are having....omelets. Mine's going to be a spinach-gouda one though, with some breakfast-y type of chicken sausages that I am going to serve with a peach compote I am making from the peaches I got from the farmer's market (not very good for out of hand eating--it seems that MA peaches never are!). I think I will do some sauteed cherry tomatoes and brioche toast also.

Dinner tonight will be a baked chicken dijon. I'm going to saute summer squash on the side, and possibly some brown rice, too. Dessert will be the rest of the homemade ice cream from Tuesday. Yum!!!
 
Hi All,

Just back from the Dr. I got a pretty good report, I think :) . My hormone levels are getting better by themselves but I do have to go for a biopsy. She said for the amount of nodules that I have (I have alot...maybe 8 - 12) it is rare to have cancer and if it is, it is very treatable and rarely spreads.

I just have to keep going for blood work to make sure the levels are OK. She did not prescribe any medication so that is good.

Oh, my pressure was a little high again but I think that was my nerves, the fact that one of my sisters called this AM and was being a real jerk (I will not be talking to her for a while...she is not very nice) and my car started acting up. Thank God I got home. They may have to flat bed this piece of junk out of my driveway AGAIN!!!! That is what I get for getting a "lemon" yellow car!!!

OK now I am babbling!!!
 
Lauren, I am so glad you got a good report. I'll keep sending positive thoughts your way until all the tests are done. I'm sure the blood pressure was just stress...I always have high blood pressure at the dr's.

I can't take credit for the combination. I had it for brunch at a local restaurant, and it was yummy, so I am replicating.

To stay in the breakfast-type foods, Caili has decided the kids are having eggless blueberry pancakes (new recipe...I'll post it for Nancy if it gets a thumbs-up) and bacon. The girl is a bacon addict.
