Lauren- Glad you had a fun trip, even though it was a lot of driving. I had to laugh at the culture shock comment...Even for us, being from a very small Maine township, and very rural state, the first time we went to Vermont was even a bit for us, there was cows, barns, and cheese, lol.

Ross is off to theater camp this week...just day hours...9-4. He is doing two seperate weeks this year. They work all week, and then on Sat they put on a full scale production. This week is Jack and the Beanstalk.

Dinner tonight is Spag. with fresh sweet italian sausage I picked up from the farmers market and garlic bread.

I forgot to add their friends from Maine were there and one of them was trying to teach me "Maine Terms"...of course I forgot them all...I think one was "door yard" meaning the front yard...Did I get that right? Sounds like Ross is going to have a blast! Sorry the social worker is off today...:hug:

Kathy - :cool1: :cool1: :cool1: for Kyle. That is wonderful! I hate you weren't well enough to be there. But it sounds like you will be attending some college games somewhere to watch him play.

I haven't felt well since about 5 this morning. I hope it will pass soon. Although on the bright side, I won't be gaining any weight from last night's splurge. :sad2:



I do have a question for Nancy or Kathy (or anyone else). I bought some baby back ribs yesterday and I thought I remembered some posts from the two of you a while back where you made ribs and they turned out great. I'm too lasy to search for those posts. Could you tell me which recipe you used? Thanks.

I don't remember the name of the rib recipe but it did include "illegal" in the name and it was Nancy's recipe. I hope that helps.

Thank you all again for the good thoughts......I tried to reach the social worker but she has Monday's off...WTH?? It is hard as I have no idea how the florida health care system works....I have been taking care of my grandparents for 12 years here in Maine, and it like the back of my hand here, I hope it works somewhat similiar....the only good thing is at least I know what to ask and what the answers mean......

That in itself is a huge advantage you have going for you. I was clueless. Please keep us updated.:hug:

Is the green onion a white cheddar or an orange? I have a hard time finding green onion cheese when I want to fondue, so I may have to order from this site. Thanks for posting the link!!

I fixed a delicious Italian stuffed pork roast over the weekend! I took pics but the pics don't do the roast justice so I won't post them. So we'll have leftover for dinner.

Wendi I hope your mom continues to improve. I hope the social worker is good and gets her and your dad set up. They do have some agencies that come to the house for nursing, depending on how much care she needs.

Lori----Ross is going to flip when he sees your photos!!! I can't wait to pick him up and tell him they are posted!!!! You are going to be his hero, lol!!!

Lauren---It seems unless you are from Maine no one knows the word "dooryard" (all one word) and all find it very odd. It means yard in front of door (usually side or back) of house, but mostly said in place of driveway. Here is a good example(true story): We had business clients come from Minnesota here last year, and while at dinner I said to Kris "Your father's (which is pronounced Fathah's) dooryard was wicked muddy"....Well between the word dooryard and wicked, never minding my thick maine accent, they were busting a gut, lol. They still can't figure out the usage of the word dooryard!! (pronounced doahyahd)
A few others that they might have told you could be:
Ayuh- Yup. Sure. Okay. That's right. You Bet.
Cunnin'- Cute..........my dsil still can't figure this one out...when my memere first said it to my dn she was shocked until we told bonnie what it meant, lol
this is an easy one but my neighbor said to put it:
Apiece- An undetermined distance: He lives down the road apiece.

the nice thing about everyone is ....noone thinks they have the accent, it is everyone else that does, lol.

:laughing: Okay, I'm not trying to tease you! My pictures really don't look nearly as good as it tasted. Here's what I think I did. I didn't use a recipe so I'm been trying to remember exactly what I did so I can recreate it, cause it was so yummy. I hope you can follow this crazy rendition of a recipe!

I'm going to risk embarrassment just for you, Oh Queenie!! Again, sorry it's so big, I can't figure out how to resize them.
So....here's a pic of the roast right out of the oven! Kathy, the smell of this cooking almost rivaled your Royal Chicken.

Shovan's Italian Stuffed Pork Roast


3 lb. Lean Pork Roast

Cut thin deep holes in Roast & stuff with 3 large cloves of garlic sliced thin & chopped herb mixture. Season Roast and rub outside with 1/3 cup of the the fresh herb mix. Marinate about 2 hours.

Marinade

Chopped fresh parsley, sage, rosemary and basil
( a lot of herbs for the marinade & stuffing, about 1 1/2 cup total, use rosemary in the marinade only)
diced fresh garlic
Olive oil
Light Caesar Italian dressing
Bob’s Cajun Seasoning & Fresh Ground Black Pepper

While marinating roast, prepare stuffing:

Stuffing

Chopped Pine Nuts
Chopped parsley, sage and basil
Half of large portabello mushroom diced
Diced garlic
3 links of sweet Italian sausage removed from casing & cooked
Italian Bread Crumbs
Grated Parmesan Cheese
Fresh Ground Black Pepper
1 egg beaten
olive oil

Combine all ingredients & mix. Add enough olive oil for stuffing that sticks together.

Cut large pocket in roast
Fill with stuffing
Close opening with toothpicks
Pour marinade over roast
Bake in preheated 360 degree oven about 1 hour or until internal temp is 150 degrees
Allow roast to rest, Remove toothpicks and slice across short end of roast

We are having pizza tonight.

Here is the squash recipe:

Shredded zucchini with lemon and thyme

2 lbs. zucchini and/or summer squash, grated coarsely
1 1/2 tsp. kosher salt
1 tsp. lemon juice
zest of 1/2 lemon
salt and pepper to taste
2 tsp. fresh thyme, chopped
1 tbsp. evoo

combine the squash and the salt in a colander and leave to drain at least 15 minutes. place the squash in a clean kitchen towel and wring it out until no more liquid comes out.

heat the olive oil over medium high heat until quite hot. Add squash to pan and saute about 4 minutes, until cooked and browned in spots. Toss in the lemon juice and zest and the thyme, season with salt and pepper to taste, and serve.

You brought me back some. My GM was Memere, and my Mom was Memere to my kids. My Aunt always says Kady is "cunnin". I don't hear it too often, but I smile each time that I do.

Dinner tonight is American chop suey. We were going to have some of the left over salad with something, but it is raw and damp here today. This is the supper we always have when it is stormy or clammy.

They're in the oven right now. I don't feel like eating any of them, but they really smell good. DS loves ribs and for a skinny boy, he sure can pack them away. I don't think he and his Daddy will have a hard time finishing them by themselves.

How are you feeling? It's mighty expensive going to the movies I think I'm going to start smuggling in drinks. I paid 3.00 for a bottle of water :eek: My the way this movie was pretty good I my opinion they left out to much of the book.
