Ocean Annie, where was your avatar photo taken? I've seen some really cool shots with that same type of chair on the flickr Caribbean groups.

Last night's dinner--I was so hungry I made two pizzas! Bad mistake, now there is pizza for an army. Anyway, the left side is a traditional margharita style, and the right is one I made up...base of spinach-artichoke pesto, and toppings of feta, montery jack, and parmesean cheeses. The light was bad, sorry about that:

And tonight's dinner. Only click if you like tofu! It was a stir fry of rice, carrots, broccoli, sesame omelet, teriyaki marinated pressed baked tofu, tons of garlic and ginger, and a bunch of sriaicha sauce and cilantro. I tried to disguise the tofu as best I could in this photo:

Low Fat Chocolate Zucchini Cake

Preheat oven to 350
Spray 9 x 13 pan (or two round cake pans) with Baker's Joy (any cooking spray will do,but one with "flour" in the mix work best for cakes)

Mix 1 box Pillsbury Reduced Sugar Cake Mix (or another chocolate cake mix, lowest in calories/fat you can find)

with
5 egg whites
1 whole egg
1 T vegetable oil
2 c shredded, unpeeled zucchini
1 cup unsweetened applesauce
2 T grated dark chocolate
dash cinnamon
1 tsp. vanilla extract
on low speed until smooth, thick and glossy

and bake at 350 for 30-40 minutes
 
Not sure about dinner tonight. My dad called yesterday wanting us to go out to eat tonight or tomorrow night. If we don't go out tonight we will have leftovers.

Our plans are somewhat changed. My Leslie came down with a really high fever this morning, and I've spent the day dosing her with Tylenol/Motrin, and trying to keep her cool enough for the fever to come down. Just a couple of hours ago, she began throwing up

Glynis, hope Leslie is feeling better.

Andrew is pretty sore today so I am keeping him home from rec. He ate all of his dinner (meatloaf, mashed taters, corn) so I will keep it soft again today. A and I will have baked flounder and I will make Tom a steak (he said he will try the fish - he's my "I only eat shrimp cocktail" guy. Fresh green beans and cukes from our neighbors garden and I am not sure what else.

Dinner tonight is Glynis famous pot roast with potatoes and carrots, along with green beans. Quick question, I have fingerling potatoes. Do you think they will work? I am trying to avoid going to the store for all purpose potatoes because I am not wired to to come out with one thing. $4 in potatoes can turn into a $50 bill :confused3

Oohhh.. now that's something I haven't had in AGES! Don't laugh, but could you share how you make them? DMIL's were wonderful, but I've never been able to copy them.

Only $50.00 you get off cheap. I think you could use those potatoes just add them towards the end of the cooking.

I have never made a pot roast, but I just wanted to say that I love fingerling potatoes! They are so sweet and creamy.

I think tonight I am going to make pasta with spinach and mushrooms. Unless it is too hot when I get home, then I will just make panini.
 
Smothered potatoes (or "choked" potatoes as my in-laws would joke) is one of my childhood ultimate comfort foods. If Kathy's making what I remember, it's simple stuff... just seasoned potatoes & finely chopped onions / green onions in a skillet cooked 'til they're soft & yummy. I guess a close comparison would be home fries.

My problem is I was never patient enough. I think the secret is to cook them low & slow. I'm hoping Kathy can help!
 
Morning all--

Lauren- sorry to hear that A is sore, but soft food and a day of rest should do the trick. I did the whole braces thing, palate expander as well from 3rd grade until 7th! Ross starts up this fall with the begining of it all, I am just glad that he will be through most of of it before high school!

Glynis- How is she Leslie feeling today? Poor thing!!

I totally forgot yesterday that Ross had karate from 5-8 when planning dinner. Soooo tonight will be the fish, carrots, and cous cous. Last night ended up being frozen pizza.

I think the fingerlings would work well, just don't put them in to early.:thumbsup2

A little EVOO, cubed potatoes, onion, garlic(if you like) & Tony's creole seasoning. I start them out on a medium-high heat to get them going then cover, lower heat and let them get nice & tender.

Dinner tonight is grilled bratwurst and sauerkraut. I haven't decided what else I am making with it. Normally, I would make potato pancakes, but it's going to be hot today and I don't want anything that filling.

Glynis- I made meatloaf muffins last night (tweaked a little for lower fat) and my DH wants to know if he can come live with you? "These are from the roast lady too?!?":rotfl2:

We met up with friends for Karioke (my ears are still bleeeding!) and he had to tell them about them- so now I have to print out the recipe for them too!

Just wanted to let you know you had more fans.:banana: :banana: :banana:

Thanks for asking, Kathy. Leslie is feeling much better today. She ran a really high fever until about 4:00 this morning, when it broke. She's up and running around with her sister, and wanting more than the Cheerios I'm giving her.
