Dinner tonight turned out really tasty so thought I'd share! We had boneless skinless chicken breasts, pan-fried in olive oil with lime pepper seasoning. For sides, we had some fresh (and I mean FRESH) carrots in butter, and some spiced ripe plantains and pineapple. The carrots came from a CSA (community supported agriculture) farm; we get a big box of fresh veggies every other week all summer and fall from them. Here's the recipe for the plantains & pineapple:
2 ripe plantains (all yellow/black skin, no green), peeled & sliced in 1 inch sections
1 large can pineapple chunks in juice
ground cinnamon, nutmeg and clove

Spray a large flat frypan with pam or coat lightly with oil and heat to medium. add sliced plantains in single layer. season with cinnamon, clove and nutmeg. cook for 2-3 minutes until lightly brown on bottom, turn. add pineapple and a little of the pineapple juice, and spice again. Cook another couple of minutes and serve!

The sweet/savory tastes of the plantains and pineapple contrasted very nicely with the hot/tart taste of the lime pepper chicken, and the buttery fresh carrots were a very nice accompaniment. Not much left over, that's for sure!

That all sounds so good! I've been on a lime kick and the lime pepper sounds right up my alley. :) I'm going to swing by Sams. :drive: Drinking a limeade as I type.

Nice Gifts!!! And your right. I thought I was the only female to enjoy cooking stuff. DD gave me a basketful of goodies for christmas ( I think) don't think I've ever gotten more excited. Just don't give me an iron or vacuum. :lmao:

Wow there's like 8 or 9 pages since Friday!!! Can't keep up with y'all! It'll take me all day to read everything that going on.

Don't know what's for dinner tonight yet. But here's pics of the Salmon I fixed on Friday or was that Thurs., well whenever... I grilled it on Cedar Planks soaked in apple juice (a la the BeadPirate). I marinated the salmon in garlic, ginger, maple syrup, soy & white wine. Placed the salmon of top of green onions on the plank. I also used a smoker box with applewood chips in the grill & cooked on very low heat to smoke the salmon. Here's a pic of the salmon on the plank.

Then I topped the Salmon with a Cajun Spiced Pecan Maple Glaze. I didn't use a recipe, but I'm trying to remember now everything I put in the glaze. I coated the salmon with the sauce while it was cooking, then topped with the remaining sauce & pecans. I served it with the grilled corn on the cob and ginger spice sweet potatoes.

I have to say my DH was quite impressed. It was very good.

WOW, does that look yummy!! Gonna hafta try that one ASAP!!
 
Today is my daughter's birthday too, so it will be easy for me to remember yours from now on!

I have no idea what I'm making for dinner tonight because we have found ourselves in the middle of a project involving our outdoor zoo. We are trying to round up all of the kittens to treat them for fleas.

We are having crostini with tomato, garlic basil and mozzarella; garlic bread; grilled rib eye steak, grilled garlic and herb chicken; steamed broccoli; local corn on the cob; baked potatoes; 'Ohana Cheesy potatoes and a big salad. For dessert I made a fresh Blueberry pie, a derby pie and a peanut butter silk pie.

WFD? Decided on deviled eggs, coleslaw, macaroni salad, and peach "dump" cobbler. The cobbler is so easy. Three ingredients! (But I added a few things here and there.) First time trying the cobbler recipe. I'll let you guys know how it turns out! :)

Hi everyone! I'm sorry I haven't posted in forever. I've been cooking and baking a lot and just haven't posted WFD! I've made a lot of Ina Garten's recipes and everything has been AMAZING! If you want any of these recipes, I'd be happy to post them :)
These are some things I've made recently -

oven fried chicken
chicken stuffed with goat cheese and basil
couscous with pine nuts and currants
lemon chicken with croutons
macaroni and cheese with tomatoes
provencal tomatoes
provencal vegetable soup
orzo with roasted vegetables
potato basil frittata
parmesan roasted cauliflower
california blts
turkey meatloaf
potato salad
sauteed onions and peppers

carrot cake cupcakes
strawberry tarts
lemon meringue tart
berry tart

I'm more into cooking but do enjoy baking sometimes. I took pictures of my first attempts at making tarts. (which I'll post later)

Oh and for dinner I'm having leftover oven fried chicken. YUM! I abandoned my vegetarian ways. :) I seriously couldn't resist bacon anymore!
 
I forgot to post what I'm having for dinner tonight. I deboned some chicken breasts and threw them in a concoction of Italian dressing, soy sauce, bbq seasoning, and liquid smoke. I'll grill them, slice them and put them on top of a big salads. I'm not much of a baker, but I love warm fresh baked bread so I bought a can (Pillsbury) of French bread to go with the salads.


Kathy ~ I love getting kitchen stuff for gifts too. There's always some kind of new gadget I want. The latest is a pineapple corer/slicer.
