The kids requested cheeseburgers and hotdogs for dinner tonight, so that's what we're having.

Caili has a big skating competition (district championships), plus Liam has baseball this weekend, so we are going to be super busy and I might not get a chance to check in until Sunday night.

Lauren-- I hope you have a beautiful wedding and terrific honeymoon. I can't wait to hear stories and see pictures when you get back!

Ed, My Niece ,Jeremy and I are all going out to luch and then we are going to the hospital to see my mother.. I have 1 steak thawed for dinner which Ed and I will probably share with a salad.. As I am going on vacation soon I am trying to eat light.. Lets see if I manage that at a restaurant... They have awesome cheesecakes to take home?
Will she resist the cheesecake or not? Stay tuned.

Hi ya'll! I don't think I've come in to only a page and a half in a long time!

Last night was leftover baked salmon. I pan warmed it with lemon and white wine. Browned some fresh mushrooms with kalamatas, topped with some feta and green onions and pan roasted corn for a side.

I do my first check in for the Alli capsules today. I haven't gained back the 5lbs I seem to have lost-so that goes in for a win!

Rick gets home today and we're heading for the Happy Hour! Last week he was irritated with me cause I had 2 cocktails and drank club soda the rest of the time we were playing trivia....I didn't want to waste my calories on something that wasn't food!:rotfl: I was told that I was sad.:sad2:

Sad maybe.....but full!;)

I came back here because I changed my dinner plans. I am going to attempt to replicate a tuna dish I like at a local restaurant--it's a pan seared crusted tuna with red and green curry cream sauces and crispy pear-scallion ravioli. This is assuming I can find some good tuna of course!
 
I need to stop posting what our dinner is going to be until AFTER we eat it because we rarely seem to follow through with plans!

I was out of the house by 545 yesterday morning so by 6pm, the last thing I wanted to do was even stand up, much less cook (I don't do mornings) so I napped instead. So, at about 10pm last night I decided Taco Bell sounded good so we ran and got that instead =)

Nothing better than Taco Hell at 10 at night!

Tonight we really ARE having burgers and hot dogs because we have a game night at church. Since I'm hosting it, we're going.

Lori, That mushroom dish sounds yummy! It seems to me Rick might be trying to sabotage your diet! Maybe he doesn't want to be leaving a skinny wife at home all by her lonesome? Mmmmnn.... ;)

liamsaunt, Crispy pear scallion ravioli sure sounds complicated. Take pics pleeese!

If I ever get out of remodeling hell, we just might do that. I wouldn't know the first thing about planning a trip like that and sure would need your help. Thanks!

My poor DH & I have an appt. at three with the designer at the tile store. I am making him leave work & come with me, I can't make these decisions alone! Although the poor man is so depressed right now. The roofer came to repair the flashing around the fireplace $850, then the fireplace guy who we had originally called even before the roofer decided to show up! He climbed up there & found that the leaking is not just the flashing around the fireplace but also another problem inside the fireplace. The roofer agreed, so that's Another $650 dollars! Just gave Mario a $1000 deposit so the wallet is running empty really quickly.
Oh, maybe I won't get to go out to eat & maaybee I really shouldn't be bringing DH along to pick out the tiles.;)

Tonight we are having chili.

We had summer now we are having fall weather today cool with rain tonight.
Hope tomorrow is nice I want to go to a festival in a neighboring town. I have a craving for a funnel cake.

Well, see my poor, sick. hospitalized mother loves cheesecake and I thought she deserved a treat so yes.. I have a cheese cake... It's in 4 quarters, pineapple, cherry, strawberry, and blueberry

That sounds so good! My family got BLT's for dinner tonight. After seeing your dinner plans I think mine were just sad.

I can sympathize with your "one more thing that went wrong" snowball. I thought that for a while it was never going to end. DH just about :faint: every time we got a new bill.

Gretchen, I am so glad that hubby enjoyed Tom's Home Chicken...we really enjoyed this too. Easy right? :)

Thank you all for your best wishes!!! I am still a little paniced but all will go well...that is my nature...I tend to be a mess when planning things. Let's see what went wrong today...I dropped off the unity candle and bird seed to the church and the secretary proceeded to tell me that bird seed was not allowed...the Pastor was not there so I could not talk to him about it. Andrew was so upset since he was the ring leader of that project. It we can't use it its no big deal...I will just give it all to my Mom who feeds the birds outdoors everyday...Then Tom and Andrew go to pick up their Tuxes and Andrew's pants are too short, Tom's sleeves are too long and the shirt does not fit. They assure us that everything will be fixed tomorrow...Needless to say, I've had a few Cosmos...It could be worse right...:) :) :)

Thank you all again! I really appreciate all the kind words. I will be thinking of all of you on Sunday!!! Tom called the Inn to make sure they had internet and they do so I may check in during the week...we are internet junkies!!!! :)

Hey friends....I haven't had a chance to check in for a few days...I would pop on and try to catch up, and then the phone rings, or someone is at the door.....school is out and we are the house that all hang out at........I wouldn't have it any other way as this way I know what is going on, BUT it makes things really crazy.......by evening I am sipping X-rated on the rocks and wondering how many bottles of it I will need for summer, lol!
Today was going to be my day of no kids and just Ross and I hanging out.....in the middle of running a few errands my cell phone rings for Ross....and it was one of his best friends from school and karate team (and almost a second son to me) calling to see if he could sleep over tonight, cause his younger brother had a friend over and he wanted out.....................so I am counting down the hours until 11pm when I say lights/sounds out and don't let me hear or see you until 7:30.

Sheryl--- I missed a lot on here, but Mario was not one of those things......something else delish in your kitchen besides food........

Jenny- I do hope your mother is feeling better soon.....you will sure be in need of that vacation after the year you all have had!!

Lauren- I missed posting for you to see by a few moments.....when you do see this.....please know that I will have you in my thoughts this Sunday, no matter the little things that get hectic, the most important of it all will be those two men of yours waiting for you at the end your walk!!! Supper tonight was papa johns at 8:30 when the boys finally figured out what they wanted.......1hr and 45 min to go until they are out of sight and sound.........in 1hr 46 min I will be pouring my drink over ice.....

Dinner tonight ended up being pizza at our local pizza joint. We are such regulars there on Friday's that they know our order and have the drinks there when we come in--we should almost have a reserved sign on "our" table! Tomorrow- I decided to throw an impromptu dinner party/cookout for some good friends. It all stemmed from a sangria recipe that I found this week--I'll post it if it turns out yummy! It's already in the fridge getting yummy as I type. Hope everyone has a wonderful weekend--it's bedtime for me!

Lindsay - is the cashew chicken recipe posted here? It (and the noodles) sounds really good.

The noodles are courtesy of Lipton :) The recipe for the chicken was on page 49, but here it is again, just for you :)

Nutty Chicken

2/3 cup (eyeball it) cashews
½ cup plan bread crumbs
1 T. grill seasoning
2 eggs
Splash of milk
½ cup all-purpose flour
3-4 boneless, skinless chicken breasts


1. Preheat oven to 350.


2. Put nuts, bread crumbs, and grill seasoning in a food processor and combine. Pour breading into a bowl.


3. Beat eggs and milk and place in a bowl. Pour flour into a separate bowl.


4. Dust both sides of chicken with flour. Dip chicken into egg and then coat with breading.


5. Preheat a nonstick skillet over medium high heat. Add vegetable to lightly coat the bottom of the pan. Brown chicken about 3-4 minutes on each side or until light golden in color.

6. Place chicken in the oven a cook about 10-15 minutes or until chicken is done.
 
Morning all--- I am having a few moments of quiet before Ross and his friend are up...........not sure if they are awake or not yet, as I told them last night at 11pm that I did not want to see their faces until 7:30........the friend goes home at 10am so it won't be that long of a morning....now if no other kids show up here today it will be a miracle.....

wfd tonight is chinese......we were supposed to go out for it last night but when Ross' friend sort of invited himself over it messed up the plans a bit.....that is ok, they way it looks right now I won't cook a meal all weekend.....I will be ready for home cooking come Monday that is for sure....
 
Lauren, I am so excited for you!! They did not allow birdseed at my wedding either. We passed out little jars of bubbles instead! It might be too late for your ceremony, but I just thought I would mention it. They sell the small bubble jars at craft stores. Dont YOU go to the store to get them though! :)
