Ok lucas, here is the recipe you requested. I made it for the first time tonight and Wow, it was good.

Shrimp and Wild Rice Casserole - Paula Deen

1 (8 oz) pkg wild rice (I only could a 6.7 oz pkg so I used it)
1 lb medium shrimp, peeled and deveined
2 tbl butter
1/2 green bell pepper, seeded and chopped
1/2 onion, chopped
1 (10 3/4 oz) can cream of mushroom soup
2 cups grated sharp Cheddar
salt and pepper

Preheat oven to 325 degrees

Cook the rice according to pkg directions minus 1/4 cup water. (The recipe here says to drain and cool, but I didn't understand the "drain" part, but I did let it cool a little.

Bring 2 cups water and 1/2 tbl salt to a boil in a medium saucepan and cook the shrimp for 1 minute. Drain immediately and set aside.

Heat the butter in saucepan and saute the pepper and onion until soft, about 5 minutes.

In a large bowl, combine rice, soup, 1 1/2 cups of cheese, shrimp and vegetables. Add salt and pepper to taste (I didn't add any salt and I'm glad). Mix well. Spray an 11 x 7 inch glass casserole dish with vegetable spray. Place the mixture in the pan and top with remaining 1/2 cup of cheese. Bake for 30 minutes, until bubbly.
 
Tonight we had chinese takeout. I was too lazy after doing a few errands after working 8 hours to cook. Maybe I've surprise you all by cooking sometime that requires a recipe I could share one day. ;) But just incase don't anyone hold their breath :lmao:

Ya know, this morning I had no idea what a creole was so I googled it...nothing came up...now that I know what it is, I am craving a tomato...sandwich like others have said. Nothing like a juicy tomato, mayo, s&p and a dash of sugar!!! :)
 
Sorry for the multiple posts, but I wanted to ask if any of you had eaten Amberjack. Publix has it on sale this week and I was curious what it's like - is it a white fish; is it meaty like grouper; is it fishy?

It really was good. Anytime DH starts his "I'm a lucky man, I'm a lucky man" chant at the dinner table it means the dinner is good. :lmao: Did I ever tell you the first time he proposed to me was over a plate of shrimp in a tomato cream sauce over angel hair? ;) This was on date 5 or 6. He actually asked after tasting the 3rd or 4th bite, "Is it too soon to ask you to marry me?" When I told him it was, he said "Just checking". I guess for him the way to his heart really was through his stomach. :rotfl:

We went for our 2nd and last counseling session tonight...OMG...almost 2 weeks away!!! :scared1: :scared1: :scared1:

I forgot totally about rice/birdseed to throw after the ceremony. Do you think it would be OK if I just put a big bowl out and people scoop their own or do you think I need to make individual ones?

I am taking my Mom for a dress tomorrow. My Dsis told me to be very patient, which I tend not to be...I have to pray real hard for patience tonight...

Oh, thank you Kathy. I do have patience with my Mom...I am just very stressed lately. She actually wants to wear something from her closet, which she has beautiful clothes but has lost alot of weight and nothing fits right.

Now, Kyle...Wow! Very handsome!!! Abi is stunning as well...they make a really cute couple...:) Thank you for sharing...

I made some really yummy white beans tonight!!! (not that I am bragging:rotfl: )They just really came out great. But if you cook'em with a ham bone it makes so much of a difference. I had a leftover hambone with lots of ham on it leftover from Christmas(honeybaked) that I had deep frozen. I took it out last night, crockpotted the dry white beans this morning with salt/pepper/Tony's on low for 5 hours. Came home, put in the defrosted hambone(after cutting ham off of it and using half of it for my beans), added the already cut up for you seasoning(about 1/3 of the container)-put it on high for 2.5 hours.

We went blueberry pickin' today, so we had a dessert(not usual for us!!)-vanilla ice cream with a warm blueberry sauce the owner of the blueberry farm gave me. I used sucanat(to make me feel a little better about it!), but it still was high in sugar! YUM!!

Lauren - I hope all goes well with your mom. I'll be thinking of you tomorrow. Actually, I was thinking of you earlier today. One of the girls in my office is getting married the day before you. She was stressing about the last minute details and I was thinking you are probably doing the same thing.

I have a funny story to share...we were on our way to the Pastor's house...about half way there...and I look down and notice...I had my slippers on. What a dumass! DF scolded me the whole way home...saying if he did that, I'd be screaming at him (we were running late to begin with). I couldn't stop laughing!

Ladies, you have my mouth watering for those tomatoes. A trip to NOLA and those amazing tomato sandwiches sound like just shy of heaven :thumbsup2

The soil here in the CT river valley grows the best strawberries in the world! I don't know why, but they are better here than anywhere else, so I understand how your tomatoes are superior.

When we head up the east coast on our road trip, we'll have to plan it during Creole tomato season, so we can bring you some!!

Lauren, Good Luck with dress shopping for your Mom tomorrow! On the rice/birdseed, most of our Catholic churches here won't allow it any more, it's a falling hazard!!!! :sad2: But because of that, people have started have started blowing bubbles instead. It's pretty nice.

Lauren-Congrats on your wedding! Don't stres too much, I am sure you are doing fine, and it goes by so quickly. Enjoy it.

Lorraine Dawson's Blueberry sauce(Waldhiem, La.):

1.5 cups blueberries
1/3 to 1/2 cups sugar(I used 1/3 sucanat)
1TB cornstarch
1/4 cup water
1/4 tsp almond extract

put it all in a saucepan over medium, to med-low heat, stir frequently for about 20-35 minutes
remove from heat and add almond extract, mix well(should be sticky and getting thick.)

She says to refrigerate, but we had it warm over the ice cream. I'll refrigerate the rest. She also says it will keep for up to 10 days in the fridge.

Alex has finally said he would give shrimp another try. He did ask if he had to eat the tails :lmao: That kid cracks me up.

We will most likely eat something mexican (that's Alex's comfort food) he will be nervious today because of the storms.
