Good Morning All!

Wendie- my Mom always said that no good will come of taking anything that does not belong to you. It has been the philosophy that keeps me from exploding when what you describe happens. It is not easier to watch, I just keep telling myself that I am glad that I will not be the recipient of the consequence.

Kathy- Those pork chops are my families favorite.

I am not sure what I am cooking this evening. I have ground turkey and may make the pizza muffins or maybe stuffed peppers.
 
Kathy--have you posted the recipe for the Creole Tomato Salad? If not I would love it!:thumbsup2

There really is no recipe, when they are in season I just chop (large chunks) up some creoles, green peppers, onions and avocado. Season with salt & pepper, olive oil and vinegar. I could eat this all day, every day!!!

This is really quick. Start to finish in 20 minutes.

Scallops Newburg
1 lb of scallops, rinsed and drained well (you can use bay or sea, I’ve done both)
1 tbl butter
garlic powder
Old Bay seasoning
1 can cream of shrimp soup
3 oz cream cheese (easier to use if softened, but ok if not)
¼ cup cooking sherry

Heat butter in skillet over medium-high heat. Add scallops and sprinkle with garlic powder and Old Bay to taste. Cook for about 2-3 minutes, stirring occasionally. Add soup, cream cheese and cooking sherry. Stir until mixed well and reduce heat to low. Simmer for about 5 minutes or until hot throughout.

I served this over angel hair last night instead of making the rice pilaf. I’m glad I did because the sauce was really good.

Tonight's dinner is Paula Deen's shrimp and wild rice casserole.

I used Campbell's. I found it at Publix, but my Super Walmart carries it too.
 
Sorry for the multiple posts, but I wanted to ask if any of you had eaten Amberjack. Publix has it on sale this week and I was curious what it's like - is it a white fish; is it meaty like grouper; is it fishy?

Morning everyone! :)

Still using what I have on hand. We're having Kraft Italian Pasta Salad. I'm adding chicken breast strips, pepperoni, tomatoes, and cucumbers. In the mood for something light tonight.

I might make some Oreo milkshakes for dessert. I'm just going to use up the ice cream we have, add some milk and crushed Oreos. Blend them all together! (I'll have to pick up some Oreos though sometime today.)

He actually asked after tasting the 3rd or 4th bite, "Is it too soon to ask you to marry me?" When I told him it was, he said "Just checking". I guess for him the way to his heart really was through his stomach. :rotfl:

I am just having the leftover corn chowder tonight. It's our last Wednesday skating night for the season. Things are starting to slow down a bit.
 
We're at Disney Oct 26-29th! We're gonna do MNSSHP on the 28th--I think that's right, whatever date Sunday is. We're at SSR, but have waitlisted for BCV. DH and I are going to run the ToT 13K on Sat. night, can't wait!
Stephanie- we have to meet up this time....I missed you for the Minnie Marathon. But now I know if I schedule a trip for a race time I have a chance at meeting at least one DISer I know!:lmao:

Last night was some conglomeration of ground beef, garbanzos, frozen corn, onion, and a can of diced tomatoes with balsamic vinegar and olive oil- over grits. Trying to use up odds and ends- can you tell?:rotfl: Tonight will be leftovers- either that or the baked chicken from Monday night.

We'll be there! I cancelled the waitlist though. I needed to bank points or lose them so I banked. We'll either be at the campground in the RV (If we get it) or at the Grovsner. Oct 24-28

Stephanie, Both of these sounds delicious. Thanks for the recipes. I make a chicken dish almost just like that, I called it Spanish Chicken, but the proscuitto would really kick it up a notch.

Kathy, Did you run down to Belle Chasse for those? or found them at your grocery? I'm dying for some real creoles! They didn't have any at either of my stores yet. Your salad sounds yummy! Grab some vidalia onions for it & it would really be fantastic!

Wendie, Sorry about all of the drama in the family! If your DH hasn't said anything, you are being smart to keep quiet on it! Just try to stay away as much as possible!:hug:

I got off really easy last night. DH was not too hungry, so we had the leftover King Crab legs that were again so good. Followed that up with a fruit, cheese & bread tray & a bottle of wine! EASY & YUMMY!

I had gruyere & that strange looking but yummy Norwegian cheese (gift from Norwegian business assoc. of DH's). We had it in Akershus & loved it. If any of you go to Akershus for breakfast give it a try! It's very brown & doesn't look very appetizing but it is so good with fruit, it has a very sweet caramel like flavor.

Don't know WFD tonight.

Lori--sorry, the ToT race, is the Tower of Terror 13K/6.5K to celebrate the 13th anniversary of the Tower of Terror. It's held at night at MGM, starts at 9:30pm with a private party for race part. and family until 1am! We have a sitter for the kids (thanks DSIL); we are gonna party down! And seriously, if there is a race going on, we're there--already got plans for marathon weekend in Jan! We're missing Race for the Taste this year, gotta sacrifice somewhere I guess!;)

Tonight DH is out of town, the boys all have kung fu from 6-8 and dinner has to be fast. So..probably make a pizza or some pasta. Mine, I'll probably roast some veggies w/evoo and parm. (whether it's pizza or pasta!) Some herbs from the garden...I love spring! I have a watermelon for dessert.

so....nothing exciting, but they'll be happy.

I did make Popcorn Smores last night. I think I got the recipe from Family Fun. They were easy and gooey....yum!
